I love blue agave. The restaurant itself is classy and well designed. I enjoy their modern take on Mexican food. My favorites are the stuffed chili relleno and the blue corn enchiladas. I just want to say I really love the Fort Collins location, food is great, friendly people, and great service. As for the Denver location, I would stay away. I used to come to this restaurant a lot but within the past 6 months, the quality of food has gone down hill and the service is horrendous. There is one server who has blonde hair and works by the bar, who has the absolute worst attitude. She blatantly made fun of and rolled her eyes at a person who came in asking if they were hiring in front of other customers. Yikes! Poor guy was so embarrassed. I have had this server many times and she is very rude and unhappy to be there. Makes the experience of paying a lot of money for a meal miserable. Long overdue review. We went on February 25, 2022. This is my 3rd time at this restaurant. I liked their margaritas. We had a reservation. Checked in 5 mins early and was told it would be a wait. Cool, no problem. A bunch of people walked in as it's right off 16th st and they were all seated. They also happened to be white, while my party of 3 were minorities. The Caucasian hostess Madison was extremely unprofessional and gave us racist vibes. I kindly and politely asked her how much longer it would be, and her reply was that we were early for our reservation. After a numerous amount of walk ins were seated, we were finally seated 20 minutes later. When we were walked to our table, we were sat all the way in the back and passed a bunch of open tables. Ridiculous. We should've just left, but we were hungry and it was cold outside. I will NEVER go back here. Our second visit was on a Sunday evening for our anniversary and our experience was nowhere near comparable to our first. So, I'm thinking this place is best on Friday and Saturday nights when they expect large crowds and have the proper staff scheduled. When arriving for our anniversary dinner, it was a let down that they did not read our comments left on Open Table noting that it was our very special day and to make sure we had an intimate, romantic table. And, even when we brought it to the waitress' attention she said the typical oh Happy Anniversary stuff and then said we could choose any table we want. You know... it's not up to us to know which tables are the most intimate/romantic, so we just picked one and sat down. We didn't feel "special." Our food this evening was just OK as well. And, after realizing the place was so HOT from the heat turned up, we opt'd (in January) to have our desert and final drinks outside on the patio. I was greeted from the time I entered the restaurant by the Hostess Lucy, all the way to the bar. The food here is oh so gracious! The mango fish tacos are about a 7/10 but the customer service will make you forget all about it. I ordered a Frozen Sangria and it was everything you may expect in a Frozen Margarita! This was the first stop on my Denver experience as it was close to our hotel. We can in on a Tuesday and it was between lunch and dinner so the place was not packed. My friend and I were able to grab two seats at the bar. I ordered the margarita flight and my friend got the blue agave margarita. Of the four in the flight my favorite was the presidente, the sangria was salty everything else was standard. A perk was the tequila started to hit earlier than expected I don't know if the altitude was the reason. My friend was somewhat disappointed because she was expecting a blue in color drink but persevered on. Regarding food I tried the Aha Tacos that came wrapped in lettuce. In theory they sounded amazing but the execution was poor. The lettuce was not enough to support the fish and you really had to eat the tacos with a fork. I feel like the tacos could have been better with a decent piece of Romaine or maybe Bibb. It was like they took one leaf and cut it into three to save money. The marinade overpowered the fish and I just checked their summer menu and it is no longer there. I'm guessing it wasn't a fan favorite. My friend got the tilapia tacos and was underwhelmed as well. Two out of three ain't bad usually...but we hit the trifecta! All three! Restaurant has a trendy bar/restaurant feel and the bar was well stocked with a variety of premium spirits. Tables were well spaced, booths were roomy, and for a weekday night, sparsely populated but with a constant flow of patrons (in fairness, Christmas Week in downtown Denver after 7pm would NEVER make for a busy night). Service was very good, and my wife had the Sous Vida Blackened Steak and I had the Mango Fish Tacos. Both were great but I think she got the better option. Lots of other amazing looking choices. We had a nice meal here, but it was nothing impressive. Very standard corporate Tex-Mex, like a Chi-Chi's if people remember that chain, with maybe a little better taste and less campy atmosphere. Our server was friendly. Staff works hard and hustles, but the place was crowded and looked like it was too busy for the service to keep up without being rushed. The food was good enough but not as good as we'd expected. However, I will say many tables seemed to be enjoying themselves. Lots of large groups, which may explain why the experience my wife and I had wasn't great, whereas a more festive group atmosphere might compensate for the lackluster fare. It's nice to find wonderful food during the CoVID season. Going out is a risk, but finding a place that both mitigates the risk and provides a wonderful experience on top of it is special. From socially distant tables, everyone friendly even through masks, and the QR code menus - the restaurant did it's job. But having had BBQ chicken at a number of places over the years and having a version that completely blew my mind was completely unexpected. The chicken breast was cooked to perfection, as was the jalapeno cornbread. The avocado salsa and Mexican corn has such amazingly bright flavors that it brought joy to my face. For dessert we shared an apple bacon empenada, which had a flakiness almost like a croissant, and the applesauce and bacon flavors matched delightfully. We are in town for a conference and wanted to try food outside of the hotel area. We were at the zoo and asked a gal at the gift shop where she recommended for lunch. She highly recommended Blue Agave. We went and boy were we glad. I had the salmon with the rice and squash and avocado...can't remember what the dish is called but I normally eat 1/2 my meal and my husband gets the rest. Today there were no leftovers it was so good. He had the carnitas tacos with beans. It was just enough for him that he didn't need to order a salad or anything else.
