RUN, don't walk, to 40 paper this instant. We thought for sure the owner or chef HAD to be straight off the boat Italian but he's apparently from New Jersey (that counts right?). Everything we had was exquisite and delicious. Almost all of their pasta options can be made gluten free (even the ravioli!). AND all of the desserts are gluten free! This level of inclusivity for people with a gluten allergy or sensitivity is a major win in my book and shows an extra level of thoughtfulness. All that aside, everything was very authentic Italian from the perfect Aperol Spritz to the scrumptious pasta sauces (and smaller portions which is nice) to the AMAZING in house made gelato. We split the Amaretto Affogato and oh. My. Lanta. It even came with these little cookies that weren't sweet but had a strong (but good) orange zest flavor that perfectly complimented the sweet gelato and strong espresso. 40 Paper's decor was recently updated provinces nice atmosphere. We thoroughly enjoyed a delicious meal there this week. The wait staff was friendly and accomodating. I asked for slight change and it was done after consulting with the kitchen. We started with a salad of the freshest greens dressed in the a delicious vinergerette. It was a very nice size, too - not skimpy. The bread served at the beginning was excellent - crusty and soft inside. The rib eye steak was very tender, delicious and prepared exactly medium rare as asked. The sides I preferred from another entree, collard greens, were seasoned with a sauce a little hot but sweet - perfect. I loved it. The polenta tasted more like creamy corn than what I'm used to as polenta. I enjoyed it but prefer the thicker polenta. The complimentary truffles that come with the check are a perfect size and are so delicious at the end of the meal. Jasmine was knowledgeable about the food offered and attentive throughout the meal but not overbearing like some places we've been. I hopelessly called 40 Paper and Josh let me know that they were full but had one small table left, and would I like to put my name down and come over? So we rushed to the place and boy was it worth it. One of the best places I've eaten at in years. Here's why: DRINKS: Superb. Excellent recipes. Excellent prep. My limit is 1.5 and I had 3! The verde one was so smooth and delicious. FOOD: Fantastic. Beautifully designed menu and well-prepared food. We had grilled octopus, margherita flatbread and gnocchi and the chocolate desert. Came to 40 Paper because we were craving pizza. My husband and our friends show up for our reservations, and we are met with the most arrogant host I have ever encountered. At first his colleague didn't see our party name so my friend repeated the name on the reservation. That is when host Josh stepped in. At first we thought he was trying to be funny, but no, he was actually being obnoxious and rude. It was surreal. How does this restaurant survive with a person at the front of house that is so incompetent. The four of us were just standing at the host stand in shock due to his ridiculous behavior. But then, they found our name, but by then we were so put off by our experience with Josh we decided to go elsewhere for dinner. Flatbread Pizza, Grilled Octopus, Quail, Mongolian Lamb Chop All of the dishes were pretty tasty. We opted for take out [because there's still a global pandemic going on], which was a great decision because when I called my order in a 20 top walked in without reservations or prior notice. Who does that? Monsters who've never worked in food service and believe "tips are optional"-- and think it's a great idea to congregate in large groups while a virus almost as contagious as measles is circulating the globe. The person taking our order was kind enough to mention the large group showing up unexpectedly and said they'd get our order in immediately. I'm always really happy to see quail on a menu, and even happier to have them in my belly. The octopus was nicely charred while still being tender, lamb was perfectly prepared as well. Came here for a date night dinner and was not disappointed. The atmosphere is on the trendy contemporary casual side with its modern decor and dim lighting. Our server/hostess was super friendly and attentive and made sure to tell us of the deals/specials before we ordered which was nice! We came here after being referred to the restaurant by a prep cook who doubles as a deck hand on the Sunrise Schooner sunset cruise. We didn't have a reservation, but were seated immediately. There was a lively party in the set off space and a number of other tables filled, along with folks at the bar. My husband and I got the grilled asparagus and ceasar salad to start, both excellent, and then we shared the halibut and a margherita flatbread pizza - also tasty. After 3 days of a lot of Maine specialties (lobster, haddock, and clams), this food hit the spot. Four stars mostly because it wasn't fine dining, and the host/waiter was a little on the aloof side and not particularly effusive. I read all the reviews before we decided to eat our last dinner in Maine at 40 Paper. I honestly don't understand some of the negative reviews. We walked to 40 Paper from our hotel (The Lord Camden Inn); which was just around the corner. We walked in and were seated within a few minutes with no dinner reservation. From the outside, the restaurant looks kind of "upscale"; but we were pleasantly surprised that it's much less pretentious than it appears from the outside... especially since we're on vacation and wearing jeans. It actually had more of a rustic bistro feel. Our server was polite and prompt, but a little abrupt. Todd ordered the Spaghetti with Lamb Balls (like meat balls... not actual sheep's balls). The sauce was pretty good, but Todd's homemade sauce is better. The lamb balls were great. I ordered the mushroom flatbread, which was made using a mixture of locally foraged mushrooms and topped with greens. It was absolutely wonderful. We also ordered desert. Todd had blueberry cake, and I had plain vanilla gelato. Both were fantastic. We were pleased with our choice for our last meal in Maine. We ordered King salmon, hanger steak plates, octopus starter and a margarita. The meal started with complimentary bread (2 small slices). The salmon wasn't King but farmed Atlantic salmon. The whole plate consisted of ~3 ounces fish, and a dozen or so beans. The hanger steak tasted very similarly to flank steak; that plate had no other items on it (besides a salty sauce). The octopus dish consisted of a 3" tentacle. Price with tax ~$84. All the dishes were very salty. We made our second visit to 40 Paper last evening. The first was in our first year in Maine, the year before the pandemic hit. Now that we're venturing out a bit more to dine in again, we had to go back, because we loved it the first time. The staff were all charming, including the host (owner?), bartender, and waitress. We were 10 minutes early for our reservation, and they apologized that they couldn't seat us until the wedding party left the room we were going to be seated in. We were seated right at the time of our reservation. We shared 5 courses, if you include the delicious bread with herb butter, which we devoured. Then came Caesar salad topped with seared salmon. The salad seemed a little small, but we thought maybe it wilted a bit with the warm (hot) salmon on top. The salmon was the most beautifully seared salmon I can remember eating. Then we had the Margherita flatbread and felt it was perfect. Next we shared the Bolognese and thought it was delicious. We felt perfectly full after these courses, and in need of a sweet ending. So we ordered strawberry lime pie. It wasn't pie per se, more like gelato on a crust. It was delicious, light, and refreshing. We were a bit disappointed that our decaf didn't arrive with dessert, but when the coffees finally came, we felt they were worth the wait: Americanos, and absolutely fantastic. Our reservation was for 7 pm on Saturday after trying to go there Friday night without one. Running late, we called ahead and was assured that the table would be held; arrived at 7:05 but weren't seated until 7:15. Unfortunately, we were seated in a booth. In our reservation, a table was requested... The hostess left us with menus and said the waitress would be right with us. Ten minutes later, we got water at the table and the waitress said she'd be right back.... our order was taken about 7:40. The restaurant was very understaffed to say the least. While we sympathized it wasn't what we expected. For the good... the porter draft $7 was excellent and the focaccia bread with herbed butter was fabulous. For the so-so, the draft was served in a Mason jar. Trendy but the screw top threads felt strange. Wonder if it was a full measure pint? The waitress was ill-informed with ingredients to deal with an allergy to pepper. Granted, that is difficult but we eat out a lot and most places (especially high end) can deal with it. I settled on the Hunter chicken. Now the bad.... $26 for a chicken thigh that could have been cooked longer as it was difficult to get off the bone. Not very flavorful. I could not detect any olives. Crushed tomato base served on a small bed of rice in a large pasta bowl. Definitely not worth the price! My husband ordered the pork and beef bolognaise for $19. He allowed that it was just okay but bland. Realized later it was missing the shaved Parmesan cheese. Really? In an Italian restaurant? The booth bench was thinly padded and straight back only suitable for thin people. Not enough space to sit comfortably with the wide table top permanently attached to wall and floor. It's also all in the way you talk to a customer which was quite abrupt and made us feel like an annoyance. It can be noted that when we went next door to another restaurant for a drink instead we were sitting at the bar and another couple had the same rude experience as we did just a few minutes. They were not part of our group but just a random couple. Clearly some better skills on how to talk to customers would be beneficial. They first served us some delicious focaccia bread with a savory butter. It was incredible. For appetizers we had their butternut squash soup which was absolutely delicious. We have previously been to Camden many times, and 40 Paper is, hands down, the best restaurant in Camden and one of the best anywhere. My mom and I went here for dinner because she is severely allergic to gluten and we are both vegetarian and it was supposed to be a great dinner place for people with food restrictions. We were very specific about our food restrictions and allergies and the waitress acted like she understood this. The waitress brought me an appetizer wrapped in ham, and when I mentioned it to her she took it away and did not bring a replacement. They then served my mom wheat pasta after we had clearly established she is very allergic to wheat. We had one other entree that was supposed to have carrots, and it came out with no carrots. My mom asked the waitress where the carrots were, and the waitress pointed to nuts and said "those are the carrots" as if we had never seen a carrot before. She came back a few minutes later and told us that she had been mistaken, and that they had changed the recipe to include no carrots. Wow, I was expecting good food tonight, but 40Paper just blew my socks off. Best lamb chops I've ever had, hands down. Perfectly cooked with some light char on the outside and so juicy on the inside. And amazing flavor! The tapioca and cheese that was served with it was outstanding as well -- a very tasty and fancy little riff on mac n' cheese. And the sautéed veggie served with it (Swiss chard?) was excellent, too. My husband raved about his rabbit and mushroom cannelloni, and devoured it before I had a chance to try it. The service, presentation and attention to detail were outstanding as well. Josh, the proprietor, at one point brought us an unsolicited charcuterie appetizer, saying apologetically that our entrees were taking longer than he'd like, and to please enjoy.
