I'm super torn on how to rate this place. I want to give it higher stars, because it was the only bakery I could find that had a legit chocolate chip cookie. How is it, that I had to go to 3 bakeries in that little area to find one? What bakery doesn't bake chocolate chip cookies!? Any way, I'll save that rant for another day. This place is phenomenal and truly a gem in the area. The moment you walk in, you feel like you are transported into a new place. From seeing the bread being made in the back, to seeing the various amazing pastries, to the smell. This is the place to be. This is a beautiful bakery serving world class quality bread, pastry, and coffee. Unsure if the graphic tees are designed in house or not but that is also a unique offering of theirs! I like sitting at the booth looking into the large glass window watching the bakers work their magic, staring at the beautiful dough. Service is, like at all cool establishments, nonchalant and noncommittal, which is what i prefer and allows me to avoid eye contact thusly. They don't always have the same items every day so it's best to walk in without any particular pastries in mind. What is always expected is their high level of quality, that is always met. What a fun place! They are centrally located in a very walkable neighborhood, they sell all sorts of fun goodies in addition to their yummy pastries and coffee. We decided to get some pastries to have a picnic at the aquarium. We got some lattes with yummy flavors (tonka?? Mind blown). So good I went every day I was in town, bought an extra loaf to freeze and take home across the country for the holidays. Their take on a ham and cheese croissant -- a Reuben with Swiss -- I dream of every single day. Upon arriving in Monterey, my first stop was Ad Astra. A friend who lived in the area highly recommended trying Ad Astra - she insisted that they make the BEST bread. The sandwich options available that day included a radicchio on french baguette, smoked salmon, and roasted eggplant - which I had to order. Served between hefty slices of seeded bread, the roasted eggplant sandwich was loaded with sweet and tangy eggplant-walnut dip, roasted eggplant, fresh basil, and creamy burrata. I split the sandwich with a friend, which was the right call because the sandwich was quite filling. After we devoured our halves, we agreed that we had just eaten one of the best sandwiches ever. I ended up getting back in line for a cold brew, which was the perfect pick-me-up. Had some time to kill as we were on a waitlist for a nearby eatery. Decided to stop by Ad Astra. Arrived right before the long line started to form. There were so many pastries we wanted to try but had to narrow down our choices. Hubs loves his cookies so we had to go with both the chocolate chip cookies and Earl Grey snickerdoodle - both were very good. Hubs also wanted to try the brioche and there was a babka that looked interesting. We can't remember what kind of brioche or babka we picked up but they were also yummy. The brioche was cheesy and full of flavor. I think the babka was with brown butter and poppy seeds - not too sweet and good with coffee. Came here on our final day of a trip, before hitting the road. Service was friendly and chill, without trying too hard. I had a few questions about the pastries, and there was no attitude, which I appreciate. We ended up ordering the savory bear claw, the danish which had a tangelo marmalade on top of a cheese filling, and a Kouign-Aman. Everything was really good, fresh and exactly as expected. Hubby went back the next day for another loaf of sourdough bread. He let them know that we were given burnt loaf the day before and in return he was given a discount. I know typically businesses will just give you a replacement for free. The fact that my kids ate half of the badly burnt loaf, we thought a discount on the next will suffice. I sent my daughter to get a loaf yesterday and she opted not to get one because everything that's left on the shelf were burnt. I'm actually pretty fond of the bread here. It sells out fast and the service is good here. It can be a bit pricey but the location is excellent. Trader Joes is a little walk away but the bread here is tasty and less "market-type" and you can see the bakers in the early morning rolling the dough and making it...kinda cool. The ambiance is very cafe-like though there is little seating available. The drinks are good, the lattes were pretty standard but they have a variety of morning treats but most are a bit on the sweet side and there are a few nice gift options that have nice presentation. read more

The arugula and sauce complimented the heavy bacon and egg so nicely. I loved the milk bun. The price of $14 was a little steep though. Miso caramel latte: 3/5. You can literally watch them in the back making all the goodies for the display cases and commercial partners they deliver to in the area. I've been going to Ad Astra since they were at Other Brother in Seaside and I'm glad to see the quality has remained even as they've scaled up. On the latest visit I tried the breakfast sandwich which was so damn good. Of course the bread was a hit but the chimichurri and egg combo was delicious. My coworker heard about this bakery, so we had a little adventure to find it while we were in the area. She got their famous breads and other baked goods. Good place for sourdough and baked goods, they are in the downtown area of Monterey and have a neat, minimal interior with a viewing windows to watch the bakers at work in the kitchen. Turnaround for our food was fast and we came specifically because we saw they had a breakfast sandwich and coffee. We ended up leaving with way more; a loaf of sourdough and a branded bag. Breakfast Sandwich: sausage, fluffy egg, arugula, and a delicious pesto spread. I got this for myself but ended up probably eating 1/4 because everybody else wanted a bite. S'mores Cruffin: croissant formed like a muffin with Nutella in the middle and toasted marshmallow on top, way too good. Pepper Sourdough: looked unique so we bought a loaf for later, it was very peppery and tasted better with plain toppings. 5 stars for the 3 items that I ordered today. My benchmark for pastries are bakeries located in the SF Bay Area, Arsicault and B Patisserie. I'm going to add Ad Astra to the list. When I first spied their cinnamon rolls, I thought, uh oh, Cinnabon...and it is NOT, far from it, this is the grow'd up, adult version that makes me wants to happy dance while eating it. It is topped with a cream cheese frosting that is perfectly sweetened and creamy, dreamy. The Kouign Amann pastry was flaky, buttery , with a thin layer of caramelized sugar...I wouldn't pass either of these up. My friend had a savory pastry with mixed seeds and he liked it quite a bit. Three weeks later, I'm still thinking about their cinnamon rolls. I read this somewhere: You'll catch more flies with honey, but you'll have more honeys being fly. Saw this place as we were strolling around downtown, and had to stop by! This bakery prides themselves on their bread and pastries, offering a selection of drinks as well. As we had just grabbed coffee, we settled for a couple of pastries which were really good! The bake on the flan tart was really good, with a crispy and flaky crust.
