Cozy place in the village that offers a fine dining experience but a relaxed atmosphere. My last visit to Carte Blanche was with a party of seven. While we were seated right in the middle of the place and next to the bar, we were able to hear each other talk which is a rare occurrence. Also no problem hearing our server. My Caesar salad was excellent and not overdressed and soggy like I often find around here. Others at our table had soup - I believe a bisque that night - that they raved about. I had a wonderful salmon dish and snuck a bite of filet from a friend that was cooked perfectly. The server was attentive and we never had to ask twice for anything. The only downside is that there is no parking. On a cold Saturday night, we had to park in a lot across the street and got the last spot (and possibly an illegal one). If I were to return on a busy night, I'd wait until the weather was nice again. read more

Interesting menu with mediocre quality. Carrot salad very acidic. Venison over cooked. Halibut lukewarm. Popover was highlight of the meal. Service awkward and unprofessional. Drinks should be served before you pester guests for their food order, especially in a dining room with 5 empty tables. Server kept bumping into our table as he squeezed left and right to work with his other diners. Very awkward. Please re space tables accordingly; there should never be part of a servers derrière touching a dining table. Once by accident perhaps, but this went on all through the meal. Even though our server bragged at his work as chef in past local establishments, he definitely needs some retraining. Nothing elegant about our experience. read more

Last night my husband and I ate at Carte Blanche for the first time. It was exquisite. The atmosphere was great and the service was spot on. Chris took great care of us through each course. Which brings me to the food itself. Amazing! Perfectly cooked, perfectly seasoned, and beautifully plated. I'll even admit I had to give up half way through my entree (Wagyu beef with roasted potatoes and ramp relish) as I was already stuffed. Though that didn't stop me from attempting dessert. I'm not usually a big fan of cheese cake, but again, it was great. My favorite dish of the night may be the Oricchette: the balance of pasta, seasoned pork, and white beans was a treat and I wish I could curl up on the couch with a bowl of it and a good book on a cold day. This place is just awesome. We really didn't know what to expect as we were seated on the pretty Amish-made chairs and treated to the chef's amuse bouche mini appetizer. It was fun - house smoked walleye on a tiny toast. But really tasty. I started with a Side Car. You don't see that cocktail on too many menus around here and this one was really well done. Then we moved to first course - I had the dressed oysters. So fresh! He had the Gem Salad - lettuce had to be just picked and the shaved egg yolk tasted perfect in the salad. I had the lamb chops for my entree and hubs had the wild sockeye salmon. I have to vote for my dinner being the tastier of the two but both were excellent. Very attentive and knowledgable server and the manager Chris checked in on us several times. We didn't have room for dessert but that's ok we will be back soon. Dear me I forgot about the popovers. Heaven on a plate. Just perfectly crisp on the outside and airy and eggy on the inside. YUM. So glad we have a restaurant like this in the south towns. Absolutely loved our brunch experience here. The service was fantastic and the brunch menu offered a great variety of choices. The French press coffee was a great treat as was the mimosa with freshly squeezed OJ. The freshly squeezed juice was a great added touch. We started with the toast and jam and the popovers were phenomenal! My husband got the eggs Benedict with steak and I got the ham and cheese omelette. His was the better order but both were delicious. We will definitely be back to try the breakfast burger and gnocchi tots as well as the French toast! This was our first visit and certainly won't be our last. We made a reservation for brunch, and our table was available when we arrived. The menu had a nice selection of brunch items and my husband and I both chose the eggs benedict. The food was amazing...beautiful presentation, seasoned perfectly, and great taste. This was a bit more upscale that most of the surrounding restaurants, and both the hostess and server were warm and friendly. Took friends from out of town here after the Sunday matinee at Sheas. Food was excellent, but very disappointed in the service. Waiter very unattentive, which was reflected in the tip. Unfilled water glasses, salad plates not cleared, had to wave down waiter for dessert offerings and check. This is for sure my favorite restaurant in the Village of Hamburg. The decor is great, service outstanding and if you get an outside table upstairs its a great view of the village. The staff was pleasant and accommodating, not sure if we caught the chef on an off night but our food was not up to par. Ordered Choppino which is a variety of seafood usually consistently of clams, mussels, shrimp & scallops. My dish did have seafood but unfortunately in very short supply - 3 clams, 3 mussels, 2 shrimp and 1 scallop. The rest of the dish consisted of pasta with no broth. Never had this dish with pasta ever. $32 not a good choice. My friend ordered strip steak and it came pre cut? Who pre cuts a steak in a dinner house for $32? Sorry I would not recommend it. I made a reservation for two at 6:00, when we got there at 5:55 (despite the restaurant being mostly empty) we were told that they were "getting our table ready" and that it would be a few minutes. At 6:15 they offered us the option of having a drink at the bar (in a room that had an empty table). At 6:30 the hostess escorted another couple to the empty table and sat them. We were then offered the option of just eating at the bar instead of being seated at a table. We inquired as to why the other couple was seated at the empty table when we had been waiting so long and were told it was a mistake, but then waited another 20 minutes to actually be given a table. The food was good and the bartender was apologetic that the hostess didn't seem to have a clue, but all in all it was an aggravating experience to wait 50 minutes for a table that we had a reservation for and watch other people walk in and be seated ahead of us. read more

The ambience of the restaurant is very warm, welcoming and charming. On a cold night though, the entire first floor fills with cold air when someone walks in or out of the restaurant. This will need to be resolved before the winter. The food left much to be desired. I started with the pumpkin soup which was very under seasoned. If it had more pancetta (mine literally had 1 small piece), that would help. However, without more, it desperately needed salt. It was really flavorless. My second course was the veggie pasta and that was also tasteless. And, a huge taboo--my pasta was sticking together. It wasn't even worth eating (which I didn't). My third course was the salmon. The actual salmon was good, but all of the veggies on top were bland, undercooked and the worst part, COLD! There are so many great restaurants in the Buffalo area that I would not return to this one. read more

I arranged a group brunch for 9 people at Carte Blanche on 4/9/2017 to celebrate my best friend's birthday. We arrive right at 11:30am, and part of our party was taken upstairs and seated at a long table set up for us. We were given menus and our drink orders were taken while we waited a few minutes for the rest of the group to arrive. Once we were all settled in, our waiter explained the menu to us and let us know the specials for the day. I spilt a carafe of bloody Marys with a friend. We got about 2 1/2 drinks each out of the carafe, which was a great deal. The carafe was $24, where if we had ordered individual drinks, they would have been $7 each. The carafe came with garnished glasses (celery spear, olive, and slices of cheese and salami), and the bloody Marys were perfectly spiced and delicious. For my entrée, I ordered the corned beef hash with poached eggs. The 2 eggs were perfectly poached, and the corned beef and potatoes were wonderfully crispy. I would have liked a sprinkling of salt on the eggs, but there were no salt or pepper shakers on the table. Not that big of a deal, because when eaten all together, the saltiness from the corned beef was the perfect amount to season the eggs. Other dishes ordered at the table: fresh shucked oysters on ice (very fresh and delicious), the chicken & waffle, eggs benedicts (one with smoked salmon and one with peameal bacon), and the breakfast burger. I don't think I heard a single complaint from anyone at the table. We lingered over drinks and brunch for about 2 hours. The atmosphere was lovely, not too loud or crowded, and our server was wonderful. The restaurant is beautifully decorated and light and airy. The spring sun shining through the windows was an added bonus. I definitely recommend Carte Blanche for Sunday brunch. I am so happy that Hamburg is home to this restaurant. I cannot wait until the weather gets warmer so we can dine out on the upstairs deck, or the patio below it. read more

Was very excited to try out Carte Blanche, I worked as a cook here years ago and noted much of the menu was the same (not a bad thing, I loved everything we served and prepared, and respect the use of fresh ingredients) I had heard great things about the new head chef so very excited. In addition I rarely go out on 'dates' so this was kind of a big deal for the boyfriend and I, as I had surprised him with reservations. I made sure to call ahead because I wanted outdoor seating to which I was told 'Of course, no problem'. We got there on time and our hostess promptly guided us to a table inside, I explained I would like to sit outside if anything was available, she seemed put off by this and had us wait while she checked the reservations, when she got back she asked 'where outside' (I have not been back since the remodel, I dont know, outside!) I told her the alley please, when we got outside there were no chairs at 2 open tables, a concert was going on @Palace rooftop so other patrons had grabbed chairs for out front, she asked if I wasnt to be seated inside.. I said I called ahead and would really appreciate the table I requested. After standing in the alley for about 10 minutes waiting her her to find chairs our waiter showed up with water looking dumbfounded at us standing there, I explained had forgotten to reserve the chairs with our table. Anyway, we got our chairs and our waiter was great. We had a nice time, and the music died down by the time our entrees arrived. Wildly disappointing. I ordered the bolognese, and my partner ordered the chicken parmesean. His parm crust was incredibly soggy and my bolognese was void of all flavor, essentially grease, dried meat and ziti noodles. Atmosphere was great but I definitely got the sense I was putting out the hostess for asking what I was already assured would be available and the food was again so upsetting held against my expectations for the price and food knowledge. I had really high hopes and a sentimental connection to this place so again, very disappointed, wont be returning. read more

The restaurant is beautifully decorated and even the bathrooms are gorgeous ( a big plus in my book). The owner introduced himself and gave us a little history while showing us around. Although I've had several great experiences, the most recent time eating dinner here may have been my last. My husband and I had the Tuesday night prime rib special twice this summer and raved about how delicious it was. We took my parents here for dinner this past Tuesday for the prime rib and to say it was a disappointment is an understatement. We ordered our meat medium and 2/4 were rare. I could hardly cut the meat with a steak knife it was so raw and tough. The baked potato was hard and undercooked. The only bright spot of the evening was the popover (although lower quality than I've had there previously) and the zucchini. Folks, zucchini should never be the highlight of any meal, but it's pretty much all I was able to salvage. I find this a shame because the restaurant has a nice atmosphere and is right in the heart of Hamburg village. To put the icing on the cake, my credit card was charged twice for this lackluster meal. So now I'm dealing with that. read more
