We were wandering around downtown Durango late Tuesday morning looking for lunch and quickly realized many places are closed on Tuesdays and Wednesdays during the mid-April off-season. Thankfully, we came across Carver Brewing Co. and were happy to see it open. They offer a great variety of local beers, including options to take some to go. We tried the Double IPA and the Hazy--both were delicious. They also have wine and mimosas available if beer isn't your thing. Bo (or Beau) was our bartender and truly made the experience. He was knowledgeable, friendly, and had a genuine smile the entire time. His energy was infectious and really brightened the atmosphere. Definitely a must-stop when passing through Durango. read more

This is a must visit in downtown Durango! Super walkable and plentiful street prkg make this spot easily accessible! Bar staff were super friendly w/fast service! We stopped into Carver's for dinner while out exploring the downtown area. This is a solid stop for larger groups that will likely not all agree on what they are in the mood to eat. Carver's has you covered with options. And, despite being a Brewery, they offered wine and cocktails - thank you! Our server was very patient (thank you, again as we had a large party and several young ones who are quite the picky eaters!). As you might imagine, we ordered a variety of food and everyone left happy. No complaints, no barely touched food, no whining. Carver's FTW. read more

We had a great time in this brewery, enjoyed very much the Green Chile Chicken Pasta even if mine came with almost no chicken or maybe no chicken but the flavor and seasonings were spectacular and I would go back just for the same. We were seated in a basement like place and when I asked about the patio it turned out it was reserved for a private party Beer was good, nothing to write home about but traditional from a brewery took one for the lack of protein Can't say anything bad about the service, she did very well read more

We came here on a NYE day time and the place was PACKED. we opted to sit at the bar. The bartenders were amazing and very friendly despite being super busy. My band, RELAAY, was recently on tour and had a show in Durango. We walked along Main Street, looking for a restaurant with several options, and ended up at Carver Brewing Co. It was a Wednesday night around 7 p.m., and the place was quite busy. Although our server was responsible for many tables, he did a great job welcoming us, checking in throughout our meal, and making sure we had everything we needed. I ordered a burger with no bun, zucchini, and Sidewinder fries, and it was delicious! Everyone in the band ordered different items and was equally impressed with the portion sizes and quality of their food. Highly recommend. read more

Solid place for lunch if you're in the mood for burgers and beer. We stopped in and sat at the bar which seemed quicker than waiting for a table (there's indoor and outdoor seating). The bartender was welcoming and offered samples to help us decide what we were in the mood to drink; my husband opted for one of the IPAs which he really enjoyed, and I had a ginger beer which was light. For food, I had the green chile burger, and my husband had the tatanka (a buffalo burger). The burgers are smash burger style and hit the spot. We came here for dinner after a weekend of backpacking. The menu had some unique things on it and my husband liked the beer he got. My food was good and came out quickly. My husband got a dish that had chips and salsa and it was very clearly just store bought. But the meat that came with it was good. Even though the food came out quickly, the service was very slow, despite it not being that busy. My water was never refilled and we had to sit around for a while and try to find the waitress to get our check. read more

Another really good dinner here last night. We sat out in the beer garden on a cool night. Like last time, we both enjoyed a few of the nutbrown ales. We started with the pretzel, which was hot and yummy. We each could've eaten our own. From there, I had the chicken sausage green chile pasta, which was rich and delicious, while my wife enjoyed her Mac and cheese. She had hoped it'd be a little bigger, but that just left more room for ice cream later. Service was fairly prompt throughout. Good beer, food, and service. read more

Amazing!! I love when Yelp! is helpful on our travels so we don't waste money on bad food. This restaurant had friendly fast service, great seating options for all sizes of groups, amazing kids menu that even includes a fun branded frisbee!, and most importantly the food was amazing! Our group had the kids meal pasta with cheese sauce and a chicken strip on top, kids quesadilla, tatanka burger with horseradish slaw, and the grilled cheese with tomato soup. Everything was delicious and we were all full. Our server Annalise was super kind and helped with all the kids requests. The kids also loved the option of turning their soda into a float! I've been here twice. The first time was amazing. Really great service. Although the second time was pretty bad, Izzy, the bartender would not serve me. I was not intoxicated. She said she had rules about three shots. She couldn't serve anybody more than three shots. Why was there a few days before and they served me as much as I wanted and I'm walking distance I will not be going back unless she is gone so let me know when she's gone and I'll come back read more

So this is our favorite place to come when we come to Durango. We've been coming to Durango for probably 20 years and discovered Carver Brewing Company in downtown. We prefer to sit in the back beer garden. It's cozy, shaded, and relaxed. Can't beat the ambience of the back beer garden patio. I had the veggie quinoa burger, which was fantastic with crispy quinoa edges, pickled onion, tomato, lettuce, and an aïoli. I did need to add a little bit of ranch to that, but unfortunately, our waitress forgot to bring the ranch. My husband had the Totonka burger. And we both had salads on the side, which is two dollars extra. Brioche buns on the burgers are to die for. I wish you could get the burgers with just a salad and not have to pay two dollars extra. Fries come with the burgers at no charge or chips and salsa. We chose to go a little healthier with the salad and unfortunately it cost us two dollars extra. Either way we love Carver Brewing Company. Love to come here for a great juicy hazy and enjoy the outdoors. read more

Decided to order takeout from Carver Brewing because their website made it easy and their menu looked good. Our group tried a bit of everything including enchiladas, burgers, and salads. Picking up the food at the bar was easy, but when we asked for extra condiments like barbecue sauce (it wasn't a choice online), we were told that it would have to be ordered from the kitchen and it would be a wait. Since our food was already sitting out we didn't get any. After returning home we realized our enchilada order was incorrect and didn't take into account one of the requested modifications. However, the green chile sauce was quite good. Burger was just okay, the bun was much too small and the burger fell apart. Salads were also just alright for the price. Maybe this spot is better dining in! read more

Carver Brewing is my new favorite restaurant in Durango! It looks like your standard brewery/gastropub, but it excels in all aspects. The service was prompt and professional - no waiting around for water or beers or food even. It was pretty busy when I went and we still got our food in around 10 minutes. I'm a sucker for a Philly cheese steak and Carver's take on it is fantastic. Top 3 I've tried in Colorado! I also tried the wings and they are 9/10. Spicy and well cooked, uniquely flavored buffalo style. Beer was also great. I went with the Yankee Boy IPA and it was absolutely crushable. Cheers. read more

I've been coming to Durango since 1997 and going to Carver's is always on the list. I typically sit at the bar and have always had a great experience with fast service, friendly conversation with the bartenders, and knocking back a variety of year round and seasonal brews. This is my go to, every time. I'm not big on eating out but I will for here and I'm sure take out is an option. I had some veggie sides and fries with some chili and cheese. My partner had the Colorado Mojado which is absolutely amazing!!! I love their lightner creek lager. It's right along the main road and perfect stop while you're browsing or headed through. History

Established in 1983.

Carver Brothers Bakery first opened on June 1, 1983, in Winter Park, Colorado. It started with Jim, Bill, Sara and Eleanor Carver. In 1986 Jim, Bill and Barb Wynne opened Carvers Bakery / Café in Durango and the Winter Park Bakery was sold. In 1988 Carvers opened the brewery - making it the first brewery in the four corners region since prohibition. Although still known affectionately by the locals as "Carvers", Carvers then became Carver Brewing Company. In 2022, after nearly 40 years Bill and Jim passed the reigns to siblings Colin and Claire Carver making Carver's one of the only second generation brewpub in the country.

Meet the Business Owner: Claire and Colin C.

Jim and Bill Carver have been serving up great food, and beer for nearly 40 years in Colorado. We grew up in a bakery in Milwaukee Wisconsin working under German bakers and brought our skills out to Colorado to live in a ski town. We started off in Winter Park Colorado and moved to Durango back in 1986. After 39 years of baking and brewing, Bill and Jim passed the reins of Carver's to another set of siblings, Bill's kids Claire and Colin, making Carver Brewing Co. a second generation brewpub. Claire and Colin, siblings that grew up and live in Durango, are excited to lead the next chapter of Carver's by continuing its traditions of brewing award-winning beer, hosting a craft kitchen that prioritizes using local, healthy ingredients, and being part of the incredible staff that makes Carver's go round. Here's to another 40 years! A trip to Durango is better with a stop at Carvers.

We decided to do a beer flight so we could sample a variety of their beers before committing to a full pint. It was a great way to try different styles, and we each ended up finding a favorite. Everything we tried was really good. My husband liked their Buffalo wings and whiskey burger, I enjoyed the seared tuna bowl, and our kids liked their pizza. It is definitely a busy and popular spot, especially during peak vacation times, so I would recommend putting your name in early and expecting there could be a wait. In our opinion it was worth it. Steamworks had a great casual vibe that worked well for both families and adults wanting to enjoy a brewery experience. The downtown location adds to the charm, and it definitely felt like one of those must visit spots while in Durango.
