The challah-like bun-- with appropriate size, volume, and density-- also brought some flavor: a pleasant slight sweetness. Cheese got the right melt, tomatoes were very fresh, and the other ingredients all worked in harmony. Tallow Fries: Included with the cheeseburger, these had both crispness and give, with a moist, fatty lubricant to aid the texture and flavor. Salting was on point. And plenty of them. All this for $24 might seem steep, but in today's economy, where it'll run you nearly $20 for a burger and fries at Five Guys, I'm all for paying a few extra bucks for the extra quality.
