As a die hard Charlie T's fan, I have to give credit where credit is due. Billy's is pretty darn good! I stopped by when I was in town, and I absolutely love their new location. It's huge, and I think this is the nicest boudin store I've ever seen, design and size wise. There are seating options indoors, as well as a restroom! There are lines, but they go by pretty quickly. There's a plethora of options, from boudin egg rolls, to boudin balls, regular boudin, fried corn, cracklin, crawfish balls, etc. If you can think it up, they probably have it on their fryer trays. I love the fried corn cobs! They're flavorful and fried to perfection! I also love the boudin balls with pepperjack cheese! The best cracklins I have ever had! Hot and seasoned to perfection! The inside is sort of like a gas station, but they have a hot food section that takes up half the store. You can order Boudin, sausages, cracklings, and other fried items that are hot and made fresh. They also have the option to buy refrigerated Game meats and sausages. The bathrooms are immaculately clean, and they even have an animatronic show above the soda refrigerators. Service was friendly and very helpful, we had a lot of questions for it being our first time there. read more

We had to stop here and buy some stuff to take back home to California. My uncle loves this place. As a Creole I grew up eating all these foods, but not always easy to find in California. Bought a lot of boudin/boudain, tasso and sausage. Also bought some bbq sauce and some roux. Brought my family some stuff they've been missing, and was able to eat good and flavor their pots. The only thing I didn't care for was the roux, I was just trying it to see if it would be good cause we usually make our own from scratch. They have refrigerated, frozen and cooked foods. They have food cooked if you want to eat right away like boudain, boudain balls all kinds of different flavors, corn, cracklin seasoned or salted, crawfish pies, breakfast sausage biscuits, and more. They also sell all kinds of sauces, seasonings, hot sauces, and roux. Any time I pass by or near Lafayette, i'm always stopping by Billy's to pick up a few dozen of pepperjack boudin! These always hit the spot on the go and even after popping them in the air fryer. They are always busy, but developed a nice system with orders. Store is very clean and stocked. They offer a bunch of other boudin and items on the menu which are all pretty good as well. So if you are not from South Louisiana, you might not understand the "boudin" thing. It is quite amazing at this very simple food item, which is a type of sausage made from rice, meat, native spices, etc become such an iconic part of the Louisiana food scene. That being said, all locals have their personal favorites when it comes to "boudin", but don't be afraid to try them all. I would recommend Billy's based taste and consistency. The quality is very much above average. The spices are well balanced with one over powering the others. For example, I've had boudin that all you could taste was pepper or too much smoke. Holy crap, these are the best boudin balls I've ever had!! I thought I didn't really like boudin, but it turns out, I haven't been eating the right ones! I got a frozen 6 pack of boudin balls from Billy's as a souvenir from someone who drove by Lafayette. It says on the package that it costs $15. $2.50 per boudin ball is not bad at all, but on top of that, these boudin balls are big! About 2 inches in diameter each. The one I got has pork, liver, onions, rice, garlic, cheese, and a few other ingredients. (They may have other kinds.) The liver was surprising to see on the ingredients list because I don't usually enjoy liver, but I didn't taste anything I didn't like at all! They were SO DELICIOUS! The interior is packed full of savory meat seasoned to perfection. The exterior breading is super flavorful, a little bit spicy (as is the Cajun way), and fried already before frozen. So, the frozen aspect might throw you off, but you can thaw it in the microwave and then crisp it up in the oven! I promise, when you do it that way, it'll be like eating one that came fresh out of the fryer! Billy's needs to expand to New Orleans so badly!! Given the popularity of the Scott location (#1), it makes sense that Billy's would open something up in Lafayette. Despite being around for the better part of the last year, it still feels new, complete with high ceilings, LCD menus, all at a gas station. More importantly: Is the food as good as the original location? The answer is a resounding yes. The boudin is incredibly addicting. Everything from the links to the balls is damn tasty. The pepper jack boudin balls are easily the winner, but I think the crawfish ones are definitely no slouch. It took me a while to enjoy the cracklins, mainly because of how crunchy they are. After a few munches of a dozen or so, I could start to see the appeal. One thing that people sleep on are the actual boudin links themselves. They have a whole refrigerated area of different variations, as well as hot and fresh ones available counterside. They make for an excellent meal, the perfect tailgate party snack, and complement the other foods quite well. I am never one to say no to their crawfish pies or their pistolettes. Service is good, they're quick to ring up orders and assemble food items at a quick pace. I am guessing they've dealt with lines and crowds before, so getting things out quickly is key. Prices are not all that cheap compared to the competition, but Billy's has earned their stripes with consistency and variety. Even though I'm rarely in Lafayette, Billy's will certainly be a must-go whenever I'm back in the area. Went this morning and was greeted with much attitude. Boudin was greasy. Will not be returning to this location !

We stopped by to grab a couple of boudin balls but left with a half dozen, sausage links, and some spices. Great way to take some great Louisiana tasting food home. You can buy it hot or frozen, so we did both! Don't be discouraged by the line. It goes pretty fast. The cashier was patient with us in making our decisions, I think she could tell we were from out of state by the ohh and awwws. Lol! I don't know if it's customary to eat boudin balls for breakfast, but we sure did, and they tasted great. The spice level was not too strong but rich in flavor, both crawfish and shrimp. I didn't really like the green onion one, but everyone else did, so it may be my tastebuds. The winner winner boudin eater was a tie between the pepper jack cheese one and the shrimp one. I see billboards for this place all the time and I finally got my chance to stop! I ordered a smoked boudin and the season cracklings. The smoked boudin was sooo good! Very spicy like I like it! I wish I got more but I got basically enough to sample because I don't like wasting money. The cracklin was good but probably it would be better hot out the grease. My sister had the regular boudin ball and she said it was better than Tony's and if you know anything about Baton Rouge and Tony's then that's saying something. I would definitely be back if I'm in the area. I gave this place 4 out of 5 because I didn't care too much for the customer service. The cashier either didn't want to be there (my sister's opinion) or it's one of the places where locals and regulars come so often that when new customers come in the staff is annoyed by questions and having to explain things (my opinion). Absolutely delicious. We stopped on our way home and filled and ice chest with lots of their frozen boudin, boudin balls, sausage, and crawfish pies! They sell them hot go to or frozen. Frozen was perfect for us bringing them home to family. Super friendly staff helped us pick out the best and most popular items that we "HAVE TO TRY". Update- everything we've tried has been amazing.
