Out of the many food carts at Magnolia, this one stood out. The different flavor profiles made it difficult to decide which sandwich to choose. I ended up grabbing A Happy Couple. For $6.50 I got half a Wacoan and a side of watermelon. The grilled cheese was great. My favorite part was the delicious bread. (If you serve me cheese or bread I'm happy. Put them together and I'm dang pleased!) The food cart lost one star on the watermelon side. It's a small dish of watermelon with mint mixed in. For $3 I was unimpressed. It didn't bother me though; the sandwich more than made up for it. read more

I don't know how to write a long review to simply say that it was the best grilled cheese I've ever had. IT WAS THE BEST GRILLED CHEESE I EVER HAD. I ordered the Wacoan and was apprehensive because I wasn't sure about the horseradish cheddar, but it was delicious. I spent a few hours in the market and this was exactly what I needed. This is my favorite food truck located at the Magnolia Silos! Maybe I'm just a huge fan of grilled cheese, but I love the floating of their sandwiches and the tomato soup is deeeeelicious!! It's so nice and warm and I always want more. The food truck itself is very homey and that makes it visually appealing. Makes you want to find out what they make! This food truck sat behind the Magnolia Market (I love Fixer Upper). Had the rosemary Mr. T (lemony rosemary and white cheddar) and it was heavenly!!! We ate one one of the many benches near the field. Due to the small portion I'd consider it expensive, but it's worth it! read more

The gouda grilled cheese was to die for. My husband and I shared the sandwich. I went with the grilled cheese and mac n cheese combo. The only reason I didn't give them a 5-star is because the mac n cheese was pretty dry. I typically like my mac n cheese saucy. Otherwise, the sandwich was great and we all devoured them. The combos were reasonably priced ranging from $10-$12. read more

Wow! I stumbled upon Cheddar Box while visiting Magnolia Market (where their food truck is parked). Every. single. item. was impressively delicious. I highly recommend their Uncle Rico mac and cheese with brisket in it. The flavors in each bite are rich and savory. This is an award-winning dish. The other thing that I absolutely loved was their tomato basil soup. Chunky. Tomato-y. And they managed to sneak butternut squash in there too! Dipping my grilled cheese sandwich into this soup was so good. I'll definitely be back next time I'm in the area! read more

Waited in line for 15 min and then another 10 for order to arrive. I assumed the line meant it was going to be a great grilled cheese sandwich and tomato soup. Boy was I wrong. The amount of cheese was the equivalent of the amount of mayo I'd put on a sandwich. It was pathetic honestly. My friend ordered tomato soup and I was looking forward to sharing it w/her as it was a chilly day. I looked at the color and wondered if they forgot to add heavy cream because it looked like marinara sauce. And guess what? It tasted like marinara sauce and an average one at that. Man oh man, was this place disappointing. 15 bucks for white bread and crappy red sauce disguised as soup. We deserved better. read more

Not worth trying any of the food. Below average! I tried "the boss" grilled cheese sandwich, the Mac daddy (Mac and cheese), and tomato basil soup. The soup wasn't a soup, for it was very thick And not much flavor. The Mac cheese was a lackluster, salty and the roux was too grainy and lacked flavor. I expected better for the price and the hype of the location. Very small portions as well. read more

Visited the magnolia Market and The Cheddar Box was there, had the brisket make and cheese with jalapeño's, needed more jalapeños. Girlfriend had the bacon, Gouda and basil grill cheese. Excellent. Added a cup of tomato basil soup that tasted like tomato sauce. Didn't finish it, to sweet and honestly tastes like it should have been served over pasta. read more

Do not take your children here. Mac and cheese was super salty, didn't give my kid apple slices as was ordered and on menu - I got a lame "oh I put in the adult size" response. Their most "plain Jane" Mac and cheese is as pictured, kids wouldn't eat it.... fabulous..... and ya adults couldn't eat it because, again, super super salty. read more

This was one of the food trucks at magnolia. There were multiple awesome looking sandwiches on the menu. The one I got did not disappoint. Awesome sourdough bread, tasty cheese, perfect avocado. I got the mac&cheese side. The grilled cheese and mac&cheese combo was on the menu. It was good but the Mac & cheese wasn't anywhere near as good as the grilled cheese. It looked like it had a lot of seasoning but it was not fabulous. I don't know what the seasoning was but it was a bit much without having that wonderful of a taste. It is difficult to describe. It was just average. I thought it was going to be amazing so I had saved it to eat after my grilled cheese with the "save the best for last" attitude. All in all I would totally go back but i would skip the Mac & cheese side. read more

I took my out of town parents to Magnolia Market at the Silos, and we stopped for a bite to eat at the Cheddar Box food truck. Ordering was a breeze, very friendly and helpful. There was a bit of a wait though, but so worth it when the food was ready. Our order was labeled with my name( off of my credit card) and what I was wearing, great attention to detail. If you're at the silos and hungry, just head over to the cheddar box. I'm sure the other food trucks there are good but if you want unique comfort food, you won't be disappointed in anything that you can order from the cheddar box. My wife and I are big fans of guacamole and ordered "guac this way." I love sandwiches and if are in the mood for a sandwich, this will hit all of the right spots. The cheese is melted and provides the added salty flavor with the stretchy texture you want from a grilled cheese sandwich. The protein is flavorful and moist. Unlike some places that add dried meat, the meat is tender and couple that with the melted cheese, you will get a flavorful bite as you scarf down your sandwich. The add ons compliment the sandwich and don't overpower it. So the guac on my sandwich elevated my sandwich to a different level where it's not just meat and cheese ( even though they could get away with it). So I highly recommend ordering one of their unique sandwiches to help satisfy your hunger. read more

Brazos Valley Cheese is Waco's local Cheesery. Cheddar Box makes every entree using the local cheese and it's evident that these two quality companies have found a match that is unsurpassable. I like the uncle rico Mac and cheese and the Wacoan grilled cheese. Wash it down with lemonade and you just ate at Waco's hometown local goods home run. When a cheddar box is closed, shoot over to Mac house for the same menu items on franklin ave. read more

Grilled cheese isn't something I typically order because it won't fill me up and I feel like I'm paying for more than I'm getting but this place invalidates both of those reasons! I am absolutely in love with Cheddar Box. It was one of the first places I visited in Waco, and I can't stop coming back! Today I ordered the Guac This Way, a tortilla with pulled pork, guacamole, pico, and pepper jack cheese. It was delicious, and they have a discount for locals on Wednesdays so it was only $5! Everyone who works here is friendly, and their truck (technically a container I guess) is the cutest! read more

Cheddar Box is a really cute food truck/farmer's market booth. I'm surprised that the line is always so long for these fancy cheese dishes, but people (including me) love their cheese so I can understand. I ordered the true grit menu special while I was at the farmer's market and would say it was pretty average. I subbed out the pepper jack cheese for gouda because I'm not a fan of spicy, but found it difficult to distinguish between the gouda and whatever the other cheese was on there. They basically put some cheese on both sides of a large scoop of grits and pan fry it to hold it all together, which took about 10 minutes. It ended up being really salty with the grits seasoning and the cheese all together. I would have preferred the cheese be mixed in to the grits instead of just being so heavily on the top and bottom because the cheese began to harden and it was difficult to cut into my food with a plastic fork. They definitely could have been more generous with the pico and avo toppings because that would have help cut some of the salty flavor. read more

We tried the boss, the jam and the big Jim. If you. Love cheese, prepare for well prepared quality cheeses. The jam was my favorite. It was well balanced and exploded with flavor. The big Jim was mac and cheese (bacon, Gouda and chives). Highly recommend you try this place but definitely in moderation! read more

We went to the food truck in the Silos. The ladies working were friendly and helpful in making a decision. We got the quesadilla-like selection (Guac this way) with pork, guac, cheese, and salsa. It was yummy! The Wacoan was described as a more traditional grilled cheese that I think I might have preferred but my husband picked what we had and he really enjoyed it. It's a great choice at the Silos and I'm glad we tried it! read more

Yum. I had the Wacoan (aged white cheddar + horseradish pecan cheddar on sourdough). Very simple and very good. Even better was the tomato basil soup with roasted butternut squash. So rich and chunky and delicious, it could be poured over pasta! The absolute best, however, was my MAC DADDY. (Pretty sure they put their mac and cheese on the grill!) I ordered a cup of Mr. T (lemony Rosemary & white cheddar) to-go and had it for dinner later that evening. Sooooo delicious and creamy! The lemon really came through. Great "food truck" in a prime location. I say it in quotes because it's more of a trailer. Either way, the food was top notch. I didn't try there famous grilled cheese but i did go for their "Notorious P.I.G." D-licious! Smoked sausage, pear, sage & sharp cheddar. Only complaint, it wasn't enough, about 1.5-2 cups worth of Mac and cheese. It's a nice midday snack or light lunch but for the price, we'll worth it. Definitely worth it. Give it a shot. This place is so charming and their ice cream is so delicious, I will always return whenever I come back to Waco. I chose a small scoop and that was the perfect amount. While visiting Texas, I had to choose the Brown Butter TX pecan flavor. Having just said that the small was the perfect size, the next time I go back I will probably double up so that I can try more flavors since I don't get there that often. After we got our ice cream we did walk next door to the coffee shop which instantly made me wish I were in college at Baylor because what a cool yard to sit and gather with friends, study, or catch a show!
