    I've had Caseus on my grilled cheese radar for quite a while but going into New Haven seldom happens, and I've never run into their food truck until yesterday when it graced the parking lot of Two Roads Brewery, just about at their front door. Since we didn't want to drink on an empty stomach, it was a done deal that I'd have my first taste of the highly celebrated Caseus Grilled Cheese. A Basic Grilled Cheese will run you $5, but you can trick it out with all sorts of add-ons for a buck or two. I added bacon for $2 and hot peppers for a buck. Caseus will add on a spoon of grain mustard and some small pickles on the house if you want. Holy cheesehead was this a great sandwich ! I Crunchy and golden brown on the inside. Decadently melty-cheesy on the inside. The bacon and hot peppers really finished it off. And how good was that mustard? Full grain mustard really complemented the sandwich. Totally worth eight bucks.

    3.5 stars, rounding up for value. Very solid grilled cheese - high quality bread and cheese (this is the more panini/grilled style rather than the greasier/flattop style common at other grilled cheese restaurants). I got the soup and sandwich combo and was pleasantly surprised to find the soup had real flavor (and little chunks of onion) - it was a real soup, not just a dipping sauce. The mustard they put on the side definitely helps make the experience - I wound up spooning it over the bread, because I wanted some in ever bite. In short, this is a really nice $7 lunch. Is it earth-shattering? No. But it's an affordable good quality sandwich. Next time I'm definitely going to try adding some toppings!

    I finally received an opportunity to try the Caseus Cheese Truck last Sat. at the Wooster Square Farmers' Market. I'd seen them before at this venue, as well as downtown at lunchtime on a weekday, but hadn't been particularly hungry at these times. Last Sat. was a different story, however, given that I was headed to visit the Pez Visitors' Center in Orange, and I wasn't sure what lunch options were available in that direction. So, I decided to seize the opportunity to take an early lunch and try them out. Given that it was a cold day and that I wanted to keep things simple on my first visit, I went with the basic grilled cheese and tomato soup ($7). Luckily, the truck wasn't busy, so my order came up in under 5 min. Unlike another reviewer, I found the cheese:bread ratio pretty generous and well-balanced. The bread appeared to be artisan sourdough, and was appropriately fried, yielding a toasty exterior and a supple interior. The cheese was gooey and stretchy, just like melted cheese on a grilled cheese sandwich should be. I forget exactly which cheeses are used, but I remember that it's a three cheese blend and that gouda is involved. The flavor is creamy and savory, but isn't overly piquant, making it perfect for this type of sandwich. All of the grilled cheese sandwiches are served with a generous side of whole grain mustard, which complements the flavor of the cheese nicely. Miniature gherkins come on the side as well, but I didn't sample them as I'm not a pickle aficionado. The tomato soup was rather grainy and sharp in flavor, and wasn't my favorite rendition. While I realize that the graininess probably arises from pureeing the tomatoes, I prefer my tomato soup velvety smooth and creamy. Overall, I was pleased with the offerings of the Caseus Cheese Truck. I'd like to return sometime to try building a customized grilled cheese sandwich and try some of the toppings that are available to do so, such as pesto and possibly even pulled pork. While I understand that grilled cheese sandwiches aren't on the restaurant's main menu, I'd love to try their other offerings, as well.

    DELICIOUS!!! Grilled cheese truck at a farmer's market? Genius. The market has great bread and cheese offerings, but...no place to make your own grilled cheese, so what do you do? Go buy one at the truck for a nice snack and inspiration for the bread and a cheese you just bought. The sandwich was perfect on a Fall day at the market - the sandwich was hot and hit the spot. The bread is toasted perfectly and the cheese used was the perfect combo and amount. The pickles and mustard absolutely completes the meal. I'm not a mustard expert but I know what tastes good and the coarse mustard served with the sandwich is amazing.

    It was a rainy day and they were located on Wall and College Street. They advertised on their social media that were serving Duck on Grilled cheese. I was all in. Then when I arrived by 2p they were all sold out so I opted instead for a ham and bacon on grilled cheese. Ordered a bottle of white birch beer and spicy dill chips recommended by the Caseus guys cooking in the truck. The threw in a side of pickles and mustard. The sandwich was mouth watering. Seriously I ate it so fast. The chips and birch beer were excellent compliments. The guys who worked in the truck kinda reminded me of New York City hot dog stand workers - fast but also gruff, I almost felt forced out, even though there was no one behind me. Nevertheless they were helpful with the recommendations. Overall, since Mr. Eric H along with the awesome owner of Ordinary of New Haven, Mr. Tim Cabral I am definitely a fan, regardless of the staff. These guys are my palette's saving food grace.     After stalking the truck's location on Facebook for several weeks, I was finally able to track it down. I had the special, which had tomato, basil, balsamic reduction and, of course, lots of cheese! I really enjoyed this grilled cheese, especially the basil. My only complaint was that I wish the sandwich was bigger. I felt like I could have eaten several of these - maybe the perfect sandwich for the cheese truck challenge ;)

    Caseus Cheese Truck is your beloved Caseus...on wheels! And a much smaller menu, but as delicious as the restaurant. We had the grilled cheese, tomato soup, and kielbasa. All were delicious, local, and exceeded expectations. Now that's fresh soup.     If someone comes up to me asks me where they could find good grilled cheese. I will tell them Caseus Cheese Truck in New Haven, of course. Serving gourmet grilled cheese with an assortment of different cheeses: provolone, swiss, comte, gruyere, gouda, sharp cheddar with the option of extra add on's all packed in between buttery, browned, crisped sourdough bread. Not your budget friendly, boring, white wonder bread! I found Caseus when I came to New Haven for the Cherry Blossom festival. They were among the few food trucks in the area for the event. My-oh-my did the size of the line make you want to pass out. I waited a good 30 min for my turn to order and another 30 for my grilled cheese! If you want Caseus I suggest you see them where there isn't an event! I got the Cheese Truck Classic Grilled Cheese with the Pesto add-on. No one at this event got any pickles or mustard on the side. Outside of the event, they do include these side-on's. The grease from the bread was glossy under the hot sunlight and the brown color of the crust would give you the same sultry effect as would the pleasantly tan hotty at the beach with the washboard abs. With the rowdy crowd, I don't know what I would have done if one of them had bumped into me and knocked over my beloved grilled cheese. And for $6, it wasn't too too bad considering the variety of expensive cheese they give you. Dripping with butter and pesto as I bit into it, please if you want the ultimate fatty food. Come here!! They will make you love yourself, then hate yourself, then eventually love yourself because there is no other grilled cheese like Ca -"ZEUS"!! Almighty God of the Grilled ChEESes!

    I love this food truck. Perfectly sized portions of cheesy goodness. I recently had a black hog brewing pulled pork grilled cheese, and it was incredible. The bread was so fresh and had a nice crunch to it.

    Chicken grilled cheese with grainy mustard and cornichon pickles. Didn't like the chicken though. Wanted pulled pork but they were out.

All in all, I'd give it a 7.5/10 and take my money elsewhere.

My cousin ordered the crab cake, and I went with the Brussels sprouts and risotto Parmesan tater tots. We were really just looking for a few appetizers before the show, but everything hit the spot. The Brussels sprouts were flavorful and paired with thick savory slices of bacon, while the risotto Parmesan tater tots were crispy, cheesy, and hard to stop eating with the dipping sauce. Service was friendly, food came out quickly, and overall it was a relaxed and enjoyable experience before heading over to Yale Rep. Definitely reminded me why Harvest has been a longtime New Haven favorite.
