Believe the hype. It's worth the drive. Try as much as as you can, don't be deterred by long lines, etc.
I went to the Butcher Stand on a Saturday around 11:40. They open at 11 and there were several tables seated and eating, and about 8 people in line in front of me. I spoke with a Butcher veteran who was in line after me and he said that it's hard to gauge how busy the place will be. He had walked right up on a weekend lunch and then other times the line had been out to Route 66 before the joint even opened. So, I think I was fairly lucky given that my wait was not long. He did recommend that if you want burnt ends, arrive early. They sell out of a lot of stuff, sometimes everything, but that item goes particularly quick.
They move through the line fairly quickly and after you pay you don't wait long for your food. I was feeding a bunch of people to watch an OU game, so I had called in my order the day before. We got: burnt ends, sliced brisket, pulled pork, sausage, hot links, ribs, turkey and every side: potato salad, cole slaw, apple pie baked beans, and mac n cheese. They did not prepare my order until I had paid, but my wait was less than 10 minutes after I paid. They are clearly well versed in dealing with long lines and a lot of orders in a short period.
When I was finally able to eat the food I was very impressed. I had read several "Best Of" lists in various magazines and websites that proclaimed Butcher Stand the best BBQ in the state. After eating most of the menu, I do not disagree. My favorite meats were, in order: burnt ends, pulled pork, brisket, ribs, hot link, turkey, sausage. My favorite sides were, in order: APPLE PIE BAKED BEANS (order these now), potato salad, cole slaw, and mac n cheese.
Now, to get into some specifics. Not many places in Oklahoma offer burnt ends, and the Butcher's were legit. They were the fattier pieces of the brisket chopped into chunks. The chunks were larger than I was used to with KC burnt ends, but still very good. They had a nice crispiness to the outside crust, the rub was fantastic, and they were melt in your mouth good. Everyone at my watch party agreed. I probably could have got 10 pounds of burnt ends and no other meat and no one would have complained. Likewise, the brisket melts in your mouth, and if you get a fatty piece (they leave the fat on, which I prefer) it is so incredibly flavorful. I would have to give it a think, but this is in the running for best brisket I've had in some time. The pulled pork is chopped fine and then they add a mop sauce of some kind. I can't place all of the flavors, but everyone loved it, very tender and juicy. The ribs were tender, some fell off the bone, but most didn't. They weren't seasoned as aggressively as the brisket and pork. They were very good, just didn't compare to the burnt ends and pork. The sausage and hot links were good, the hot links very good. They are made by Butcher Stand, and if they weren't, I've not that this particular brand of hot link before. I would get the hot links again but probably not the sausage. The turkey was good smoked turkey, but I would imagine the best smoked turkey in the history of the world couldn't compete with the burnt ends.
The apple pie baked beans had come highly recommended to me by a buddy I trust on food, and he did not steer me wrong. They taste exactly what their name states: apple pie flavored baked beans. There are bits of apple throughout as well. These things were phenomenal, I've not tasted anything like them. They, along with the burnt ends, were the 2 most memorable items in our meal. I should have ordered more, they went fast. The cole slaw is a basic recipe but it is good. I thought it could use some salt and pepper, as could the potato salad. Both were mayo based but they weren't overly coated with it. I would order both again, they were classic BBQ sides prepared well.
The mac n cheese was not a miss for me, but certainly didn't live up to the other sides. It was seasoned the weakest and didn't have a ton of cheese flavor. Next time I will skip the mac n cheese and get more beans. The sauce is thick and dark. I am guessing it's heavy on the molasses. It's sweeter than most and a little thicker than traditional ketchup based sauces, but it was great. Seasoned very well, everyone loved it, but frankly, most of the meat didn't need it.
There are plenty of picnic tables to eat at and everyone from customers to employees was very friendly. Cool atmosphere. The place serves bottled and canned drinks which was a bummer as I was wanting some real fresh brewed sweet tea. But, I suppose every hit can't be a homerun. There is plenty to look at in this cool space and once you get your order placed, you'll be eating soon. My first trip (of what will be many) was well worth the time, the drive, and the cost.
