However, once again the kitchen's lack of deftness appeared with too many tough, stringy and fatty pieces of lamb that were unpleasant and overbore the generally decent quality of the rest of the dish. From my experience, that only happens when attention isn't paid to the texture of the meat when slicing. Cutting lamb against the grain is a no-no.
