Cole helped us with decisions that would be quickly executed for our quick needs. Chef Scott was following up with guests in the dining room (which is a rare site). As Chef stopped by we mentioned we were looking for Larch hikes and Liz promptly came to our table to help us with recommendations. Just another perfect combination of the clean, fresh, and very tender meat mixed with the creamy and also fresh sauce. Add some great bite and acidity with the picked onions on top of a fluffy and savory potato skin and oh you have an amazing symphony of flavors playing out in your mouth that just make you want to close your eyes in order to savor the moment. Bison: Skip Although I enjoyed this dish, I think the main downfall was having this follow the spectacular beef tartare. The bison was cooked very well but it wasn't as composed of a dish with all the playful flavors and notes. Potatoes: YOU HAVE TO GET THIS! These are BY FAR the more crispy and fluffy potatoes I've EVER had. And I order potatoes at nicer restaurants A LOT. When you take your first bite it's like you're unlocking through the most delicately crisped skin and then enter the infinitely creamy and soft insides. My friends and I came here for a late dinner after hiking and Brazen definitely hit the spot. We were lucky enough to snag a table with a minimal wait but would recommend making a reservation for prime dinner time. Brazen is located on Banff Ave which is the main road for the town and the interior was very classy with amazing service. We started off with the duck croquette and lobster dip, both were raved about by our table. The aioli was curated to the perfect taste and the croquette was not too heavy. For my entree I got the ginger beef and they even flambe it table side (highly unexpected) to help the meat caramelize and the texture was amazing. This was hands down the best venue for libations I've been to this past year, including in Los Angeles. Located right at the heart of Downtown Banff, the joint boasts classy jazz vibes and an elegant ambiance. The cocktails here absolutely killed it. The crème had hit of coffee flavor which was different from the "normal" crème brûlée. I wanted to try the Caesar cocktail drink before we left Canada. A Caesar (also known as a Bloody Caesar) is a cocktail created and consumed primarily in Canada. It typically contains vodka, tomato juice and clam broth (Clamato), hot sauce, and Worcestershire sauce, and is served with ice in a large, celery salt-rimmed glass, typically garnished with a stalk of celery and wedge of lime. What distinguishes it from a Bloody Mary is the inclusion of clam broth. I liked the substitute of pickled asparagus in my drink. I think the clam broth gives more depth to the drink and I much prefer the Caesar drink compared to the Bloody Mary. Our server was friendly and attentive. Brazen was a delightful surprise during my recent trip to Banff. I did not expect to be so taken by a hotel restaurant, but Brazen brought the WOW factor while still keeping in line with the rustic, Canadian Rockies feel of Banff Ave. The cocktails are super fun and imaginative. I had the tea party cocktail that comes to the table with blue cotton candy in a glass. Then the liquids are poured over to dissolve the candy. It sounds like a sweet cocktail, but thank goodness it wasn't too sweet -- it was delicious. We tried a lot of great dishes, but my favorites were the Ginger Beef (smoked tableside), Mushroom Ravioli, and the Green Tea Mussels. Dessert is also a fun play and unexpected. Think creme brulee that looks like an ash tray, and deconstructed cheesecake. We came back for breakfast the next morning and had more enjoyable food! If you're visiting Banff, I found that the servers were very knowledgeable about the town's history and very helpful with recommendations for things to do in the area. Brazen is located in the Mount Royal Hotel right in the heart of downtown Banff. I was in Banff for a bachelor party and chose this place for the group. Made reservations via OpenTable after consulting yelp cause the pictures looked good. After a long day of hiking and climbing, we came at our reservation time and it turns out we probably didn't need to make a reservation as there was basically no one in the restaurant at 6:30pm on a friday. It probably was a bad omen. Unfortunately at least half the party didnt like the restaurant choice. The chef was a little too adventurous with the taste of the food. My bad. Bone marrow 4/5 good amount but no salt? or not salty enough. Needed more bread. Boba in a beer? I didnt order this but it was at least interesting to look at. Lemon cocktail? I didnt order this but it was also interesting to look at. Smoked beef tartare 3.5/5 I thought this was an interesting taste and not something that is traditional for beef tartare. Truffle potatoes 4/5 seemed to be crowd favorite as the only side dish that met expectations; i thought it was ok Coffee rub ribeye with a chocolate sauce 3.5/5 I thought it was ok, others really hated it. It was unusual so i'd give it a pass. Brie mac and cheese 3/5 definitely unimpressive side Surf and turf 2/5 where the surf is just a few green tobiko eggs and the turf is pork chop that was dry. This was highly disappointing. Ginger beef 3/5 we got 4 dishes of these with varying degrees of brandy on fire. The 1st had too much brandy leftover so the dish tasted too strong of alcohol (2/5). The next 2 had less brandy and were better (3/5). The last we asked to have no brandy added and i was told it tasted the best (4/5). Oh well. That was an expensive meal but luckily the US dollar is so strong. Coming from San Francisco area in California where food competition is high, maybe our expectations were too high for the price of the food. My friends were ragging on me calling me a fake Yelp Elite lol. When we left, there was still barely anyone in the restaurant. I probably wouldn't come back even if I came back to Banff at some point in the future. The good thing for this restaurant is that almost all Banff restaurants we went to were disappointing. I went to dinner here for a friends birthday. Everything is set family style and they are small dishes that you can share among the entire table. However,we all ordered a main course just for ourselves, and we shared a bunch of small plates. The service is incredible. Our server was so attentive and very charismatic, and he had beautiful hazel eyes. You can have a dinner with a view of the beautiful town of Banff. We ordered a few of their specials and also some of their daily selections. I think my favorite dish of the entire night was the steak tartare appetizer. The beef and ginger, popular dish that everybody raves about, was not a favorite of mine. Depends if you enjoy the boozy taste in your food, I personally do not. However, if that's your thing, then maybe you will like this dish because they prepare the sauce table side with a shot of alcohol and they burn it off with fire, which is pretty spectacular to watch, but the taste for me did not hit the mark. Also, those pepperoncini I thought they were mild, but they have some kick to them! My mouth was crying! Such a mixed bag at Brazen. No complaints about our main dishes or sides: ginger beef, crispy chicken, bison skewers and fried artichokes were all very tasty. Our drinks, however, were both VERY light on the booze and cloyingly sweet, each with a weird undertone of something just not quite right. No matter - we pressed on and decided to order dessert...and that was our final mistake. Who could mess up pavlova? HOW could they mess up pavlova? It was beautiful when it arrived - an absolute sculptural presence that seemed to encapsulate mountain vistas...a triumph of form. But the taste - oh my god, it was absolutely dreadful. It was supposed to be a blueberry pavlova but it was black throughout and sort of charred tasting. Not at all sweet...just this flavorless, black dessert we couldn't bring ourselves to eat. When the waitress asked us what we thought, we had to ask what was in it. She said blueberries and we said, nope, that's not it. She looked a little sheepish and said, ok, it's charcoal that gives it that color and flavor. CHARCOAL??? Blech! We're in the worst fire season Canada has had in years and you are intentionally putting charcoal on a plate, much less a dessert plate, and attempting to pass it off as something one wants to savor? No thank you. It was horrendous. What a poor ending to an otherwise decent meal, with the bookend of meh drinks at the start. Sadly, good food was just not enough to make this a hit for us. What we had-- tapas-style small bites: (1) mouthwateringly crisp, sweet snap peas with acid and contrastingly spicy wasabi peas, with cashew mousse to give it all contrast (2) Fried artichoke hearts -- light, fluffy, AND flavorful with dill pickle, smoked tofu, and cashew mousse.
