There are parts of the briskest that REQUIRE the removal of a giant pieces of fat. This VITAL step was not performed on the piece of brisket we were given. It's good smoke. This is what bbq is about. Easily the best bbq in Los Angeles outside of those talented backyard BBQ pit masters. Tried them on July 9th at Boomtown Brewing. Ordered the brisket, pulled pork and pork belly burnt ends with a side of creamed corn. Where do I start. The bark was perfect. Rich white oak flavor. Perfect amount of rub. The brisket was moist and tender but did not fall apart when you pulled on it, in other words it was perfect. The pulled pork had such a rich pork flavor but just the right amount of smokeyness in the back. And the pork belly burnt ends were basically bbq meat candy. I'm usually the kind of person that believes the good smoked meat does not need sauce but wow their sauce had this amazing vinigar and chyenne pepper taste I had to dip my meat in it. Bartz has probably thee best BBQ in the South Bay hands down. The brisket is pretty mouth watering and the sides, like the Mac & Cheese and Baked Beans are done right. You'll have to follow them on social media to see where they're going to be located, but they're usually at a brewery for the most part and always at LA Ale Works on a Sunday. The only thing I'd warn others is about, is if they're at a special event, be prepared to wait since it's usually just Dustin (the owner) and a helper to serve the masses. Very disappointing that they raised their prices significantly $24 for Waygu brisket ONLY, no sides. Nothing just a serving of meat. $24 bucks? Sheesh I liked it better when they had their regular brisket $16-$18 and their ribs were $12.... now everything is $22+ Plus I came here on a Saturday after seeing their social media posts mentioned THREE times they would be at a brewery at 2pm. I showed up at 2:15pm, only for some guy to tell me "it'll be about another hour".... and he looked unsure. Meaning one hour was possibly the minimum... I saw that Bartz was going to be grilling and smoking at Absolution Brewery in Torrance so I waited until 5pm to build up an appetite for some beefy beef for dinner time. absolution brewery is located at a nondescript office park not far from the Torrance Civic Center. I really love beef so I ordered the brisket 1/2lb for $12 and it only took them less than 10 minutes to prepare my to go box. Once I got my order I proceeded to drive to Redondo beach to eat my brisket slices while watching the sunset. The brisket was butter tender with a good balance of fat and lean meat. did not need to drizzle any bbq sauce on it as it is excellent on my t's own! However being captain carnivore I also ordered beef ribs to go for $12. I was expecting ribs plural but only received one beef rib which made me feel like I overpaid since $12.00 can buy you an entire rack at the market minus the trouble of prepping and cooking it yourself. I figured this rib has to awesome to be one for $12.00!!! some reason I got a large rib with plenty of fat! Great I love the fat of a beef rib however it was too salty. It was inedible because of the extreme saltiness. I had to cut the rib down to the bone so I could give my dog a nice giant done treat but what to do with the salty meat leftover?! I put the meat into a bowl of steamed rice and mixed the salty meat with the rice to tone down the saltiness. This is the real deal Texas style pit BBQ. The brisket is truly the best I have ever had in my life (including when I lived in Austin, TX). I have had everything on the menu and then some and everything Bartz makes seems to turn out delicious. The thing that really sold it for me tho was the sides. I've been to many a bbq place and had decent bbq with so so sides. Not Bartz. The mac n cheese is gooey cheesy gpodness and cooked perfectly, sweet smokey baked beans and my personal favorite (which I thought would be my least favorite) was the creamed corn. Get the corn! so rich and flavorful, you even get a smokey finish on it almost as if it was grilled corn. Clean professional set up, generous portions (I had leftovers for lunch the next day). Everyone was really happy with the food and there was plenty of it! High marks for the seal of approval from my boss who was raised on a ranch in Oklahoma. Everything we ordered was good, but my personal favorites were the brisket and the mac and cheese. And you know it's a good sign when you're thinking the food the next day. I ordered the brisket with two side: cream corn and cornbread The brisket was delicious and the BBQ sauce that came with it was one of the best BBQ sauces I've had. The cream corn was really creamy but good. The corn bread was good too, wish I could have tried the Mac and cheese, but they ran out. I really hope they are regulars at the strand. Totally agree with Denise R's review. Been to Texas many times and have had the pleasure of tasting their delicious and mouth watering briskets. I'm sorry to say that Bartz just doesn't do it. When you ask for fatty brisket, it doesn't mean a slice of pure fat. Sadly, Bartz takes it literally and you do get entire slices of pure fat. In Texas, fatty or even extra fatty means the brisket has just a little more fat that makes the meat more moist. Another reason why I give them one star is because their sides were terrible and when Bartz came out to one of our local breweries here in Long Beach, he seemed very unprepared. He was handling cooking, taking orders, and money! Not very clean if you ask me..imagine where all those dollar bills have been through! read more

Bartz BBQ creates some fantastic smokey goodness. The brisket has some great bark and a solid smoke ring. I couldn't splurge for the wagyu but the prime still tasted great. But with my decision, I could budget for the pork belly burnt ends and BY GAWD the caramelization that those cubes had was irresistible.
