It is very strong flavors and better compared to the name brand root beer. They serve large portions and the theme is very Nice. Went here an a Saturday night. Did not have to wait which is a good thing. This is a new clean place. Has a nice old felling. I liked the different variety although small of there beer sampler. It was different then the many breweries. Food was really good. They have a variety with a German fair also. Finally getting a chance to rant about this place after thinking it over for a long time. So this place is embarrassingly ran. It's filthy and clearly a hosting spot for suffering staff. Just this year, it's been put through the ringer too many times to count: There's no hot water? ( Mind you, it's illegal to have a place open with no hot water. I'm imagining those dishes don't get cleaned well! Gross! ) That's fine! Bathrooms literally starting to overflow with feces? Let's pretend it's not! Power's out so nothing can be cooked or kept cold? Just ignore it! The owner is clearly so money hungry that he's totally fine with putting the general public and his workers at risk for illness. I've seen roaches crawling around, been blinded by smoke in the dining room from the brewers nearly a half a dozen times, and just completely appalled by the lack of consideration on the managements part for anyone unlucky enough to sit in the building on one of these tragic days. We had an event here at Carillon's and we were very happy with how it turned out. We had our own private room that separated us from everyone else but open enough to where we could easily access the main area. The beers were really good - the Berliner Weiss was the star of the show. The food spread was great - no complaints - and the staff did an amazing job setting it up and seeing it through. read more

Interesting setting in a lively park. The restaurant was clean, staff was friendly and service was quick and friendly. We had schnitzel and bratwurst and good was good and delivered hot. No complaints at all. Somehow, though, everyone seemed bored. The place needs some joy and energy sprinkled in to make it a truly great place. read more

The bratwurst plate had a couple wurst as good as I've had im Deutschland or anywhere stateside, and the potato salad and cabbage we're awesome. Then there's the beer. A relaxed, unique experience. The restaurant, menu and beer choices are based on early 20th century food choices. And they are excellent! My wife had meat loaf that she said was excellent. And she had a large portion. I had a sausage platter with two different types of sausage and sauerkraut. All of it was delectable. For appetizers we had sauerkraut balls with a side sauce. Really good. The waiters and waitresses are dressed in early 20th century attire. We've been here 4 times over the past couple of years. Always very, very good. read more

The Reuben is definitely one of the best I have had. The wurst is also really good . The sauerkraut was ridiculous. The atmosphere is perfect for a brewery and German restaurant. An experience you won't want to miss. I see a lot of complaints on here about the service as justification for low ratings. To me service is important but secondary to taste, experience and quality brew. Let's not forget that they are very new. They only have a couple of brews but they are very unique. What the what is up with some of the reviews? This place should be 4 or 4.5 stars, so I'm going to try drive up the average. The Food: mostly historical, representative of the mostly German immigrant recipes of the 1850s. Not a lot of options for some things, like gluten free and whatever... BUT THAT'S THE POINT. It's an experience, people! Some of the same but better food than Hofbrauhaus. The Beer: a variety of beers made on site using traditional ingredients and methods. All are a bit sour because that's how it was back then. I admit it wasn't my favorite, but I LOVED tasting history. The Atmosphere: this place is beautiful! Big beamed building with brickwork and wooden peg construction. Great indoor and outdoor seating, and being in the park makes it even better for the outdoor seating.The staff wear old timey clothes! The brew master gives presentations on ingredients and methods! It's like a totally interactive historical experience and I loved it. We went to Carillon Brewing Company for the first time tonight. I took my husband, and my parents. First of all, totally go for the atmosphere!! Just looking around the restaurant was being in a museum where they make their own 1850's style beer. After looking around while we waited 10 minutes for a table, we were seated upstairs and really enjoyed the view. We started with The Flight and with a sample of another peer on my dad's ticket, we got a sample of all the beers that day. That is something I highly recommend with the uniqueness of the beers here. It's especially fun when you have more people sharing. Mom and dad ordered the sauerkraut balls (and shared) and they were awesome. Finally ordering time came and hubby got the weinerschnitzel, dad had the wurst platter, and mom had the chicken. All were great! The only reason I would give this four stars is my dairy problem, I emailed two weeks ahead to ask about dairy free options and got NO RESPONSE. Going in that day, the manager talked to me while I ate and said he thought I knew I could have the roast chicken, the salmon, and maybe the burger, and he "thought" the wurst had dairy in the binding..... Wow, what great options.... (NOT!) While gluten free and vegan were on the menu and catered to, no one could even bother to make sure if the burger or wurst was or was not dairy free to be sure. It would be nice to be able to go to a German restaurant and be able to eat something German instead of another chicken, fish, or burger. (Yes, I've tried Amber Rose. See that review.) Otherwise, if you don't have a dairy problem, this place is great. If you have a dairy problem like I do, your better choice is Amber Rose. read more

Not a typical brewery restaurant. The beer is unusual - all four of their beers were bitter. Each was tasty, after you adjusted your taste. The mint julep was too sweet. The food was alright. Went for dinner last night after a long drive from Philadelphia. The building is a sight to see. It feels like you're in the 1800s and the aesthetic is carried through in all they do. 3 in the afternoon on a Friday. Seated immediately in the rustic looking circa 1850 setting - beautiful! The smell of burning wood inside awesome! Everything including staff apparel and sample newspaper of the time is present. The food was served quick, decent portions and unique awesome flavor. Homemade crime soda Devine and the Flight of home brewed beer was tasty. A bit pricey for the fare but how else could they afford the unique experience. Will be back! read more

Did not eat food so can't comment on that. We were so OFFENDED by the 2 "house brewed" beers and the rude/grumpy bartender, we got out as fast as we could! Absolute WORST beers any of us in our party of 4 have EVER had. I am a brewer. The other 3 in my group are VERY savy "craft beer" drinkers. We can't figure out HOW they could make beer SO bad! Absolutely disgusting, dirty dishwaster, chemical, taste to BOTH of their beers. Couldn't believe how similar the Pale Ale and the Porter tasted. Which is crazy in itself. Bad yeast?? Terrible. I was excited to visit this brewery, but it didn't quite live up to expectations. I found out later they've been having some issues with their brewing, so perhaps that's why. They only had a few of their beers available, but they were all pretty good. The food wasn't too bad, either. It's German food, so that's hard to go wrong with. I had the schnitzel on a bun, which was good but they give you a bit too much meat to go on a sandwich. Unless perhaps you have a giant mouth. I wasn't a fan of the German potato salad. I hadn't had it before, but thought I'd try it. Tasted a bit like applesauce with potatoes in it. It's part of the historical park, so it does have a historic feel. They have the area where they do the brewing right there in front of you while you drink and eat, but there wasn't anything going on the day that I was here. read more

Just came back from a work day lunch and this place is great. They've been open 9 weeks now according to our server and they're still adding some finishing touches but it's a great addition to lunch options in the area. The decor is rustic and nice. There had the fire going when I went which added a nice scent to the air. We arrived a little before noon and the place only had a few tables but by the time we finished it was pretty packed. Our server was very nice, attentive and answered all our questions. We started with the soft pretzel braid. It was $6 and a well sized starter for 4 adults. We each had a 2 inch piece. The cheese sauce was good and their coarse mustard was really nice. I ordered the roasted split chicken. I was told that they were going to start offering that for dinner only and for obvious reasons. It was huge for a lunch portion. It was literally half a roast chicken. It comes with two sides and I had the french fries and succotash. The chicken was done really really well. The white meat was still tender and juicy and the thigh was my favorite part. The skin could have been a little crisper but it's hardly a complaint. The fries were good and the succotash was excellent. I'll definitely be back. They'll have their own beers starting November 1. read more

Just had lunch here and nothing was bad necessary but it wasn't great. I had the Carillon Coriander Ale, which taste exactly as described but I personally would not order again. My bf orders the Carillon Porter and he said it was the best Porter he's ever had! I had the sauerkraut balls as an appetizer, which were alright but not great. For lunch I had the Reuben and my bf had the club sandwich. The Reuben had a generous portion of meat but was a bit greasy for my taste. The club was very good. The service was good and the food came out quickly. Overall, it is a neat restaurant, very time period, but I'm not sure that I would be back unless someone else was wanting to go. read more

This beer is not like anything you have ever had. At first sip, was very sour and somewhat bitter, and a bit unexpected. Maybe this is the old way of brewing beer as they did back in the day, but not something I would recommend myself. The food was average at best. Ordered the sausage platter that included two sausages and two sides. I was expecting a homemade potato chip since they were named after someone, but when they came out, they were nothing but Ruffles. My wife and I visited with another couple on a Friday evening. The place was packed and we were told it would be about 45 minutes for a table. We went to the bar to have a drink while waiting. The other reviewers who mentioned that the bar seems to be understaffed are correct. There was only one bartender who was trying to keep up with the bar patrons as well as filling drinks from the servers for seated patrons. It took several minutes to get her attention, but once we did, she served us quickly and efficiently. I had one of their house Coriander Ales, which was delicious. While we had our drinks we chatted with a volunteer who was staffing the brewing area of the pub. He talked about the 1850s era brewing process and equipment that Carillon uses to produce their house beers. He was knowledgable and friendly and did a job worthy of the best National Park Service historical interpreters. Unfortunately, they had already stopped brewing for the day by 8pm when we were there. He said it's best to arrive earlier in the evening to watch the brewing process. After about 30 or 40 minutes we were seated at a comfortable table. We shared a few appetizers, including the delicious sauerkraut balls and a sampler of cheeses and sausages. The sausages ranged from sweet to very spicy and were fantastic. I had a cup of the bier cheese soup, which was excellent. For my dinner, I had a reuben, which was good, but not outstanding. Next time I'll try the wiener schnitzel. I highly recommend trying a flight of beers to get a sampling of what's available. You get about 4 ounces of both of Carillon Brewing's house beers - the Coriander Ale and a Porter - and get to choose two others from the menu. I selected the Brew Free! or Die IPA from 21st Amendment Brewery and the Ommegang Witte from Cooperstown NY's Ommegang Brewery. Both were excellent choices! All in all it was an excellent experience and they seem to be working out many of the kinks mentioned in earlier reviews. Another bartender during busier times would be a big help but I'm looking forward to our next visit. read more

1 star for my meal being good. -4 stars for the host never calling our name because he thought we left after a hour wait, sitting at the table for 20 minutes before out drink order was taken, waiting another 15 minutes for drinks, and then waiting another 40 minutes for our food after we ordered. My wife's meal came out incorrectly twice, she just didn't eat. We had to cancel our second drink order since we didn't get them before we were done eating. Manager just made excuses. This Brewery follows an 1850's theme from the way they brew to the way they dress, also the music keeps that 1850's style with no lyrics letting you talk to friends and Family while you enjoy good beer. I've lived in Dayton all my life and have very fond memories of Carillon Park from my childhood and my children's childhood. I also love local breweries so I was excited to show a visiting friend the park and check out the restaurant. We went on a Friday afternoon and the first thing I noticed was how many elderly people were there. I'm not young, I just turned 40, but I felt distinctly out of place. But then again, it was a Friday afternoon. Anyway, we decided on a flight and latkes as a starter. I was super disappointed that they were out of the housemade ginger ale and root beer but decided to try the house made cream soda. I wasnt disappointed, especially once i added the shot of cream that came with it. As far as the beer, the Irish Red was pretty good. The Porter was - different. They were out of the coriander ale on tap so they served the cask version which may have been authentic, but it was -underwhelming. At least that's the word my friend used. I would have just said disgusting. I can't even remember the other two. The latkes were okay, but nothing amazing. Frankly, we would have ordered more food (probably not more beer) but by the time our waitress had time to check on us we had been done for twenty minutes and were just ready to leave. I gave it three stars because of the cool period ambiance and the waiter's suspenders (just something about a guy wearing a flowey cotton shirt with suspenders). And because I feel bad giving less than three stars without visiting at least twice. But to be honest, a second visit is pretty low on priority list. read more

This is a nice feature in the park, and the food is not bad. I had the hot ham and cheese sandwich, and the cheese was the best part. I'll try just pretzel and cheese next time and sit on the relatively new beer garden which is a great addition. I can't speak for anything else on the menu. All wood inside is beautiful and feels authentic. Servers all dress in period garb. The beer itself is not remarkable, and many taste the same. But next time I will try the wines and they have cider on the menu as well.
