Food: The food is really the main attraction here. Nothing overly fancy or trying too hard, just consistently good food that delivers every time. Everything we tried was solid, and it's the kind of place where you already know you're leaving happy before you even order. Service: Service was smooth with no issues at all. The staff kept things moving, and the experience was easy from start to finish. Ambiance: Billy's has that classic Louisiana stop-through feel to it. Nothing extravagant, but it doesn't need to be. The food speaks for itself. Overall: Not much to rave about besides the food -- and honestly, that's all it needs. The cracklins had a little bit of fat and meat on them which I wasn't used to. I'm just used to the fried crispy skin. It tasted more like fried/seasoned pork belly. The seasoning is really good though. My favorite boudin was Billy's more than the smoked one but my fiance liked the smoked flavor more. I wish we took pics but we just ate it in the car. The casing was a little tough to bite through so I sliced it and scooped out the insides. Although the Billy's boudin is good, I don't know if it was good enough to drive from Texas for it. The hotdog on it was the cheapest of cheap money could buy. The chili on it was nothing more than ground beef with chili powder and tomato sauce and their was hardly any on it. They could probably sell these for a dollar and still make profit off of them. Today I tried to give them another chance. This time I ordered a Cajan burger. The menu said that it had cheddar in it. It did not, it came with a slice of American cheese. It came on a cheap bun that was soggy just minutes after starting to eat it. It also came with one small tomato and brown lettuce neither one seeming fresh. The patty tasted ok and seasoned. I will be not be eating here again.

I didn't even know that the "Boudin Capital of the World" had this many people. The place was packed, and I visited on an off time on an off day. I guess they don't have any off times or off days. Our wait was quoted at 40 minutes, and it was fairly accurate. They have a full bar to grab a drink and chat with friends while you wait. You can also grab a drink and stand alone in the corner, but that would be creepy as hell. Once seated, I was ready for some food. My kid and I shared some of their firecracker chargrilled oysters, and they were wonderful. Ensure your order has charbroiled oyster,s and you will be happy. The table also had an order of fried onion rings, and they, too, were excellent. My entrée was fried shrimp. When it arrived, I was concerned as the batter looked a little darker than I am used to. The crawfish pie missed the mark completely, not much crawfish, very doughy and the seasoning was pretty bland. Compared to the undisputed champion (looking at you, Billy's) with huge lines 24/7, Don's is a good option if you're willing to trade some of the quality with the convenience of no wait time.
