We've been waiting to come here for a while and we were not disappointed. When I initially called they said, there is no need for a reservation because it's a weekday but I'm glad I made one because it got busy fast a few minutes after we were sat down! The menu is not extensive by any standards. There isn't anything super spicy either. But they have a fair bit of choices. We started with the house tray for the tapas and the crostinis with a garlic bisque entree to share among the 3 of us. Our main entrees included the Bisteak, the Lobero and the Fieri with a side of Al Eti fries to share and the Caesar salad. On the house tray, we loved the tomatoes and the peppers stuff with cream cheese. That was super delicious! The crostinis were of 4 different varieties - hummus with olive, bruschetta, Pueblo chilli's with cheese and a cherry compote with cheese. Our favorite was the bruschetta followed by the hummus and olive. We were told that the Pueblo chili one would have a kick, but it did not. The sweet cherry compote one was interesting esp with the feta, but it felt too sweet, so won't order that next time. The garlic bisque is delicious, esp with the bread. If having for one person, go with the side of you want any space for more food. The entree is good to share among 2-3 people. For the entrees, the portion size is HUGE! I loved my Lobero which had mushrooms, chillis, caramelized onion and aioli. It was very tasty. The Bisteak was similar to a Philly cheese steak but without the cheese. It was also very good. The Fieri was a little disappointing as the pork was quite chewy and it was bland. The fries were delicious but I do wish the oil had been all over the fries and not just in the bottom. The salad was tasty. We didn't have desert but we did have a glass of Albarino white wine from a Spanish winery. Close to a chardonnay and didn't really have much of a buzz which I appreciated. All in all, cute, oldish place. Their servers are nice but may need to work on their ability to identify dishes correctly. Price is decent but not cheap for sure. Will be back to try more of the entrees and tapas! read more

Outstanding from beginning to end. Starting with friendly greeting, offering & explaining menu suggestions with clear Albanian culture knowledge, Rachel is simply awesome. Even though there were several delicious sounding specialty cocktails, she was extremely helpful and willing to go out of her way with cocktail accommodations to special dietary restriction- and the drinks did not disappoint! I was hoping for a wider choice other than sandwiches, but the sandwiches looked interesting enough so we settled for that. My Euskara sandwich was tasty. My wife clearly ordered the "Famous Bisteak" but was delivered the Pilzsteak sandwich instead. Management promised a discount for the error, but I'm almost positive that never happened. I discovered this little gem on a recent trip to Pueblo. It was within walking distance if my hotel, and in an area filled with public art. The host Rachel was extraordinary, friendly, and attentive. The cuisine is Basque and Albanian, which provides a creative mix of Mediterranean flavor. Great! Great! Great! This is truly a small hidden gem in Pueblo. The head chef is the owner of the restaurant and he is an extremely welcoming, generous, and nice person. He came out of the kitchen many times to talk to us about the dishes and even made personal recommendations. Besides the chef, the rest of the staff is friendly and helpful. The service was great and the food was astounding. The dishes were each wonderful, creative, and tasty and the portions were more than enough. Besides the normal dishes on the menu, the chef was also able to accommodate me and make a me a custom vegetarian dish. You will not be disappointed. The food was awesome the pilzstake had an awesome flavor and paired great with the greens and fries so if you have low carb or carb lover this restaurant has good versatility. Staff was friendly and made good recommendations. We don't drink so we just came for the food and it was awesome. Wasn't a 5 star because portion size was smaller. Wowowowowow! Where do I even begin when describing the lovely meal I enjoyed at Bistoro last week?! First of all-- the food. As an appretizer, I ordered the Stuffed Piquillo Peppers. Small and mighty, these peppers were packed with an explosive array of flavors, both sweet and zesty with the flavorful potato salad to soften the flavors and bring them together. I was really impressed-- and tempted to order a few more plates of them for my entree and leftovers. I'm glad I didn't because... For my entree I ordered the Bisteak Bocata (in Panini form) with mushrooms added on. The sandwich was plentiful with meat and toppings, and the flavors were impeccable-- it was a unique flavor profile, especially for a sandwich-- anything but basic, and similar to app, they did a wonderful job of infusing various aspects of flavor into a well-blended dish. I was also fortunate to receive a small sampling of the Pueblito Pintxos, since I was chatting about the chili peppers. It, too, was delicious, and I plan on ordering it next time I visit. The restaurant is fairly new, but seems warm, inviting, and down-to-Earth. When I hear "spanish tapas", I tend to imagine a dressy, over-priced restaurant, but Bistoro was very reasonably priced and had a cafe feel to it. Katherine, the Server, greeted me with a warm smile as soon as I entered, which was remarkably inviting, especially since I was dining alone while in Pueblo for work. The owners, Joyetta (sp?) and Plume, were so passionate about their food and the way they took care of customers. That passion is clearly detectable in the quality of food and overall experience of dining here. This restaurant has not only become a staple for me to visit every time I'm in Pueblo, from now on, but also a destination in and of itself now. Fantastic. Lovely ambience, friendly service, and delicious food! Since I was unfamiliar with Spanish wines, we were presented with four reds to taste and chose a negroamaro. I'm gluten-intolerant, so I ordered the Pilzteak bocata on greens (any bocata can be served on greens) and also tasted the salmon with risotto (they placed the garlic toast on a separate plate for me companion). The chef came out twice to make sure everything was to our liking and to reassure me that my food had been made "on the side" away from contamination. We also appreciated that the festive music was at a nice level, enjoyable without drowning out conversation. We will definitely be back! read more

Fantastic, cozy restaurant and bar! We came in after being at State Fair all day, but I would have been as comfortable in a dress as I was in jeans. Devin had what he called a 10 out of 10 panini... lots of gooey cheese that was an amazing mix of feta, Parmesan and cheddar plus a HUGE bowl of fabulous sweet potato fries. My pork piccata and veggies was really good. I have not had piccata in a long time and this one was worth the wait! Absolutely delicious authentic food packed with flavor. The staff was so helpful and friendly. We drove in from Ouray and got there just a couple minutes before they were closing the kitchen but they gladly kept it open for us. I really wanted to like this place but it was bad. The atmosphere is comparable to putting gaudy lipstick on a pig. The food was poorly done and over priced. We got tostadas and the bread was in toasted French bread with variations of mayo and olives- which I love, but don't want to be charged 30+ for when it isn't prepared well at all and isn't the best combination. Was driving through Pueblo and stopped by. I usually love tapas so so much, and was underwhelmed. I'm also a food snob, lived in a big city, and repeatedly ordered tapas in Spain, so my standards might be too high here. Quite a few were dressed up to come here, although the ambiance is a bit like they tried and put in effort but didn't quite pull off "high-end." Then again, it's Pueblo? In terms of the food, I got the tapas tray, and it was unmemorable, aside from the fact that it was very over-priced. There was a sauce that was good, but otherwise I mostly just felt heavy after eating it. Others in my party enjoyed their food much more than I did (a sandwich and risotto), so perhaps the biggest takeaway is don't bother with the tapas tray, especially as an entree. Or perhaps specifically ask what is on the tray, since it's not specified on the menu. Conclusion? Good for carb and cheese lovers, a bit overpriced. read more

My boyfriend and I were in Pueblo for a wedding. As he was part of the groomsmen's party, and I was not, I had an afternoon free to myself while he was out golfing. Wired to Central time, I started to feel peckish for lunch at around 11. I saw that Bistoro had good reviews and was open, so I headed there from the Marriott where we were staying. My timing could have not been more perfect. At 11:30-ish when I walked in, there were just two ladies waiting for their takeout orders at the counter. I opted to sit at the counter because I feel less like a "Loser, Party of One" at a counter than I do at a table. I was greeted and given a menu promptly. I only had water to drink although they have soda, coffee, and smoothie options. For my lunch, I decided on the bisteca on greens, and it was MAGNIFICENT. You have the option to have it served on greens, a hoagie, or something else that I can't recall, and I opted for the greens, which the server/owner informed me were dressed in apple cider and olive oil. I chose the greens because I knew I was going to be a super fat fat later in the weekend. Anyway, as a person who normally has to begrudgingly take a way a sytrofoam box, I devoured my bisteca with green chile and onion. After 12-ish, the place was PACKED, so go git ya some! Absolutely in love with this place. Would highly recommend if you want great food and to get away from the redundant food theme of Pueblo. 12/10!! Their lunch times seem to be incredibly packed so get there as early as possible. Our group of four had such a pleasant time last weekend at the Bistoro. The food was healthy and delicious, my wine was refreshing, and our table allowed great conversation as the restaurant was not a noisy atmosphere. Our waitress was amazingly efficient and fun. Overall food we ordered yesterday was good, but medium rare sirloin was tough and chewy were it my restaurant tenderloin would replace. Throughout our meal we were bombarded by flies! Yeech. Wonder if backend and trash area clean? Cleanliness of restrooms often indicate restaurant cleanliness; restrooms so so, in great need of update plus new doors. Crostinis good taste chicken good excellent fries excellent eggplant sandwich, excellent Bordeaux Australian Riesling and special Margarita. Cost of food and drinks a bit high $2 less per item would reduce our bill to $75 vs. $90. Location in town center stretch of vacant storefronts makes area sketchy no handicapped parking skimpy parking on-street patio deleted 2 or 3 spaces other nearby parking nonexistent to 3-4 blocks away. read more

Being Pueblo, we HAD to try the El Pueblito Pintxos, Pueblo green chili's marinated over some crostini's. Excellent paired with the house red. What more ca I say, we had the steak sandwich both ways it comes, both are marinated, but one is garnished with chilies while the other is garnished with mushrooms.
