The conclusion, in brief, is that cooking such an omelette is not entirely possible given the structure of the kitchen. That said, I stand by my claim that their eggs are perhaps the opposite of "French-style" (which demands a low-and-slow cook), and should be avoided IF you are expecting a creamy dish of slow cooked French eggs. If you don't care about French-style, however, then the eggs are certainly okay. Leagues above what you'd get at a place such as Denny's, but definitely below Mess Waffles (scrambled eggs), Toasted Yolk, Broken Egg Cafe, and First Watch for my personal liking. Being that the centerpiece of this restaurant is its crêpes, and having witnessed a dramatic improvement in the stiffness of the crêpes in recent visits, I will bump my originally harsh 2 star review up to 4 stars. It's a quality restaurant if you're looking for a high quality crêpe (albeit the fillings are occasionally a little too cold for my liking). Yes, the store offered me a $30 coupon; no, this has not influenced the change in my review score.
