We were wandering around downtown Durango late Tuesday morning looking for lunch and quickly realized many places are closed on Tuesdays and Wednesdays during the mid-April off-season. Thankfully, we came across Carver Brewing Co. and were happy to see it open. They offer a great variety of local beers, including options to take some to go. We tried the Double IPA and the Hazy--both were delicious. They also have wine and mimosas available if beer isn't your thing. Bo (or Beau) was our bartender and truly made the experience. He was knowledgeable, friendly, and had a genuine smile the entire time. His energy was infectious and really brightened the atmosphere. A nice spot to hang out and grab a beverage and some food. The back patio beer garden area is cute. There are a couple of outdoor tables in front of the restaurant as well, but they're adjacent to the street so I think the back patio has a nicer ambiance. The inside is a typical pub environment, with booths and tables and some TV's mounted around the bar areas. Our server was great. Food was okay. The "smashburger" just seemed like a regular burger, and it was pretty well done. The fries were good. I would say typical bar food, nothing special. read more

This is another great burger spot! Located right in downtown Durango so parking is a bit difficult but the food is worth it! I got an amazing burger and "fries". More like potato wedges. We are outside and the weather and service was incredible! What really stole the show though was their desserts!!!!!! I couldn't decide so I got two! First I got the cream cheese zucchini cake and OMG! Soooooo good. The second option was the bourbon pecan skillet! We shared this one and I could have eaten the entire thing. We were visiting from out of town and walking along Main and decided to try this place. The service was very good, friendly employees and waitress. The temperature outside was 96 and it wasn't much cooler inside the restaurant. As far as the food, it was very disappointing! The burger was overcooked and under seasoned. We stopped into Carver's for dinner while out exploring the downtown area. This is a solid stop for larger groups that will likely not all agree on what they are in the mood to eat. Carver's has you covered with options. And, despite being a Brewery, they offered wine and cocktails - thank you! Our server was very patient (thank you, again as we had a large party and several young ones who are quite the picky eaters!). We came here on a NYE day time and the place was PACKED. we opted to sit at the bar. The bartenders were amazing and very friendly despite being super busy. It was a Wednesday night around 7 p.m., and the place was quite busy. Although our server was responsible for many tables, he did a great job welcoming us, checking in throughout our meal, and making sure we had everything we needed. I ordered a burger with no bun, zucchini, and Sidewinder fries, and it was delicious! The bartender was welcoming and offered samples to help us decide what we were in the mood to drink; my husband opted for one of the IPAs which he really enjoyed, and I had a ginger beer which was light. My husband got a dish that had chips and salsa and it was very clearly just store bought. But the meat that came with it was good. Another really good dinner here last night. We sat out in the beer garden on a cool night. Like last time, we both enjoyed a few of the nutbrown ales. We started with the pretzel, which was hot and yummy. We each could've eaten our own. From there, I had the chicken sausage green chile pasta, which was rich and delicious, while my wife enjoyed her Mac and cheese. This restaurant had friendly fast service, great seating options for all sizes of groups, amazing kids menu that even includes a fun branded frisbee!, and most importantly the food was amazing! So this is our favorite place to come when we come to Durango. We've been coming to Durango for probably 20 years and discovered Carver Brewing Company in downtown. We prefer to sit in the back beer garden. It's cozy, shaded, and relaxed. Can't beat the ambience of the back beer garden patio. I had the veggie quinoa burger, which was fantastic with crispy quinoa edges, pickled onion, tomato, lettuce, and an aïoli. I did need to add a little bit of ranch to that, but unfortunately, our waitress forgot to bring the ranch. My husband had the Totonka burger. And we both had salads on the side, which is two dollars extra. Brioche buns on the burgers are to die for. I wish you could get the burgers with just a salad and not have to pay two dollars extra. Fries come with the burgers at no charge or chips and salsa. We chose to go a little healthier with the salad and unfortunately it cost us two dollars extra. Either way we love Carver Brewing Company. Love to come here for a great juicy hazy and enjoy the outdoors. read more

Decided to order takeout from Carver Brewing because their website made it easy and their menu looked good. Our group tried a bit of everything including enchiladas, burgers, and salads. Picking up the food at the bar was easy, but when we asked for extra condiments like barbecue sauce (it wasn't a choice online), we were told that it would have to be ordered from the kitchen and it would be a wait. Since our food was already sitting out we didn't get any. After returning home we realized our enchilada order was incorrect and didn't take into account one of the requested modifications. However, the green chile sauce was quite good. Burger was just okay, the bun was much too small and the burger fell apart. Salads were also just alright for the price. Carver Brewing is my new favorite restaurant in Durango! It looks like your standard brewery/gastropub, but it excels in all aspects. The service was prompt and professional - no waiting around for water or beers or food even. It was pretty busy when I went and we still got our food in around 10 minutes. I'm a sucker for a Philly cheese steak and Carver's take on it is fantastic. Top 3 I've tried in Colorado! I also tried the wings and they are 9/10.
