This place is so good that it shouldn't even be legal. First, the people who were working there were super friendly. They were upbeat, quick, and were joking around and making small talk. It was a very pleasant ordering and waiting experience, which I didn't find at other stalls at the French Market. I ordered a Goombah Donut Shake- that is, a shake topped with a donut and filled with cannoli cream and crumbled cannoli chells. The woman who made it recommended adding caramel to it, so I trusted her judgement. This $5.50 was the best money I spent all day at the market. Finally, FINALLY came by their donut truck! Overall, I thought it was good but really not anything special. The donut holes were crispy and warm by itself but I think any half decent donut place should be able to do that. I topped my donuts off with half smores and half strawberry nutella but essentially my donuts were just drizzled in all kinds of sauces (chocolate, marshmallow, strawberry, and nutella) and topped with smushed graham crackers. The sauces reminded me of the same ones you would put on your ice cream sundae. After I self-hyped it up for myself, I probably won't be stopping by again. ADDICTED TO DOUGH If I was going to be addicted to anything it would be these tiny donuts. They are truly amazing and are always hot & ready to go. They even sell them to you in a little brown bag, that just feels bad or like I am doing something wrong. Hot oil just bubbling in the air giving off the scent of deep fried dough. It is a smell that everyone loves. They should bottle that up and sell it. Then there's a giant stack of freshly cooked mini donuts sitting under a heating lamp looking all innocent like a puppy in a window. Maybe I will just get one but the next thing you know you have five and the staff is asking you what would you like them dipped in. The choices are: Cinnamon/Sugar, Powdered Sugar, Chocolate Sugar and Sugar. Can we mix all 4 and make a super sugary donut? I went with the usual and chose the Cinnamon/Sugar mix. The hot fresh naked donuts are then thrown into the bowl and there oily little dough body sucks up the sugary mixture. Then they are put into a little brown bag like some back alley illegal donut deal is about to go down. They may not be the best counters, but they do make a fine doughnut. I've known about Beavers Donuts for a while, back since they were one of the first food trucks to actually make their food on-board. With the recent doughnut craze, a craze I fully support, it took me a while to get around to Beavers. The first time I saw Beavers within reach was filled with excitement and frustration. Other than knowing they served mini doughnuts, I knew little else about Beavers. Turns out you can opt for a half dozen, full dozen, regular or gourmet doughnuts. Overwhelmed by the gourmet options, I've stuck to the regular ones thus far - chocolate, powdered sugar, and cinnamon. The doughnuts are wonderful - fresh, airy, and the perfect sized bite of flavor. Definitely a niche novelty. Underwhelming after the fact. The donuts lack uniformity; you'll see it if you witness the small scale Krispy-Kreme wannabe apparatus that fries the donut batter. Kind of makes you feel cheated when you see the varying shapes. 2 points for variety of topping options, but the Nutella donut? Is that really Nutella? Because the consistency was like they just used chocolate syrup. I was so sad to see the amount of deformed or undonutshaped rejects sitting in the garbage. The guy working seemed to notice my expression since he topped the garbage with a container to cover the blatant waste. I've been to the truck at two of their Loop locations (Wabash and Van Buren & Franklin and Calhoun) and I have been super impressed with these delicious donut holes. I'm definitely including Beavers into my weekly donut trips. On my first trip, I sampled their half dozen of the Nutella Dream, which are their donut holes topped with strawberry sauce and Nutella. I got 3 extra with my order. I also checked in on Yelp and got a free plain donut. The guy on the truck told me that they will give a free one to anyone who asks for me. So, I guess you don't have to check in, but let's face it, if you are like me, you will check in anyway. I ate the plain one first - mainly because I wanted to see what they tasted like without any toppings and also because it was on top. It tasted delicious especially since it was still warm after my short walk back to my office. The outside had a slight crunch to it and the dough was light and airy. You can definitely eat several in a row before you even begin to feel the least bit full. On my second trip, I braved the rain and cold to try a half dozen of the Strawberry Bella, which are their donut holes topped with a strawberry sauce and graham cracker crumbs. I preferred this one over Nutella Dream since it was a little less sweet. The graham cracker crumbs added more crunch. Again, the donut holes were cooked well - a little crunchy on the outside and warm and doughy on the inside. The only downside was that I had to walk for quite a while to get to my office and they would have tasted better had I eaten them when they were fresher. Oh, but you can make them last the whole day like I do. I'll snack on some every now and then. Quality wise, they are still OK, but of course, they would be better fresh. The guys on the truck are nice especially for it being super early in the morning when I visit. Price wise, they are definitely more expensive than other donut shops in the Loop. But, it's worth it since they have the best donut holes in the Loop! However, it would be nice if they had an option to do a half dozen split with the regular and gourmet flavors. Doing more #DonutFest prep, I stopped by Beavers this morning to sample the goods. Incredibly tasty, got the mini (four donuts for $2), with the four standard sugary offerings in the base menu, which included a cinnamon, a sugar, a powdered sugar and a chocolate-covered sugar munchkin. All were excellent, and all were hot, just the way I like them. I like getting doughnuts first thing in the morning when they are fresh, so if you roll up at 7 AM like I did, you will be happy. I think the Beavers donuts are too small for me as my long-term go-to, this is more of a "I need donuts now and don't want to fall asleep as soon as I try to start my work day" size. For some of you, that's fine, but Firecakes and Glazed & Infused are more my size preference than Beavers, Endgrain or other small treats. But the Beavers donut is the most price-appropriate of the small donuts I've tried in Chicago. My office is around the corner, so I will be back! read more

I love these donut holes! The pricing is a little bit confusing, but basically you pay for a set of donut holes and a set of toppings. So if you buy a mini (4 donuts) for $2 and just add powdered sugar or chocolate it's $2. If they are all Smore it's $3. If three are Smore and one is Turtle (or 2 and 2 or whatever), it's $4, and so forth. I've had the Smore, Turtle and Strawberry Bella and they've all tasted amazing.
