The spotty service continued throughout the evening, from the waitress not knowing the various oyster flavor profiles to being told they only had 1 whole fish left, out of a menu of 6. This is easily the best seafood dinner experience I've had in Denver and I'm so happy that I've discovered water grill! He came here for a friend's birthday as a party of 12 on a Tuesday night around 7:30 PM. The ambience gives a real nautical vibe, resembling the inside of a grand ship with lots of dark woodworking. I believe our server's name was Matt although I could be remembering wrong (i should write down the names) but he was so attentive and great. He gave the best recommendations. Our group tried a number of different things at his advice, and it was all so good. It's really hard to find good oysters Rockefeller in this area being so far from the ocean, but water Grill has it down! We ended up ordering an additional plate of them because they went so fast. We also got the raw oyster platter with a few from different coasts, and Matt gave us the full rundown of where each one could be traced to and what the differences were generally. I didn't have a huge appetite so after the appetizer, I decided to have another appetizer as my meal. He recommended the halibut cheek, mentioning it was a more tender cut, and boy This was the highlight dish of my month. Not only was the fish so fresh and tender and delicious but the sauce it came in was so unique and breathtaking. It was creamy, but not too much so and had the perfect balance of flavors. A fly landed in my wine, we asked the waiter for a new one and I watched him go to the bar, fish out the bug, pour the wine into a new decanter and bring it over. Loved the Water Grill's sister restaurant in LA when we had a great meal there on a late night whim a few months ago. Planned this visit a little more in advance in celebration of my honey's birthday. Had a great time. Sunday night is a good night to visit because the LoDo edition of the place is not overcrowded then. Split a large well-made Caesar salad with extra anchovies and an order of their delicious sourdough buns, followed by their cioppino for her and the black cod in soba noodles broth for me. Accompanied by a couple of different wines--their zin for the cioppino and their Chablis for the cod--the entrees were spot-on (but if you get the cod ask them to go little more lightly on the broth so its not swimming in too deep water:). Finished the night with an excellent dark chocolate torte served up with a glass of Gruner Veltliner dessert wine, and left sated and pleased as punch. Weird service honestly. I ordered the mussels and a few minutes later, bartender came back and told me the mussels they had, they were using in an entree. So I couldn't have the app. Then several minutes later, was told they didn't have the fish my husband ordered. We ordered other things and then 30 min later, ordered I ordered a drink. Beautiful space, completely failed service: what a waste! Very large, well-designed restaurant--but the management and service were shockingly poor. Considering that Water Grill is a chain... I'm shocked at the lack of consistency at this location. We arrived for our 8:15 PM reservation and were not seated until 9:08 PM--nearly an hour later--with little to no communication or acknowledgment of the delay. Once seated, things didn't improve. Waitstaff barely checked in, we weren't offered drinks (simple water would do) in a timely manner, and the entire service flow felt disorganized. The bar seemed overwhelmed, and there was clear confusion about which servers were responsible for which tables. It genuinely felt like no one was in control of the room. The restaurant also seemed completely unprepared to handle basic allergy accommodations. Many sides included dairy, and when we asked about substitutions (something as simple as vegetables), the response was vague and hesitant--"we'll see if we can do that." Not exactly reassuring when you're dealing with dietary restrictions. To make matters worse, we were told that the manager, Mallory, was "very busy" and would get to us when she could. Translation: paying guests are not a priority. We waited...and waited...and no one ever came back. At one point, we were informed that the kitchen had run out of items we had already ordered, which only added to the sense that this place is severely lacking in planning and communication. Despite the structured menu, service was still slow and inconsistent unless a manager happened to be nearby--which, in our case, never actually materialized. Ultimately, we left without being properly served because no one--neither waitstaff nor management--came back to check on us. Instead we went to Ocean Prime which was far better than Water Grill. This is a difficult review to write. This could have been a three, four, or five star review, almost depending on my mood. But ultimately this very nice restaurant failed in ways that I cannot ignore. The decor is quite charming and we liked it a lot. Our server was very personable and helpful, although full disclosure requires me to point out that he did fail to bring one of these sides that we ordered. Fortunately we were also not charged for it. This brings me to the salt. I always like it when restaurants serve fresh baked bread or rolls with the meal. Water Grill provides some delicious looking rolls with a small dollop of salt on the top. They are also shot through with salt. I don't know who wants rolls that are that salty, but it's not me. Had that been the only salt encounter, I might not have even mentioned it. But it wasn't. One of my dining partners ordered fish and chips. We had already discussed at the table the saltiness of the rolls. This person turned to me and said "This is salty too," and handed me a taste of his fish and chips. Salty. I had the swordfish, which as usual was rather like a fish steak. I liked it, but couldn't help noticing that the exterior tasted rather salty. One of my other dining partners had the salmon. You guessed it. Salty. It's inexplicable. I've never been to a restaurant that used so much salt on so many different food items. I want to be clear here. If you tasted through the salt, so to speak, the food was really good. It just had too much salt. And the lobster bisque and octopus thankfully lacked this problem and were both delicious. So it was a strange experience. Nice restaurant, great service, good food, with an added helping of unwanted salt. Had it not been for the salt, I would be telling you to immediately head out to Water Grill and enjoy a nice meal, a meal which I think justifies the prices they charge. But the salt. I am not an oyster eater, but I should mention that they have an impressive menu of different types of oysters in different combinations, both all of one type and as samplers. And they offer fresh catches which we did not try. But this is a restaurant that I could get very used to, if I weren't worried about the salt. I read some other Yelp reviews before writing this one, and only one of them mentioned saltiness, so maybe we just somehow ended up on the wrong end of the shaker. I don't know. The quality of the food underneath the salt was such that I have to believe this restaurant typically does better than what we experienced. We finished the appetizers as our entrees rolled in. The crab was okay, a bit dry but I favor Dungeness because it's meaty and will hold onto sauces so the butter did it's job. Our reservation was for 5:45pm, we were not seated until about 6:15pm. The evening ended at about 8:10pm (and that was with us having to rush dessert as we needed to be somewhere at 8pm). The bread and butter were DELICIOUS, the oysters were great, our entrees were also pretty good. None of our food tasted bad per se. It just wasn't anything that mind blowing either. The presentation was very mediocre. We also ordered 2 additional sides with our entrees for an extra $12-$15 each. The worst part of the evening was definitely the pacing of our courses. We waited a good 20-30 minutes for each course to come out. By the time we got our entrees we couldn't quite enjoy it as we were stressing out about needing to leave for our next scheduled event.
