THE MEAT: This was the most tender, juicy, and flavorful meat i have ever had. Just think of pulled pork, but its already as soft and more juicy before shredding it. THE FAT: there is a lot of melted fat all over this head. It is absolutely amazing although it is a lot. It feels like there is oil or butter just melted onto the meat. I had to rake a reasonable amount of fat off but, doesnt everybody do that with their steaks anyway? Dont let it bother you. THE SKIN: Oh yeah. This was easily the best part. All were okay - except I would recommend you skip the porchetta as there was a third of the roll that had extremely unpleasant stringy jerky texture to it that was not good to eat. I ate the sweet potato purée underneath it and picked around the edible portions. The tuna nacho app came highly recommended and I did appreciate the flavor and the spice kick it had. The steak frites were about what you'd expect and so was the shrimp ceviche. All three of us got the banana trifle to go and I urge you to not skip this. Bland, overpriced food, and deceptive marketing. We initially walked by it taking note of the happy hour sign, which promised $7 drinks. After exploring the area a bit more, and doing some shopping we decided to walk in on our way back. Before being seated, we confirmed with the gentleman at the door that happy hour was indeed in effect. We asked the waitress as well who said she'd double check before bringing us the drinks, but brought the drinks without checking. As the drinks were brought out to us, we were told that happy hour starts at 3pm, and since we got there at 2:41pm, we didn't qualify for it. My food (TX Chili) was pretty bland for what is expect from real chili, it was mainly just a bunch of ground beef. The cornbread was dry. $17 was definitely a steep tag for this starter dish. My wife's Crispy Cauliflower starter tasted better, but similarly overpriced for a starter dish. Wonderful modern and classy restaurant in downtown Dallas! From the moment you walk in, you feel like a special guest by the way staff greets you waits on you immediately with great attention. We ordered a few appetizers to start and they were delicious. My favorite was the pimento cheese toast. It was on a crispy piece of sourdough bread, with melted pimento cheese, pickled peppers, arugula on top. The flavors were bold and blended perfectly. I could have eaten several loaves of that bread. The smoked carrot hummus was also very good. The chile peanuts and crème fraiche on top of the sourdough added a crunch and smoothness to your bite. As my entree, I ordered the Farmers Filet. It was wonderfully cooked, perfectly medium and so tender it fell apart as you cut it! The sauce on top was almost a gravy that was subtle enough to still have the flavor of the filet shine through. The shallot potato rosti under the filet was delicious too! It was crunchy on the outside, maybe a bit burnt, but the inside was soft and seasoned very well. A very delicious and filling dish that I couldn't get enough of. We also ordered the popcorn sundae for dessert. It was delicious and surprising in flavor. The blended cherry sauce was perfectly complimentary to the brownie pieces and the caramel popcorn mixed throughout gave every bite a fun salty crunch to balance the sweetness. I cannot believe I have not reviewed this place before! Having been here several times, I can say this is an absolute favorite. Being Italian, it's hard to find a place that does fresh pasta justice. I can name on one hand the places in DFW. The fact they make Strozzapreti fresh just makes my heart sing. Normally, I can only get this in Italy. So this is a dish that reminds me of my time there. It's a chewy pasta called "priest choker" from Emiglia-Romagna served with ricotta and wild mushrooms, but my favorite additions are the grana padano cheese and a poached egg that allows the yolk to break open and create this creamy sauce. Highly recommend. My SO absolutely loves their CBD burger and fries. He is a burger purist, and this is easily one of his favorites in DFW. His love of their Turkey Club is one that probably rivals his love for the burger. I adore craft cocktails, especially anything that has whiskey as the base alcohol. The Bad Luck Piggy is rye whiskey based old fashioned with a hint of bacon. Not overwhelming on the bacon flavor but enough to give a hint. Amoxicillin, a scotch based drink, is a fantastic drink to have especially during the cold months. It's just a nice, soothing drink with the lemon and ginger. I've never wanted to call my credit card company and request a charge back until today. Of course I won't do that to a business but this is how strongly I feel about my experience tonight. I was disappointed with my meal, I left 1/4 of it on the plate and no one even asked if how I was enjoying my meal or if there was a problem. I was never checked on. My cocktail was made incorrectly and it was a standard drink. When I asked about the way it was made the server offered to get it made the proper way but then later came by and told me the bartender was too busy to make it and that he had to make it himself. I took a desert to go because the service was so poor I just wanted to leave and they packed my cake in the same container as the ice cream. Threw that out when I got to the hotel. This year, for my darling's b-day, I decided to go all out and tick something off of our Dallas Bucket List, Berkshire Pig Head Carnitas from CBD Provisions, located inside the stunning Joule Hotel! Bae and I are both taco fanatics and were both so eager to see if the Pig Head lived up to the hype and guess what, CBD did not disappoint!! Made a reservation via Open Table for dinner, noting that it was for my BF's bday and that we were coming specifically for the Pig Head. I even called a few days in advance to make sure they got the note, which they did. Then they called me the day before to RE-re-confirm that we were getting the Pig Head, which I honestly appreciated. I like knowing when the places I go to are paying attention. We showed up right on time and were immediately seated. I was surprised when the hostess sat us at a teeny-tiny table for two in the corner, next to the swinging door into the kitchen. I mean, if there could be a "worst seat in the house" this was it. The table didn't even look big enough for a pig head to fit on. I was legit shocked! Especially because I had specified it was for a special occasion. I was looking over my shoulder, not gonna lie, trying to find someone to complain to, when our waitress came up behind me. I guess my thoughts were displayed pretty clearly on face, because before I could say anything, she tells me that she knows we are here to celebrate and get the pig head, she isn't sure why we were sat there and she will be moving us to a better table right now. This is where the one and only problem of the evening ended. Our new seats were much better, a bigger table with a good view of the Giant Eyeball across the street through the all glass storefront. Our waitress (God, I wish I could remember her name!! Was it Jennifer or maybe Jenna? She was pretty with a blonde ponytail and glasses) was a freaking angel and honestly made our experience! We still talk about how amazing the service she provided was whenever we tell anyone about CBD Provisions. After seating us at our new table, she brought two glasses of champagne, on the house, so we could toast Jon G.'s bday! What a lovely and much appreciated gesture! She was super knowledgeable and helpful when it came to the menu and was so dang friendly and polite. We decided on the Charred Octopus for the appetizer. Bae was a little apprehensive about octopus, having never had it before. But our waitress reassured him and offered up other suggestions in case he didn't like it. But after some coaxing, he became determined to try the octopus! Imagine our surprise when she brings out a slice of the pimento cheese toast alongside the charred octopus. She mentions that we won't be charged for it, as it was her gift to Jon G., just in case the octopus didn't work out. How kind and thoughtful! Both dishes were absolutely delicious! The texture of the octopus was perfection. Tender with a delicate chew, not rubbery in any way shape or form. The Marcona almonds, leeks and fresh herbs were perfect with it, I honestly could have eaten the entire plate to myself. The Pimento Cheese Toast was so flavorful and had a lovely array of textures! The greens and radishes brought a nice freshness, and the crispy onions on top were the perfect crunch. Would get either of these again (and again and again!)! Wait for the Berkshire Pig Head was not nearly as long as we had thought and the display is just as fantastic as you'd expect! Our waitress explained the sides that came with it and best places to eat on the head. The texture of the skin was fabulous, sooo crispy and crunchy. The mojo sauces and pickled onions were delightful and were perfectly matched with the tender, soft and rich cabeza meat. Absolutely divine! We definitely had leftovers, so if you intend on polishing this off in one sitting, I suggest having at least 4 people. We literally got another full meal out of our leftovers. Lex was super helpful taking care of the order and the manager gave us great tips on how to enjoy at home. This has been by far the longest wait. We didn't get a server for our drinks until I had to get up and ask for one. It took them probably another 15 min. Just to get them to us. The food tasted good except my fish was raw and the side dish I asked for did not come at all. The restaurant was empty when we got there, all the servers were just chit chatting. This review is for their brunch and not dinner. We came Sunday afternoon for brunch and it was a disappointment. I wished I had taken a picture of the omelette that we had ordered. It looked like something my 7 year old cousin made. Taste wise wasn't great either. I had gotten the brisket with chips but they put the tortilla chip underneath the my plate so it soaked up all juice. It ended up being really soggy and I couldn't even finish it.
