I tried the food truck at Stemma, so this review is for that location. My opinion, it's just OK and had some odd flavors. The pros: -value for price: the one person sampler plate is what I got and it was a good deal for the amount of food. -the Mac and cheese had good flavor, though the Mac was over cooked so it didn't hold together and was mashed into the sauce. -the ribs were good and meaty The Cons: -the pulled pork was very very salty. The small sampler size was too much salt and I'm glad I didn't get a pulled pork sandwich or I probably wouldn't have been able to eat it. -the baked beans were not what I expected and had an odd flavor to me. Vinegar I think. -the bbq sauces were unlike any I've had. I did not care for the flavor but someone else might. So yeah maybe try it out and see if this unique flavor profile is for you, but it wasn't what I was looking for in a bbq joint. read more

First time dining there yesterday . We were very impressed with the food and the portion sizes . We both had brisket plates , and loved every bite . A rarity , absolutely nothing on the plate to criticize . The brisket was right on point , tender and moist , w/ very little fat . We were stuffed when we left . Great bang for the buck . (wasn't worth a review to write how good or bad it was - it was pretty middle line BBQ) I will not be returning purely due to the comments being left by the owner. I cannot believe how unprofessional the owner is - the entire point of YELP is for customers to leave reviews (good or bad) and as an owner I would assume you may want to use the bad reviews as a learning opportunity for you and your business. Stumbled upon this gem while they were parked outside of Fringe brewery in Ferndale. I opened yelp to check the score and 5* speaks for itself. I began by bombarding them with questions like "where are you from?" And "where did you learn to cook BBQ," feeling like a self proclaimed BBQ connoisseur. They responded with Bellingham, and YouTube, so I was a tad bit skeptical. But from the first bite I was awestruck. Pulled pork and slaw sliders on Great Harvest rosemary sliders, amazing. The pork is moist as is, but the slaw adds a great bit of sweetness, crunch and has this hint of citrus that was very pleasant. 3 for $11 is a steal! We also got the brisket sandwich, their brisket is a Star. Perfectly cooked, moist, yet not falling apart so it holds up well on the bun. Their Mac and cheese is delicious. It's has a small bit of mild green chilies in it, and multiple cheeses, it tastes and feels like something grandma would have been whipping up back in the day. The absolute star however is the pork belly burnt ends. Oh dear god. Get 6, share with a friend. They are life changing. Smoky, Crispy, fatty, and amazing. It was our first time trying big stick BBQ. We got the dirty mac and cheese, a pork slider, and some cornbread. The brisket was good, a tad on the dry side. The pork slider was delicious. Mac and cheese was also very good. The cornbread was a bit dry, would have been excellent with some honey butter. I think you need to add some apple crisp or some banana pudding or something to your menu. We will definitely be back. read more

Love this place. We've gotten food here 4 or 5 times, always take-out. The ribs are fantastic. I love the fact that they do not sauce the ribs, and they don't use a heavy dose of rub either. I'm kinda picky about sauces and rubs, so I love that they amazing flavor of the meat and smoke are allowed to shine without interference. I actually prefer to eat the ribs unadorned. The macaroni and cheese is also extremely good. The rolls are too. The pulled pork is delicious as well. I'm not a brisket person, but hubby likes the brisket. Best BBQ in the county! I LOVE BBQ!!! It's in my Southern blood :) I've tried every BBQ joint in the county, and this is the only one I've gone back to. And I'll return again, and again, and again...you get the picture :) They've also updated their coleslaw to a more traditional, crunchy cabbage slaw that will be a hit on the pulled pork (the previous slaw was not going on my BBQ; this one will)! The beans are different from what I'm used to but tasty nonetheless, and the Rosemary roll is definitely BBQ-worthy. Y'all give Big Stick a try and you'll see what all the fuss is about! Tonight we went in search of BBQ (my husband makes the best ribs so where ever we go I always compare his ribs to theirs). We heard Big Stick makes some seriously good BBQ and we ordered the sampler plate for two- two Baby Back ribs, two pork ribs, two slices of brisket and a pile of pulled pork, cole slaw, baked beans and herbed rolls. The ribs were dry rubbed and smoked until tender, I doused mine in the housemade bbq sauce and dug in, they were very good (not as good as hubby's but better than most). The Pulled Pork was lusciously moist and flavorful but the brisket was outstanding- amazingly tender and juicy, I've never had better anywhere else. The sides were good too, I wasn't too fond of the slaw (some odd spices or herbs in there kind of tasted like soap but I'm weird about certain herbs so don't take my opinion too seriously). I did like the beans though, that lovely molasses flavor was really homey and the rolls were soft and fresh. The restaurant itself was very clean and nicely appointed and the staff was helpful and friendly. This place is off the beaten path but it's worth searching for. read more

Great ribs, brisket, and burnt ends. The Mac&cheese was amazing!!!!! Baked beans were a bit overpowering with sugar and grape jelly flavor. The corn bread didn't have much flavor and seemed a bit more dry than corn bread should be. Coleslaw was very tasty, sweet potato salad was a bit to much on the curry flavor. The buns for the pulled pork sandwich were "too much" and dry, the focus should be on the flavor of the meat and the bun was Rosemary and not the right touch. We found the ribs to be slightly undercooked and the meet was dry and the cornbread was also dry and too big of a chunk with not enough butter and honey. The baked beans, they were trying to hard to be different and I think it was a miss, baked beans are very simple and yummy at simple. The kids did not like the barbecue sauce which was a bummer because the pulled pork meat was dry. So, I found this place- a real brick and mortar restaurant that's devoted to BBQ. What a rarity for Bellingham! Too bad it's not very good. In spite of the many rave reviews on yelp, I found it mediocre at best. I ordered the rib plate with slaw and beans on the side. The ribs had plenty of meat on them, but they were definitely not smoky enough for me. The slaw had good ingredients but was underdressed and the dressing was just about tasteless. The beans were so sweet I couldn't eat them. I lived in Texas for 30 years, have couple of BBQ rigs (wood and charcoal only- no propane) and a lot of experience with this genre. While Big Stick BBQ is better than nothing, it's not in the same league as top notch Q you can find elsewhere. read more

We dropped in to K2 last Sunday afternoon hungry and thirsty. Didn't know what food truck would be there. As soon as we walked up to Big Stick and I saw Burnt Ends on the menu, I knew we'd hit a home run. They were served perfectly smoked, inner-tender-outer-crisped, juicy, and (possibly) selected for an ideal meat/fat ratio. Every bite was incredibly savory and amazing!
