    Is this place still heavily dependent on to-go orders? and if so, is the wait time still an hour to an hour and a half to get your food whether its to-go or dine-in?

    They do a lot of togo business because they only have a handful of tables. You are better off ordering togo if you don't want to wait.

    I order on the phone then walk inside to pick it up on the counter. They're masked up and have hand sanitizers on the table.

There are self-served condiments table on the right side of the pick up window. You can load as much condiments as you like. They have pickled mustard greens, pickled long beans, bamboo shoots, roasted soy bean, roasted peanuts, scallions, cilantro, and hot sauces. - A1 Guilin Rice Noodle: the noodle was very soft (but a bit too soft for me). The meat pieces were tender and good. The crackling pork pieces were super crispy and gave a nice texture to the dish. - A10 Braised Pork Dry Tossed Noodle: the curly noodle was firmer type than A1 and had a bit of chew (which was similar to instant noodle) and I prefer this. The braised pork was flavorful and delicious! - B11 Preserved Duck Egg with Tofu: the tofu was soft and was a good combo with the preserved duck egg. The egg itself didn't have very strong taste so it was very pleasant. The spicy sauce was mild for me but the overall dish was good. - C1 Old Gui Lin Boba Milk Tea (less sugar): good and milky. The less sugar version was the perfect sweetness for us. The boba pieces were chewy and good.

I had the Beef Brisket Rice Noodle Soup. The meat isn't the type of meat I like (lots of tendon/cartilage), but it has good flavor. I really did not like the pork in the Pork Rib Rice Noodle Soup. It was super tough! I did enjoy the flavor of the soups though. It seemed like the broth was high fat content. I really liked the self-serve condiment bar. This was one of the highlights for me. I'll be a returning customer.

My wife got the Aka Red Tonkotsu ramen, the broth was definitely lighter, and the spice level was abut the same as the one I got. The portions were generous, we were not able to finish our ramens unfortunately. But I must say, for the price, it's worth it. I would like to go back and try their tan tan men.

We went by on a Sunday around 12:30 and were able to join the yelp wait list as we parked and get a table for 3 easily. Fair warning if you are a larger group and come at peak times, join the waitlist early or be ready to wait a bit! The interior is bright, lively with a ton of bright light and decorations. There is a good amt of seating but let me tell you, it fills up FAST. The menu is EXPANSIVE with tons of options for omnivores and vegetarians alike. I will admit the impossible siu mai grabbed my attention pretty fast because I had never seen a vegetarian siu mai before sooo we had to order it. My friends shared the pork xlbs and we got the garlic green beans and the garlic noodles to share as well!
