Their truffle pasta is hands-down one of the most delicious meals I have ever tasted. My husband and I have been using it as a standard of excellence we hold our other pasta dishes to now. Granted, there are a lot of other decadent and enticing items here: the brick oven bread and chipotle honey butter, or perhaps the chocolate desserts as an example. But that truffle pasta. So good. I could go on and on and on, although the menu itself doesn't lie. Every thing advertised will be as amazing as it sounds. This one star is for the woman owner only. The food and service was not good. The woman owner she's maybe 45-50ish. Complained because I had a service dog. She said the dog was being disruptive and acting like a pet rather than a service animal. Seriously a very rude woman. I know people like this and they treat people bad so I can't imagine how she treats employees. If you work there don't let someone treat you bad. No job is worth staying silent. As a local, I've eaten here many times over the years and can say that it is always delicious! Service is always fast and friendly and there are so many tummy options on the menu. We were in Durango this week with friends and decided on Chimayo to celebrate my husband's birthday. We got there when it opened at 5pm and asked for one of the round booths. The hostess was a little frazzled and said she couldn't seat us there because of all the reservations. Luckily, a server came up and told her to go ahead and seat us at the last round booth and they could figure out the rest later. The server's name was Sydney, and she actually took care of waiting on us. She was awesome!! Our friends ordered wine, a Margarita and a pizza to share. My husband ordered the Gourmet Mac and Cheese with bacon. I had a summer special, the Palisade Peach Salad with chicken. Every one of us loved out dinners. The only reason I didn't give a 5 star rating was the portion of the salad. It was on an 8" plate and looked more like a side salad. It was $15 and the added chicken was $6!! Certainly not Worth a $21. But other than that, it was terrific. The restaurant interior is really gorgeous and very different. Even with an open kitchen it wasn't loud. After getting waitlisted at another restaurant we stopped by Chimayo and the menu did not disappoint! The mixologists were very knowledgeable of all cocktails and the best part was the menu. We had the kafta (Mediterranean style dish) and the margherita pizza. As a food critic looking for the best marg pizzas I have to give praise to Chimayo. We enjoyed the Elote (fresh corn with the requisite crema, cheese and lime), a margarita pizza with Hatch chiles, and a Chimayo salad with salmon. The salmon was cooked perfectly. I wasn't a huge fan of the cornbread crumbles, thought they could have been baked a bit longer to give more bite. Our server was very professional and helpful. Chumayo Stone Fired Kitchen is amazing. We were greeted by the owner and chef's mother who is ever so charming and gracious. This is not your normal 'mom n pop' place. This is a creative fine dining experience. The wait staff (Ashley) was warm friendly and helpful in explaining the menu options. The food was beyond good. We've been gone from home 2 1/2 weeks and this meal was the perfect way to top off the trip. The Chile Poblano was to die for and the French Onion Soup perfect. read more

We have eaten here a few times and it is always very satisfying. I love the chimayo house salad! the "small plates" fish tacos. Nothing small about it, flavor or size. You get 2 fish tacos, rice and beans, very filling. They have fresh baked focaccia bread, cornbread, guacamole and bacon brussel sprouts, yum. They also have pizza and other main dishes that sound wonderful. Ther menu has a Mexican fusion with many other interesting twist. I will be back to try more. read more

The French onion soup gets an A+, it was a cold overcast day, and the onion soup was delightful! My husband enjoyed the southwest chicken soup as well. We split a sandwich, and that was plenty of food. I thought the steak sandwich lacked flavor, but everything was cooked well. It needed some salt or a marinade or something. My sangria was the best sangria I have ever had! The restaurant decor is really nice, and there are two big fire ovens in the back. I think it is worth a stop for lunch. read more

Oh my gosh this place is AMAZING My mom and I shared the seasonal peach salad, the guacamole and the elote special and all three were absolutely incredible. Delicious flavors, beautifully presented and just so yummy we couldn't get enough. Our server R.J. was the best. Such a friendly guy, provided excellent service (5 stars to him as well!) very relatable and gave a great suggestion to try the peach pie - which we did - and which was absolutely delicious. In a word, average. We were excited to try Chimayo for the first time with our out-of-town guests. We'd walked by many times and thought how pretty it looked, etc. Got a nice table by the front window. Our server was extremely mediocre, lacked any personality or attempt to engage us beyond "what can I get you?". Of the four meals ordered at our table, two were the beef medallions meals which were very much enjoyed. And two were the two different fish entrees. One was very good and one was quite disappointing. The snapper was served skin on and up so that the sauce (providing the main flavor of the dish) was spooned on top of the fish skin. Maybe some people like the fishy taste of the skin but I don't. In fact it took me the first few bites to realize why I wasn't enjoying my meal. Once I realized the skin was left on, I scraped it off but consequently also losing all the sauce too. A trade off to be sure, but at least I could now eat my $40 meal. At the end of the meal when our server asked how everything was I asked if that dish is always served skin-on (since the menu made no mention of it and my dinner guest who had the salmon did not have the skin on her fish) and he said the chef/kitchen "must have overlooked it". Huh? So was it supposed to be that way or did they screw it up? He said the chef said sometimes it's served that way and sometimes it isn't. Weird. The ambivalence and lack of empathy was disappointing. Enough so that I can't really see us going back...not at that price and with so many other choices in Durango. Oh well...you win some, you lose some.... read more

Had a lovely dinner here tonight on a visit to Durango. We made a reservation as it was Friday night and that was smart. When we arrived, we were seated promptly and our server came by shortly. We had perused the menu ahead of time so we knew what we wanted to order. We started with the elote..corn and cheese appetizer. Very fresh and filling. Other apps included a corn bread and a queso..both sounded yummy. We each had the chili relleno. It came with a tasty slaw on the side and was served with a small bit of rice and beans. It had an amazingly crispy crust and a sauce that had a little heat but not too bad. This one is stuffed where veggies...mainly corn...and cheese. We both though that it could have used more cheese but we really enjoyed it. The atmosphere is nice. I thought it was pricey for what is is...dinner for two with one drink each and no dessert was over $100. Still, we did enjoy the meal. And our server was perfect....she checked on us but was unobtrusive..seemed to show up when we needed her but otherwise did not bother us. A lovely evening. read more

I really wish I could recommend this place because past visits have been great ( eclectic menu, tasty food in a very nicely decor and a hip vibe) but twice now I have faced lights off and a locked door in spite of a website that clearly states a closing time of 9 :00. Last evening, arriving @ 8:17 I saw many people seated at the bar and diners obviously eating. And once again the lights were on and the door was locked!!We are a tourist town, it is ski season and a nice crowd were walking along the sidewalks. But once again I faced a locked door. I had several guests in tow and they were eager to dine here but appalled at such a poor experience. I totally get that if the business has slowed for the evening the kitchen workers are sent home. If indeed this is common the least a restaurant could do would be to post kitchen hours fortunately there were several other great restaurants within walking distance and we eventually did enjoy a fine meal. read more

I had the flat iron stake cooked Medium and it came to me like it should have, Medium. She had the Samon chowder and lived it. They closed at 9 and we stayed till 930 but we were welcomed to stay. We were traveling back home through Durango and lunchtime was beckoning. Did the usual Yelp search and pulled onto Main Street. As we trolled down the street we saw this place and were intrigued. A quick lookup and we decided on this place. We were greeted by a friendly young woman who took us to our seats which bordered the outdoor patio. Perfect start! Our waiter continued the feel of the place. It was all good. My wife ordered the chopped salad with bistro steak. My wife liked it but noted that there was something about the greens that was a bit bitter - 5 out of 10. Dad ordered the Chimayo Huevos. He said it had good flavor but the tortilla was a bit hard. I had the Prime Rib French Dip. Good but not special. 8 out of 10 on that. So, in the end, the food is what brought this a notch down. Service was good and decor was a mix of old and new - very nice.
