Shrimp tacos, mango salsa, cheese, lettuce, no beans, extra sweet rice Sweet pork chimichanga pictured at the top

I've been obsessed with the shrimp tacos since 2005. (Two tacos, no beans, extra sweet rice, topped with cheese, mango salsa, and limes--that's been my order for almost 20 years!) And since this is the only Bajio left standing after the recession, I have driven literally an hour for the tacos, if that tells you anything about how good they are! The restaurant has that fun Cafe Rio vibe (and I think the chain actually predates Cafe Rio), and this location is always clean. However, the service at this location has been a little mixed. Several times in the past, they've closed earlier than the posted time. We ran into the owner and mentioned this--and apparently the early closures weren't sanctioned. So now every time we go, we're afraid it's going to be closed. Also, the River Woods parking lot is simply a nightmare.

I try to throw this place into the usual line up--love the green chile chicken and their queso Always a nice change up from the regular Cafe Rio. The nachos are my favorite! Also, one of the few places I know of in Utah that sells Orange Whip

"So much better than Cafe Rio!" my friend said so we agreed to go here. Well... It wasn't awful but my nachos were soggy within two minutes and it was just sort of meh.... I think I have Utah fresh Mex chain fatigue. Costa Vida, Bajio, Cafe Rio are all the same blah...

Really good place. My husband and I usually order burritos. We always get our burritos with steak even though it costs more unfortunately but worth it. Really good. I Iike how they have 3 kinds of beans to pick from and 2 different kinds of rice. It always comes with lettuce, pico and sour cream on the side. Their horchata is really good.

We had a great experience here tonight. The service was quick, the staff was very friendly, and the food was great. I love that they have so many options for meats (like pineapple shrimp, lime chicken, and several others that cafe Rio and costa vida lack), two different types of rice (sweet rice and Mexican rice), and 3 styles of beans (black beans, pinto, and refried). On top of that, they've got salads, burritos, chimichangas, nachos, tacos, enchiladas, quesadillas, and even Mexican pizzas. Oh, and their queso is amazing.

Let me preface this by saying this is my experience I had during the covid-19 pandemic so I had to go through the drive through - which is, however, available during regular business operations so I felt so inclined to share. Love the new location and it feels like a good move. I don't love the format of the menu- it's actually a little confusing to me because I was so used to the old menu. But it does help simplify some things. I ordered my go to green Chile chicken quesadilla and I know you have to sort of set expectations slightly lower when you're ordering take out/drive thru but my quesadilla wasn't even cut. And all the chicken was smack dab in the middle of the quesadilla so the sides were pretty lack luster. I pretty much had to deconstruct the whole thing because I didn't realize the chicken was all in the middle till after I had cut it. No my favorite experience - probably won't return for a while

I can't imagine why this place has low stars. I go several times a year, and it is always delicious. It's in the same vein as Cafe Rio, but the lime chicken and green chile chicken are different than anything there. I usually get a stuffed quesadilla with sweet rice and either refried or pinto beans, but the nachos and salads are yummy too. The only bummer is they got rid of their Orange Bang drink machine.

As you can see there is not an excessive amount of lettuce on this salad by any means

I love Bajío! However, I was charged $1 for extra lettuce when I asked for a little more than was originally put on. That was definitely a turn off for me. The salad ended up being $15 and though it's delicious it's not worth that.

The only thing that saved this review from a two-star to a three-star was that my food tasted great...once I got it. A friend and I thought this would be a quick meal as we only had 45 mins to eat and get where we needed to be. The line had 4 people in it when we jumped in. Except to our surprise, it took us 30 MINUTES to just get though the line! This frustrated me because the process is no more difficult or different than a cafe rio or costa vida scenario. There was also some confusion with my order because the employees obviously cannot hear over the glass. The language barrier probably didn't help. I order a lime chicken salad and then at the end they throw some green chili chicken; so I had double the chicken. I like chicken, but that was way too much. Since I was in a hurry, I didn't have time for them to remake it. Again, luckily it tasted great, so that was lucky.

This is the Green Chile Chicken quesadilla!!

TO ALL THE NEGATIVE REVIEWS: WHY YOU GOTTA HATE??? Tonight was my first time ever trying Bajio's and to be honest I was SO skeptical based on the reviews. HOWEVER. My expectations were HIGHLY exceeded. I'm from southern California and I've never been a fan of Cafe Rio or Costa Vida (if I had to choose I'd say costa for the raspberry chicken) but BAJIOS KNOWS WHAT THEYRE DOING WITH MEXICAN FOOD. I lived in San Diego where Mexican food is on every corner. And to say that bajios matches some of the best of those San Diego places is mind blowing. I will forever be coming back here. Had to write this review mid dinner. That's how much of a believer I am!! Please give this place a chance if you're on the fence. I recommend either of these dishes as well!! Beef chimichanga or Green Chile Chicken quesadilla. CHEERS BAJIOS FOR DOING IT RIGHT!!!!

SO much better than Cafe Rio. Get lime chicken with anything. Don't expect sweet pork like Rio.

For starters, the rice and beens, which are often a throw away part of the meal, were amazing. We were loving the tacos dorados, crunchy and super yummy (the wife). The asada burrito was really good with flavorful meat, healthy cheese pull, and tasty tortilla (right up there with our burrito lover's favorites). Liked the chicken enchiladas, queso birria, and relleno. But again, the rice and beans are and worth ordering if they don't come with your entree. The staff were cheerful and helpful. Even the other diners were helpful, pointing out their favorites (and we were the only gringos in the entire place). So go. Thanks, Mi Lindo Guadalajara!

When we graduated they actually gave us all Mi Lindo swag which was very fun. The vibe of the restaurant is great and it's fun to be able to see them cook your food. My waiter only barely spoke English but we could figure it out. The chips & salsa they set down was a mixed result. The chips were terrific. The salsa was a small kind of watery bowl that tasted much more sour than usual. It was okay. Just not as good as the chips. I ordered the Taconazo after ascertaining that it was a variant on carne asada. I asked if it came with tortillas. Si. It came pretty fast and he pointed to a station to one side of the dining area and said, "Salsas!" Sadly the salsa cups were tiny. I could barely fit any pickled onions inside. There were also some big jugs of various agua frescas there, nestled in ice. The "Taconazo" consisted of LOTS of onions, peppers, cheese, crispy bacon(!), cactus, and strips of steak. I liked it quite a bit. There was a bit of trouble at the end. My food was 15.99 but my bill was $21. So I asked for a itemized bill (tips weren't included). Turned out they'd charged me $2.99 for a fountain drink, but I'd only had water. I showed them the error. Rather than change the bill, they just handed me $3 in bills so that worked. (Yes I tipped.) Anyway good food with only minor glitches, and I'll be trying it again.
