The noodles had the perfect texture: chewy, springy, and able to hold onto the broth beautifully. Nothing was overcooked or mushy . What impressed me most was how balanced the ramen was. Some ramen spots go overboard with salt or spice, but this bowl felt refined. Rich but not greasy. Flavorful but not overpowering. You could tell there was actual technique behind it.
