I had really high hopes for this place, especially since I kept seeing it all over social media but I'm here to say that I should've tried a different vendor. Which makes me even more confused on how majority of the reviews are so high - maybe I just had a bad batch then? The Atmosphere: The restaurant is located in 4th Street Market which had plenty of seating when we went (both inside and outside). My husband and I had a date night and went to DTSA for dinner. I had seen And Broth all over my IG feed and was intrigued by their sandwiches. By the way, they also serve pho here with 24-hr broth. But they are infamous for their pho sandwich and their new BBH (Bun Bo Hue) sandwiches. If you know me, you know that I love pho but I also love the lesser known Vietnamese noodle soup dish known as BBH. No one makes as good a BBH as my mother but some places try. The BBH sandwich is a fusion food item and it's quite novel. It's similar to a French dip where it is a sandwich stuffed with protein (brisket and pork loaf), herbs, and pickled onions, served with a side of BBH broth. I was intrigued. After ordering, we were given a buzzer and waited at a nearby table. Once the order was ready, I went to pick it up at the window. The sandwich was stuffed and really photogenic. I took a bite and found that the brisket was really tender and that the herbs give the sandwich that essence of BBH. I liked that they used French bread and not rye for this too. Since I'm not personally a fan of eating chả lụa or pork loaf warm, I pulled those slices out and just ate the brisket sandwich. It was better that way. I finally found the opportunity to try the viral pho brisket sandwich that kept showing up on my IG feed. It's located in a foot court in downtown Santa Ana with several other vendors. I believe they are still in their soft opening phase. Overall, the sandwich was VERY tasty but fell a bit short of my expectations. The flavors were on point and it was so loaded with brisket that it was difficult to eat (good problem to have). It comes with some broth to dip the sandwich in but to be honest I was struggling to much just trying to eat the sandwich without it completely falling apart there was no way I would've been able to dip it. The main problem with the sandwich is that the bread is way too thin to support the weight of this sandwich. The first couple bites were great, but shortly after the bread was really soggy. We also tried the chile verde pho, which was not the move. It seemed like an intriguing fusion dish, but it just tasted like really really oily pho. I have had And Broth bookmarked for quite a while now after first seeing it on social media, so I jumped at the chance to try a new place with a few friends on a Sunday afternoon, tucked away in the back of the 4th Street Market food hall. $20+ and a 20-25 minute wait for a single sandwich already had me questioning what I had roped myself into, and when the food finally was ready to be picked up my suspicions were confirmed. I was presented with chalk-dry cuts of cold, overcooked beef mashed between two pieces of soggy rye, accompanied by a plastic dish of scalding pho broth that lacked in flavor what it had in temperature. I've never been so confused by a bread choice - yes, nominally an earthier bread like rye might seem like it pairs well with a richly herbal broth like that of pho, but if I wanted something sour I would go someplace else and order canh chua. The provided scallion oil, pickled onions, and đồ chua (pickled carrots and daikon) fell flat at either making the dish taste better or more authentic. The sandwich itself was almost impossible to dip and eat as intended because its contents kept falling out, but at that point I was so hungry I didn't care and ended up scooping chunks of meat out of the broth with my fingers. Another one of my friends ordered the bún bò huế option, which had a more flavorful broth but with a similarly dry and tasteless protein option. We had to sit in silence a little afterward because of the mutual dissatisfaction. It was a cold evening so I ended up with one of their specialty pho. I love bone marrow so I ordered the Specialty House Pho with beef back ribs, prime rib eye and oven-fired bone marrow. It was actually past 7 pm when we got there and there were a few people ahead of us. I am updating my review because I want to appreciate and give huge kudos to the staff. Not sure if the one who called me was Chef Thomas. He actually took the time to notify me that they only have 1 bone marrow left but there's not a lot in it. So he wants to make sure I am ok with getting more short ribs and sliced ribeye in lieu of the small marrow. Mind you, other Asian restaurants would not have bothered to let customers know. The symphony was gone and I was left with good but not great when combined. The brisket is what's amazing to me because a lot of brisket in pho places are thinly sliced. You could see the shape of what the cut of meat was before it was sliced and the additional body the meat provided was a welcome surprise. Soup: It comes with the sandwich and it's their pho broth. The soup is different in a good way. A lot of pho places claim that their broth had been a 24+ process but all of them taste within shades of each other. It's located inside a smaller food hall in downtown Santa Ana and we got lucky with it being pretty empty on a weekday. I ordered the famous pho brisket rye sandwich and it comes with a dipping broth on the side. The sandwich was piled high with brisket and I loved the shaved green onions and basil toppings that complimented the meat well. The actual broth was so good that I took sips of it while dipping my sandwich in there at the same time. This spot is at 4th Street Market food hall. We got the brisket sandwich dip on rye but wished we tried the pho with the beef bone. Service was nice and attentive. Ambiance is hipster with a full bar and backyard games. Sometimes there's a DJ. Cute shops all around. The sandwich was $20 and I wish it was on a baguette but all in all not bad. Located inside 4th st market, you can find & broth next to burrito la Palma and the bakery area on the right side of the market. We got the pho sandwiches and the brisket was great. Goes well with the broth , missing the bean sprouts . Wish there was steamed bean sprouts as less onions and cilantro. 17.49$ plus tax . Roughly around 20$, easily shared by two people. Also wish the meats had other meats than just briskets. My main concern was that we got boba at loose leaf. They had a promo of 20% and wanted to come back to & broth to get another pho product to bring home. Although the two prices are the same, why can't the discount be applied on the pho sandwich as well.. it's also pho .. anyways. A little hiccups there but everything else is top tier. My husband and I tried & Broth for the first time earlier today, Saturday 8/10/2024. We came right before 3:30 PM and there was no wait since it was an off time. We ordered: Santa Ana Pho $23.99 ($26.21 with tax) price as of August 204 - Featuring a tantalizing selection of meaty favorites. From succulent back ribs and USDA Prime Filet Mignon to flavorful meatballs, tendons, prime brisket. We also ordered the following which was free of charge: Extra Noodles (only one extra per order) Pickled Red Onions, Chili Crisp Oil - The pho was tasty and the broth was rich in flavor. You can tell that the broth really has been cooking for the 24 hours. The broth had a few extra spicy flavors that I wasn't used to that I could really tell when eating the bun (noodles), but the spices all came together in the soup. The meat was fall off the bone. However, there was not too many meat balls. The pickled red onions didn't taste too pickled. The brisket was so tender and soft - def tastes different from other traditional pho places. This dish was delicious, but just pricier than I would like to pay for pho. Parking: We parked in the nearby structured parking. First two hours of parking is free! Seating: Both indoor and outdoor seating available. Fortunately there were seats right in front of the store! However, judging from the other reviews it looks like this place can get crowded depending on what time you come. Overall, pretty good for quality pho but prices are a little steep. My friend and I stopped by and both got the pho brisket sandwich on rye. It came out pretty quickly and the pho broth was great. My main issue was that the rye bread was soggy when I got it. It felt like I was holding a normal sandwich on one side and a wet sponge on the other and I hadn't even dipped it in the broth. It was too difficult to dip it due to how soggy it was. In theory this was a great idea but I was pretty disappointed. I think pho is better off left as is. read more
