Every ingredient maintained its own identity while contributing to the overall flavor of the dish. Too many restaurants create flavor by drowning food in sauce. Hawkers does it through seasoning, spices, and technique. There was no puddle of sauce at the bottom of the bowl, no overly sweet glaze, and no greasy heaviness. The rice absorbed flavor without becoming soggy, and the kimchi, vegetables, egg, tofu, and bulgogi worked together beautifully. The spring rolls were equally impressive. Light, crisp, delicate, and perfectly executed, with a thin wrapper and just the right amount of crunch. What impressed me most was that I left satisfied, not stuffed.
