Parking: the lot is small and shared with other businesses. It is also close to the Trader Joe's! There is limited street parking nearby but between the small lot at the business and the Trader Joe's lot, you can always find a spot although you may have to wait a minute for one! Service: The service is friendly! When you arrive at the doors, there's a sign to knock but the employees are pretty good at spotting people so they will open the door to welcome you in and give you menus. You go to the register to order whenever you're ready. They do have some specials which are written on a chalkboard and the employees are able to tell you about the specials as well. Atmosphere: the restaurant was vibrant with colorful walls, and flowers on the table! It is a sit-down restaurant but fairly casual! It was well lit, and good for gathering with friends and family or coworkers! They also do to-go orders if you're not looking to dine-in! Food/drink: they have plenty of gluten free options and a couple vegetarian options. They are able to modify some of the vegetarian options to be vegan if needed. I ordered the vegetariano saltado, which was well balanced with some salty and tangy notes. It is listed as spicy on the menu but I found it to be quite mild. This was my first time having mote in a dish, which are boiled, peeled, corn kernels. They have a mild nuttiness, and a soft chewable texture which was very nice! Overall I enjoyed this dish and would order it again! The naranjilla juice was also very good! It had a tropical flavor, almost like a pineapple with orange juice flavor. I enjoyed the food overall, and thought the portions were good. Each person in my party of 3 had some leftovers remaining!! One of our favorite restaurants in the twin cities! This place never fails to disappoint, and we've recently learned they have specials during the week and brunch during the weekends! Really great Ecuadorian food, reminds us of all the best food we've tried in Ecuador and then some. I stopped by on a Sunday night and I'm upset I haven't come here sooner!! The beef empanadas are so good! They put cubed pieces of beef inside and they're so flavorful! The fried rice was great! You can ask them to not add shrimp or whatever protein you don't want included! Service was quick and friendly! So cool that there are two Chimbarazo restaurants. As I had mentioned in my review of the other restaurant, it is so difficult to find an authentic Ecuadorian restaurant in Southern California, let alone in another state. We had gone to the original one in Minneapolis several times. This one is located in a nicer business area, but unfortunately the parking is not as ample as I would like. The adjacent Trader's Joes may be taking a lot of the parking. We had to circle around and finally found parking. Unlike the other Chimbarazo, this one you place your order and then sit at a table with a number to be delivered your food. The ambience was modern, clean, and simple. Notes for beforehand: you will order at that counter so while they have menus to look at, it wouldn't hurt to look online ahead of time. Also, this location is in the same lot as a Trader Joe's so depending on when you go, I would forego the parking lot and just do street parking instead. Overall, loved this place. Good vibes, portions sizes were gigantic, and everything was flavorful and solid. Some of the things our party ordered included: yuca frita and llapingachos appetizers for the table, churrasco, lomo saltado, Chaulafan, encocado, and the ecuatoriano vegetariano. A few of us also shared a bottle of Pinot Grigio. Prices for the amount of food you get were very reasonable. Highlights: -Encocado! Omg I'm getting this next time I come. My cousin ordered per recommendations from staff with shrimp and it was delightful. Almost like a curry sauce with coconut flavors this was refreshing and delicious. By far my favorite thing I tried. I poached a plantain off of my cousin's plate and this was delicious as well. -Yuca Frita. They cooked this perfectly so it was crisp and it made for a great shareable. -Chaulafan. An Ecuadorian fried rice, this was very flavorful and I enjoyed it. I would maybe consider sharing this and another entree with someone else because it was a lot of food. -My sister's highlight was the muchin de yuca that came with her ecuatoriano vegetariano platter. Wowza! I just ordered the Secode Carne for take out and it is soooooooo good! The meat is so tender and just melts in your mouth with the sauce it's in. So flavorful. I have been meaning to check out Chimborazo for a while now and I am so glad that I did! The space itself feels a bit crowded but that adds to a nice community feel. There was a lot of energy in the restaurant. It was a little confusing to order at the bar and then go to the table when tables seemed like such a commodity. It's a weird fast casual feel at a place with such great food that people linger and chat while they eat. I ordered the Empanada De Carne to start and it was perfect. Even the salad on the plate that at most places I would consider a garnish was seasoned perfectly and accompanied the empanada with a fresh light flavor. The green sauce though that is a strong contender for best supporting item on the plate. For my main I ordered the Encocado with Shrimp. I thought I'd have some leftover, but I could not stop. The flavors were light the rice perfectly cooked and the fried plantains added another great texture and flavor to the plate. Plus it comes with an extra little dish of green sauce. Which is the right amount of fresh flavor to provide some good variety. I will come back and I will struggle to convince myself to try something different because I will want to eat this meal again. The only negative in my experience is the oil candles on the table let off a weird chemical smell. Next time I'll blow it out to avoid that oddness but that was so minor I feel like I am reaching to find something to improve. read more

Chimborazo serves one of my favorite dishes in town (llapingachos con chorizo). So I was delighted to learn they opened a St. Paul location. Over by the Trader Joe's, parking kind of sucks. But it's well worth the trip. Unlike the Northeast location, I was sad to learn that llapingachos are not on the daily menu here -- only on weekends. So I got my backup - insalata fresca, which was fresh and delicious as always with grilled shrimp. Also, unlike the Northeast location, you order and pay at the counter and then they bring the food out to you. But overall, a very good representation of the Northeast spot and a lovely expansion for one of my local faves. read more

I am beyond excited to have one of my top favorite NE Minneapolis restaurants open a second location on the St Paul side of the metro!! On my first visit, I knew I did not have enough time to dine in so we sat down and promptly ordered menu items to go. We had fun juicy mango and guava mimosas while we ordered and waited for our order. The staff is extremely friendly and knowledgeable about the menu. They're still getting used to their new digs, but they are wonderful, bright and airy and cheery. The yuca frita were exactly how I remembered them crispy and delicious and love the the herby green side to dip them in. The ceviche was bright, flavorful and very fresh. The LLapingachos breakfast was my entree and is my favorite menu item. Today's portions did not disappoint. The roast pork was amazing and I wanted to eat it all but I was stuffed. The LLapingachos are these savory cheese filled potato pancakes. They are comforting and a wonderful complement to my brunchy breakfast. I'm excited to plan my next visit. So happy to have them back in my life (not that Minneapolis is so far away, it just isn't where I end up hanging out these days.) read more
