We are a big fan of brisket and ribs and Bubba's brought the FIRE. Some of the best brisket I have had in a very long time. The brisket was so soft you literally didn't need to chew it, no joke. The ribs were also full of flavor with just the right amount of tenderness. The sausage was the best I have had in a BBQ restaurant and the chicken didn't need any extra sauce. The perfect place to stop and eat that's away from the mayhem a bit further in town and it's in plain sight! When taking a road trip in to Yellowstone National park via the southern entrance...you're gonna get hungry. I guarantee it. Yeah sure, you could get drive-thru or end up at Dennys but why would you when you can experience the amazing food and service that Bubba's has to offer! Though there was a bit of a wait, I must confess it was well worth it. Once seated, our party of 7 was taken care of like we were family. The ambiance is lively and as for the food? The ribs were well smoked, and the sides were delicious. However, my father ordered the chicken sandwich, and the chicken was very rubbery, and the sandwich was almost uneditable. As we are ready to check out our waitress immediately notice that my dad had not eaten the sandwich and immediately offered to refund us for it, which was very kind and I'm very much appreciated. The music was quiet if there was any at all, I could barely hear over people talking, but honestly, it's not that bad if you've been in the middle school cafeteria at one point in your life. After a day in the national parks, you really work up an appetite. We were feeling for some good eats and came across reviews for Bubbas. We walked in around maybe 5:30pm-6pm, prime dinner time. It was a wait time of 30-40min -- but we saw that the bar seating was open and asked if we can snag those seats. They were happy to let us sit and dine there, alas a good tip to workaround having to wait longer than you need to! We ordered 3 meat combo to share between two people. The meats we chose were the sloppy bubba, brisket and pulled pork. I've got to say that everything was tender, the pulled pork was probably the better tastier meat for us. For some reason St. Louis ribs were awful. I even left them on my plate and didn't want to take them with me. Overall, I feel Bubba's barbecue has gone downhill over the years. It seems a little more corporate. They used to put barbecue sauce on the table. They used to give you wet naps. I used to enjoy the salad bar, but I get that that was a cost cutting move, and they put a bar in. Even after those changes, I would still come back for the ribs.
