This is the most authentic Korean restaurant in the entire South! The daejee gukbap is rich and heavy yet refreshing. The broth is the main star of this show. The soondae is nothing to scoff at either, however the outer casing (is that what u call it?) is very soft and not chewy at all, which is not exactly my type of soondae. I am used to the cheap H mart soondae which is very chewy and tough. The banchan (kimchi and other stuff idr) was pretty good but its quality does not match up to its 15/10 gukbap. The interior also feels very Korean with a self order kiosk and a window where the food tray is dropped off. I ordered Spicy Pork and Rice Soup, while my partner got the Pollack Ox Bone Soup and Spicy Blood Sausage Soup. My soup had a strong pork flavor, and so I swapped my meal with my partner's Pollack Ox Bone Soup. This was completely opposite; it was very bland. I found this place by walking down the street from the Toyota dealership. I needed to kill about an hour of time, and it was noon. I walked into the shopping strip, and took a look at each one of the restaurants, but nothing really caught my eye until I saw their sign. I decided to check them out for a lunch set because it said "soft opening". I was excited that I was one of the first try them!! They treated me very well, and the store was modern chic with a touch of Korean home-style. unfortunately, they didn't have an English menu at this time, but it's been about 2 months since I went in - so maybe they have one now. They did say they were planning on making one. Their menu was in Korean, and it was displayed on the screens behind the register counter. I ordered and they asked me to have a seat and said that they would bring it to me. As I sat, I began to ask a few questions, and the owner ended up coming out to answer them directly (since the register lady didn't know all the answers - might have been a language barrier issue, but I wasn't entirely certain). I ordered the Ttukbaegi Bulgogi and a bottled water. They had a water filter machine for self-serving tap hot or cold (next time I go, I'll get tea). I finished my bottle of water before leaving just so I could try the water and let you all know: it's good. The register lady happily gave me permission to refill my water bottle with their machine. Btw- the water was Deer Park (not my favorite), as I recall. I started with what they called "clear soup", but it was basically a light miso soup. It was so tasty o slurped it down after just 4 spoonfuls. Honestly, it was really satisfying. The Bulgogi soup was delicious. The mushrooms soaked up that soup base and grabbed bits of the beef and the meat was so tender and yummy! I literally ate and drank it down to the last morsel and sip. I used the rice here and there with the side dishes to help give my palate a break from the sweet and savory flavor of the Bulgogi. I also used up the last bit of rice soaking up the remainder of the soup at the end. Yum yum yum! I really need to get back over there and see if they added the english language menu and I really want to try a few more of their soups. Some extra backstory: The owner decided to open shop a while back and gave his dishes a good thinking through. Each dish is just like it would be in Korea and he takes pride in that fact. The pictures on the walls show each of the main dishes that are the shops specialty. His brother took the pictures and made those blow-ups! I don't know what it is about certain places but when I saw that Samurai Ramen went under, I was a bit disappointed as the picking of decent ramen joints are few and far between. And when it's rainy and dinner time, ramen or pho seems to be the optimal choice for days like this. To my surprise, in place of a ramen joint is a traditional Korean pork bone soup place and I'm not gonna lie, this place is fantastic!!! The layout is exactly like Samurai Ramen in terms of seating arrangements there's nothing to rave about. A couple tables, some benches, a drink fridge, the food counter, a digital menu displaying all the items from the broth soup options to appetizers. Again, this isn't the ramen place so the items are different. It's just the setting that you might remember from the previous iteration. What's important here is the food... The namesake is pretty simple. Busan is a well known southern coastal city in Korea. DaeJee Gukbap translates to Pork Soup Rice. Put it all together and it's the traditional pork bone soup broth with rice Busan style. It's Busan style because of the condiments and the banchan they offer but more on that later... I had to start with what they are to be known for, the pork bone broth soup. When you get your soup, it comes in a bubbling clay bowl with your bowl of rice, radish kimchee, cabbage kimchee, a small helping of minced jalapeno peppers along side a jalapeno/onion slathered with fermented soybean sauce. It is the most minimalist setting you'll experience but in reality, that is all that you need and they prove it. The restaurant also brings out a set of spices to help enhance the flavor of your pork bone soup. Which means, they bring out the soup bland and you're the one that is responsible for enhancing the flavor to your liking. Powdered sea salt, black pepper, red pepper paste, and shrimp past are yours to choose from and you know the place is Busan styled because the shrimp paste adds to that feel of it being a coastal city which Busan is. The soup is milky white which means the broth has been simmering and stewing for a long time so you will get a very hearty rich comfort food type feeling as you eat. It is hot though so proceed to taste with caution. As you add the salt and pepper and other options they offer, it only deepens the soup into a savory richness that only heightens the comfort as you consume the broth. They have a few slices of pork shoulder meat and it's seasoned with what appears to be chives and a minor smattering of scallions so the protein amount is negligible all things considered which was a slight disappointment but what they did offer gave it a textural difference. All in all, this place is definitely worth coming to on a cold winter day or even a rainy one as you'll experience internal warmth while you eat one of the most beloved style of traditional Korean food you can find this side of the Korea.
