    Black Cap Coffee & Bakery is a small chain of gourmet coffeehouses that opened in Stowe, Vermont in 2010. It was founded by husband and wife restaurateurs Chris & Heidi Townsend. The couple had previously owned the Firehouse Roasting Company and Café in Barré as well as the Stowe Coffee House. When Black Cap first opened, it was originally a coffeehouse that also doubled as a ceramic studio and art gallery. Also in 2010, Laura Vilalta would relocate from Barcelona, Spain to Vermont with her three children who were ski racers. Vilalta was only supposed to stay in Vermont for a year, but she fell in love with the state and the lifestyle and decided to stay permanently. When she heard that the Townsends were selling Black Cap in 2012, she decided to purchase it. Over the years, she slowly made the coffeehouse her own and eventually added other locations. A second location opened in Morrisville in 2017, a third opened in Burlington in 2021, and a fourth opened inside the historic Waterbury Train Station in late 2022. Each location offers gourmet coffee and tea, smoothies, fresh baked goods, sandwiches, and craft beer from local breweries. I recently visited Black Cap's Waterbury location while I was on a Vermont craft beer road trip. In the morning on the second day of my trip, I left the historic Old Stagecoach Inn where I was staying and decided to take a walk around town and see what Waterbury had to offer. During my walk, I found the beautiful old train station and saw that it housed both a small visitor center and a coffeehouse. I poked my head inside Black Cap and really liked the interior. After looking over the menu, I decided to order a "Nutella Latte" (mocha, hazelnut). I must say that the baked goods all looked pretty good, but I already had breakfast and wasn't really hungry. After getting my coffee, I investigated the visitor center next door and learned about the train station's history. Built in 1875, it was a popular stop for the Central Vermont Railroad. By the late 20th century, passenger traffic had dwindled and the building was left to rot. A major restoration project went on from 1997 - 2006. At that time, Green Mountain Coffee Roasters opened a location which operated there until 2021. Black Cap's Waterbury location has some excellent coffee and some nice history for railroad buffs like myself. I'm happy to have found it!

    This is a really cute cafe with yummy pastries. I absolutely loved their Vermont sausage with caramelized onions croissant. the croissant was flakey and buttery while the sausage and onion made it even more savory. The matcha latte was okay, felt like it was really sweet. And I also got cupcakes, the hazelnut chocolate one was divine!

    Sweet place in the old train station. Ordered a medium hot latte with The Vermonter sandwich for lunch. Very good sandwhich. Latte is hot, yum. Big storm last night cut off electricity to Warren, including Sugarbush Resort! What to do? Come here.

    More like 2.5 star rating.. the food is decent however every time I order I get surprised with what I actually get. I'm not sure why it's so unpredictable when I order the same thing each time (the BLT-C, which each picture is a different order). Sometimes I get 2 sandwiches, sometimes 1. Sometimes they include chips in the order, sometimes they don't. This time I got my sandwich but it was missing lettuce. It just can never seem to be right. Outside of that, the food is decent, I'm gluten free and have never gotten ill (yet - I'm constantly worried I may get glutened just due to the variances in orders each time), and the food comes out quick. However, if you get food anxiety or just want predictable and consistent food, maybe try another place.

    10%service fee is an automatically added gratuity for the back of house employees who don't get tips.

    Great spot. Old train depot which is a cool vibe. Coffee is great! Good seating options with seating outside and covered.

Note: this place is no frills. Waterbury offers free community wifi but it can be spotty in this location. The charm of this place is definitely the outdoor patio and fact that you have to stroll through an alley to find it. Double note: they sell breads, gingersnap cookies, croissants and a few other baked treats. The owner told me that he has been operating via wholesale for years but just recently opted to open up for a mini café section. Hallelujah.

It's always been busy when I've gone, but wait times aren't very long and the staff is pleasant. Needless to say, I got home and inhaled my turkey on a baguette. The only thing I think is a little bit of a bummer is the lack of more "traditional" topping options. I like my sandwiches with lettuce, tomato, and onion. The cafe does not offer tomatoes and only has pickled onions. Would be nice to have a little more choice when building your own sandwich. That said, I'm still a big fan and would get food from there again in a heartbeat.

Taste wise, chef Perrin is good- the decorating was horrifying and I was SO EMBARRASSED because I made the cake a focal point of the reception. So it was on a swing...sitting on a table- it was ridiculous -and she completely ignored what we spoke about, regarding flowers on top. Anyway, yes, we had our wedding cake done here and it was pretty good. We didn't really have many (ANY?) other local options, so they kind of have a corner on the Mad River Valley market.... There's a fairly wide variety of flavors and frostings, and you can choose as many different layers of cake as you want, so the flexibility is nice. I would say not to expect anything terribly fancy or the most beautiful intricate cake though. I gave Perrin a picture of what I wanted the cake to look like; it didn't really come out the same, and it was also slanted when it arrived at the wedding venue. The cake itself- we had 3 different flavors- was pretty fresh and moist, so that's good. Our main cake was spice cake with maple carmalized apples as filling- a good fall flavor. I don't really like buttercream frosting, but it was the only other non-chocolate choice other than fondont. I think the best was our groom's cake, which had chocolate fudge icing. Overall, I'd try out places in Burlington and elsewhere and see what you get there....the pricing here really wasn't cheap and the cake was only ok to fairly good. You also have to pay a $50 tasting fee, which is waived only if you end up using them. BUT, you do get to take home your samples.
