The undercrust is also crispy and crunchy and stands up straight when you pick up the slice. The cheese is high quality. After just one bite, I understood the reason the place was so crowded. There are a lot of people working in the kitchen and they also have a sit down waitress service area that was full as well. There are plenty of wait staff running around and serving dinner. Everyone is very friendly and the gentleman behind the counter greeted me the second I walked in the door. Now for my negative criticisms and they are borderline petty. The sauce was good but it doesn't blow you away. When you have spectacular crust and high quality cheese, you would expect the sauce to be on the same playing field. It just isn't. It could probably have used a bit more seasoning. I understand that if you have a lot of staff you also have a lot of overhead.
