Holy smokes this pizza was amazing! We bought these to take back to our hotel for the night so it was about 20 minutes before we had the chance to eat them but I was thoroughly impressed with our meal! I appreciated that the pizza had a substantial amount of toppings. Sometimes pizzas will skimp on them and it's super disappointing but not here. The crust itself was on the thin side which I do enjoy more than those with thicker crusts, but it was also soft so you do kind of need to hold a piece and bend it into a boat shape so the front half doesn't just fall down. I'm sure leftovers would be amazing reheated in an air fryer to crisp the bottom up just a bit! Anyways, lots of toppings, perfect amount of cheese, and a thinner crust made for a dynamite pizza! The apple pie pizza was also really yummy. The crushed graham crackers were a little disappointing though as I was thinking there would be little pieces instead of the very fine teeny tiny bits sprinkled around because I couldn't even taste them. But besides that it was great! Same thin crust as the other pizza, the cream cheese mixed with the cinnamon butter made it taste like a cinnamon roll and I really loved the thin apple slices on top. Definitely worth trying! Even though the total price came to about $47 which felt a bit steep for 1 pizza and 1 dessert pizza, both mom and I still loved them both. While not something we would buy on a regular basis if we lived in town but absolutely something we would seek out for special occasions or something along those lines! If you're in the area and are looking for a great pizza place, even though this spot is a little more expensive than others, I think it's worth it. I'd definitely eat here again! read more

We were welcomed in with a friendly greeting and an informative menu overview. I had eaten at their food truck in North Bend WA but not in a restaurant. We started off splitting the delicious Northwestern salad with pear, cheese, and bacon. Fantastic combination and definitely big enough to share. We then had some wings that are awesome!! They suggested, for our first time, having plain wings with sauce on the side! I enjoyed some sauces but plain are so good too!! Our food was delivered to the table and we had quality checks which I wouldn't have expected. I had the Nona which is a killer combination. My wife tried a feature called "the Grapes of Rathdrum" and she really enjoyed it too! You can tell the chefs take pride in the food they put out. This review has to do with the way Cascadia runs their special event food truck. In my experience, they didn't keep their commitment, canceled with little notice...too late to find a replacement. No willingness to work through a solution. I simply cannot/will not do business with anyone who doesn't keep their word. It's what we do here. In idaho, If we say "we're there," we are there. So I found this food truck at the 5th Street Farmer's Market in Coeur d'Alene. I wanted to write up a review, but I couldn't find any mention of this company in Idaho, only in Washington. So I waited a week, went back for another pie and asked them where they were from. It's the same company, but they're opening up in Rathdrum Idaho. Right now they have the trailer but they'll be opening a brick and mortar store soon enough. Now that we've got THAT cleared up.... They do an applewood fired pizza oven in a TRAILER. The crust is a thin crust, not quite New York crispy but close, foldable, and has an amazing chew to it. So far I've had their pepperoni pizza and their Butcher pizza (all the meats). Both were awesome. Their red sauce is just the tomatoes with a few herbs, nothing to blow your mind but it carries the toppings rather than overpowers them. The pies are "personal" sized cut into four pieces. I'm able to eat an entire pie on my own if I'm really hungry, although my mom stole a piece of the pepperoni pie and I was find with 3/4th of the pie. The people running the trailer always seem to have a smile on their face, so I guess they enjoy working there. Great crew. My family and I turned up on Saturday evening here at Cascadia. I had heard great things about this place and was eager to try it after a long day. They were so welcoming, accommodating, and so authentic with their kindness and passion for providing an amazing meal for us. I'm gluten free, which they helped me navigate my drinks and meal. They spoke out to help us get the best deal for what we wanted and at the very end Justin tossed the pizza up in the air for my four year old son to enjoy. And the kicker of it all, Justin tossed a doughball to my son to play with. It was the highlight of our meal and it made a lifetime memory! Wood fired pizza is a variety of pizza that is unique depending on each fire based oven. The CDA Cascadia has their oven dialed in. Cascadia has a minimum of 15 different pizza varieties in addition to pizza based desserts and breadsticks. We had the Margherita, the Cascadia Margherita which were red sauce based and meat free. As much as I need the meat, I really enjoyed these. Additionally we had the Wenatchee a garlic sauce based that involved apples and bacon. Finally the butcher (their version of a meat lovers pizza). All were great pizzas. The WINGS are not to be left untried! The smoke flavor, the rub and crispness was a pleasant change. If you've watched Chef's Table on Netflix (season 1 episode 1 about Chris Bianco and Pizzeria Bianco in Phoenix), you know the best thing about Neapolitan style pizza is the divine texture of the chewy and crispy crust, hints of charcoal/salt in a few spots where the crust is perfectly singed/blackened and simple fresh ingredients and high quality cheese (often achieving the desirable chewy caramelization where pie meets crust) - Raffi's crew is closing in on perfection! We've tried several of their pies since they opened a couple of weeks ago, but the Northwestern stands out. Garlic butter sauce. Thick balsamic over arugula. Generous cheese prosciutto and pear slices. Perfectly sweet and salty. The tomato sauce on the Margherita pizza is so fresh, clean and sweet. Once again, excellent texture on the crust. Absolute perfection. The high quality, taste and perfect texture of the chewy cheese is highlighted in the simple Lombardi. Excellent! We arrived just in time for it to be ready with a friendly cashier. We order a Lolo pizza to go, which is their spin on a BBQ Chicken pizza. Here is what we got. Dry lacking ingredients, over-bearing jalapeno peppers that tasted and looked like pepperchino peppers. It was cooked soft, not crispy and the crust was good.
