When we arrived, there was a line almost out the door, which I interpreted to be a good sign. I was told the thing to order on the menu was the. Baja fish, which I had in a burrito form. The fish is battered and made to order so it is hot and crispy and full of flavor. The portion was huge, and this would be my stop on my way back to Denver from the mountains every time. The atmosphere is casual, similar to a chipotle, and because of how popular this spot is, the restaurant can be a little crowded or noisy, which is not a negative just a description. Since there are a lot more options I feel like it's up to you the customer on how good your burrito turns out. You usually can't go wrong with burritos/tacos, and Chimayo Grill serves perhaps the best Baja fish burritos you can find in the state. When you go to order, they will freshly deep fry your fish as you're building your burrito. While this means you have to wait for your food to cook, it is counterbalanced by the breakneck burrito building speed of the staff behind the counter! Moreover, they don't give you a scanty amount of fish either; they usually give 2-3 fillets per burrito. My only minor complaint is that they charge extra for sour cream, which is not usually something that is up-charged at most Mexican restaurants. read more

You can do a salad or quesadilla too. The menu options make it easy to find what you want, and the burritos are really stuffed to the max! The baja fish and shrimp were seasoned and fried nicely, and doesn't get completely lost in whatever sauces and toppings you add. Speaking of sauces, try the white sauce. We ordered takeout burritos from the Chimayo Baja in Silverthorne Blue Bird Market, on previous visits we were disappointed and noted that the menu was severely lacking in choices and overpriced compared to the other location in Dillon but this time was really bad and I can't see going back anytime soon. First.. the burritos look big but are 95% white rice and very very little of anything else. And they don't have nearly the choices here that the Dillon location has such as refried beans and several others, same name not same food. I was trying to choke down all of the rice in this burrito but couldn't taste anything else but rice, everyone in our group of six had the same issue with the rice overload and even the fish burrito was just chunks of fried breading lost in tons of undercooked white rice. The guacamole had way too much lime juice and was bitter. I would be fine with a smaller looking burrito with quality ingredients rather than a junk bomb of rice and cheap fillers. read more

Visiting for a conference, we were on the lookout for a place with vegan and gf options. We saw the awesome reviews and decided this was the spot! It is very rustic and Colorado-ish decor. The kitchen is open, so you can see what is happening in there, which is good for the public... can be bad if you aren't keeping up with the cleaning. The kitchen has stuff all over the floor for some reason. The setup is build your own, similar to chipotle ordering. Which was a little overwhelming with all of the delicious options. I settled on carnitas tacos, we also got some chips and queso with pico. My friend, who is vegan ordered a vegan taco salad. I love how fresh the tortillas are! The most delicious corn tortillas! This will be my last meal at Chimayo. Manager refused to complete my order after I had paid - and was then tried to use covid protocols as an excuse to not complete my order. Summit county local here - used to absolutely love this place but it has gone very far south in the past six months. The 'manager'/girl bossing everyone around was not only extremely rude but flat out refused to give me my entire order. I ordered a chicken quesadilla and chips and queso. I was extremely polite (I know things are hard for small businesses during covid-19) "yes, ma'am" "no, ma'am." "Yes, please," "thank you very much!" And even tipped 15% to entitled 'manager'. Here's what happened: I got pushed through the line quickly - my box of chips and queso was up but I was still waiting on my quesadilla (which only had chicken on half btw). I was asked to pay and then was asked to wait 6 week away. I told the manager that the guy next to me was my roommate (we came into the store together) and that I still hadn't gotten to tell them what I wanted with my quesadilla (pico and fresh jalapeños and chimayo sauce). The manager got enraged that I spoke back to her and immediately went unhelpful. She refused everything I said and refused to give me pico, jalapeños or sauce - saying if I wanted them I would have to go back through the line and pay for them. Now, for a place that advertises 'build to order entrees' I would assume I could, well, build my order. Charge a couple extra bucks for premium items - I get that. But I spent $20 here today and couldn't get some pico and jalapenos with a QUESADILLA?? A $10 quesadilla only includes cheese and meat? That doesn't seem like a built to order entree to me - and is contrary to every other experience I've had here; but okay? I've eaten at this place probably a hundred times and never had an issue until this woman started working there. Always rude. Always a bad mood despite trying to be polite. This is my second bad experience with her and I'm done. I get that covid is stressful for restaurants - but using 'protocols' as an excuse to give terrible service and bully customers is a sure fire way to make sure I spend my money elsewhere. I get it, be safe - but we didn't violate any order and we complied with everything the woman said; but, she refused to listen to me or acknowledge me after she told me to get behind the line WHEN I HADN'T EVEN RECEIVED ALL OF MY FOOD YET. Not to mention the lady in line with us pulled her mask off for the entire time she was in line and was sticking both her debit card AND her fingers in her mouth - both of which the manager handled and then (without changing gloves) handled food and drinks.
