Situated right above a seafood market (#1), 1000 Caguamas is a place for beers, fresh seafood, and a killer view of the ocean and parts of Puerto Vallarta. Their concept revolves around caguamerias (#2) with an ecological purpose: they donate 5 pesos for each beer sold for the conservation of sea turtles.
The entrance leads up a flight of stairs and two flights up is where the restaurant lives in an all al fresco space. There is no pretension here, just plastic chairs and tables, with the breezy beachy vibe that makes for an appealing ambiance. There are bathrooms with communal sinks and his/her entrances and a friendly group of servers.
Their specialty is aguachiles, a Sinaloan specialty, which is composed of raw shrimp cured in lime juice, with blended chiles (serrano, jalapeño, etc.) cilantro and cucumber. Their prieto was their least spicy dish, with chile serrano and salsas negras, and was extremely tasty. Folks seeking serious spices should consider their güero (orange + habanero peppers) or naranja (habanero, chipotle, arbol peppers, and orange).
The crunch of the chips with the raw shrimp made for an excellent, snappy, texture. The flavors were on point, the shrimp was fresh, and the aftertaste was mild at best. The aguacate de mar (shrimp salad stuffed avocado) was a pleasant surprise, wonderfully complemented by the papas (chips w/aguachile salsa). Finished with a tortuga chocolate (chocolate turtle) for an excellent end to the meal.
It's important to note that this is a niche restaurant that only serves aguachiles and some small sides. Folks who have an aversion to seafood, let alone anything raw or spicy, should consider the other restaurants around the block. My meal was 556 pesos, which included an IVA tax of $76. Overall, this was an excellent experience and I'd love to come back again.
