This review does indeed have the good and the bad. I walked in at 9:10 and was urged to take a table in the bar. The restaurant closes at 10, and I am sure the servers in the dining room were wanting to get off shift. Understandable. In the bar, I watched someone ignore me purposefully, avoiding any eye contact so she could clock off, leaving only one young lady working all the tables in the bar. She was working hard, and was actually the highlight of the dining experience. Good job,Olive! Thank you for maintaining your professionalism and cheerfulness throughout. Once I ordered a drink, it took nearly 15 minutes to show up -- the bar wasn't so busy that I understood this. The food, in this case, that triple threat brochettes, were delicious. So was the portion of salad, the bread, everything. Moral of the story - your experience can go either way when you show up in the last hour that a restaurant is open. I get this. First, table they took us too was dirty and needed cleaning. The plates already set were not clean and they only set 2 for the 4 of us. It took a long time to get the to come and clean. Waiter took our orders and I ordered Shrimp cocktail as my BD treat. Cant tell you how it was as it never came and had to remind the server to take it off the bill. I ordered prime rib, medium. I get it and you could clearly see it was rare at best, and my baked potatoe was luke warm, not even warm. I sent it back and he wasnt even gone 2 minutes and came back with it so I cut into it. RAW. Dark red meat in the middle so I sent it back again this time he said he would get new. When I got this one back I cut and said it will do. It was actually closer to Medium Rare than Medium. We had an amazing meal tonight. After a long drive, this was a wonderful way to end our day. We started with a cocktail which was wonderfully made. When we got to our table we were greeted by Jake (Jacob) who quickly answered our questions so we could make a decision. We ordered the Rib Eye Steak, medium rare, with all the fixins'. Salad arrived and was yummy and we asked Jake to delay our meal, if he could. We hate to be rushed for dinner. The steak arrived and we were eager to taste it. Wow! Brought my family from out of town here last night. When we first sat down 2 of our "clean" bowls had crumbs in them. The food came quick but the service was not very good. Ordered sautéed mushrooms and was not told they were out of mushrooms. Only after we asked, after the food was delivered were we informed that there was no more mushrooms. If I have raved about this place before, consider this a check-in. If this is my first review, then shame on me! I was introduced to this restaurant while in Redding on business about 5 years ago while visiting a Redding contractor and his agent from Portland. I haven't missed an opportunity since to dine here for lunch or dinner whenever in the area which unfortunately is less often now that I am retired. The service is impeccable: friendly, helpful, courteous and prompt. The establishment is large, busy and family friendly. But, if family atmosphere isn't to your liking tonight don't fret the bar has plenty on seatings and the same menu from the same kitchen. They serve the best prime rib dinner! IMHO you would have to drive all the way to Lawry's in LA do as well, and this is a better value with no parking issues. I order the Western cut which is advertised as 12oz but I believe it's closer to 16oz. I like medium rare to rare-never been disappointed. The salad is served with hot sourdough bread and real dairy butter. The salad for two comes in a large bowl with all the accouterments! Things captured my attention, the staff interactions with each other was super friendly, professional and respectful. The layout of the restaurant and lighting was 10/10. Meaning, quality is fresh and great, and the value of the quantity of food is very good price. Service: When we visited, I was not able to talk (medical related reasons), our waiter was so kind and patient. We had a ribeye and a chicken breast. Drank only water. $72 after tax and tip. The ribeye, king of steaks, was well-cooked (medium) but the meat was horrible quality. It was thin (well under an inch) and full of gristle. I don't understand why a steakhouse would serve such horrible steak. I fed half to my dog, who loved it. Maybe I should add back half a star on her behalf. The salad was just iceberg, carrot and cuke. Veggies were cauliflower, carrot, onion and pepper. Beans were average. Bread just a tired little loaf of white bread. The chicken breast was over cooked to the point of being a challenge to cut with a steak knife. How can a kitchen that must cook a hundred chicken breasts every night not be able to work out how to do it properly? It was edible so the dog didn't get any chicken. Service was good although mostly high school kids same as one would find at Panda Express. Ambiance was fine and place was busy on a Sunday night. The food was top notch. Melt in your mouth ribs. The meat fell off and was so delicious. I never get pork ribs because they are mostly fat not much meat. We noticed this spot off the interstate when coming through town for a conference curious if it were related to a Cattlemen's that I grew up with in Southern California. We stopped in right at opening 4pm and immediately taken back to the Cattlemen's of childhood. The atmosphere is traditional steakhouse with wood everywhere and burgundy booths, etc. There is a ton of seating as this place is very large. The staff was very very friendly. I believe our server was Carol and she was an absolute gem, so kind and warm. Our dinner and appetizers were spot on! Ordered the potatoe skins to start which were excellent but the star of that show was the fresh baked sourdough brought out. YUM!! It's our fault. We should've known better. It was our Anniversary and we decided to give Cattleman's another try after a three year hiatus and a bad last experience for our party of four. And flies. Lot's and lot's of flies. This time it was just the two of us. We made a reservation and arrived on time. Seating was quick. Our waitress, Lane, was cordial and welcoming. We were seated at a booth. Then the first fly arrived. And remained, landing on dishes, the entirety of our meal. The table was set for four, in spite of a reservation for two. The extra serve ware remained through our meal, creating a sadly crowded, chaotic table. Our iced teas arrived. My husband's looked normal, but mine looked oddly cloudy. The tea was so strong and bitter it was not fit to drink. Someone made tea. Someone steeped tea. Then steeped it longer. Then served it. With zero dilution. We ordered our meals. He ordered the 10 oz. Filet with loaded baked potato. I ordered the Rustler (boneless) Ribeye with the Rustler Spud twice baked potato. I also ordered fried shrimp. Salads were served and were crisp and fresh. He ordered Bleu Cheese, which was loaded with bleu cheese chunks. I ordered Honey Mustard. My dressing was intensely yellow and at first sample it was apparent why. The dressing was made with common yellow mustard. Ballpark mustard. The dressing was way off. Our steaks were delivered. My shrimp did not arrive. When Lane checked in on us I asked for my shrimp. She said she forgot to turn the order in and she'd get that started. Ranch Beans were to accompany our meal. They never arrived. My husbands steak was perfection, he said. Cooked precisely as he ordered. His baked potato was just as good. My steak was served with crispy onions on top. It was cooked just as I had asked. The quality of this steak was fair, at best. The cap, which I find to be the most desirable portion, was riddled with gristle. At first bite, I'm crunching kosher salt grains. Big ones. They are literally in every bite. I consumed about half the cap, and gave up. The potato was okay. It was very salty also. Most of my meal was inedible. The shrimp arrived. They were huge and looked great. I asked for tartar sauce and was told they don't offer tartar sauce. Two of the five shrimp were consumed with no dipping sauce. We do not send food back. Sadly, it's just too mean a world we live in and we don't do it. At the end of the meal, I explained to Lane my meal experience. She apologized and returned with our check on which about half had been deducted. $51.00. I appreciate what they did in regard to covering the cost of their errors. The $51 cannot possibly cover ruining a 20th Anniversary meal. Not only has the nasty fly problem persisted, but the personnel are flubbing the most BASIC of tasks. Make the tea correctly. Do not drown the food in coarse salt. Find a fly solution.
