Ok massive new FAVORITE restaurant! Went on Thursday for the lunch special and it was AMAZING! Fresh yummy sushi and the lunch special THREE rolls (4 pieces each) for $18.95 us a great price . Yikes, Choya. What happened? We used to come to Choya pretty regularly. Life happens and just haven't made it back in a long time And maybe that was just good luck. Service was rushed and inattentive. Almost impossible to get ginger, even. We asked for glasses to share a large beer and that didn't happen on the first try. Now, service is important, but I've been a regular at places with horrible service because the food is insanely good. Not the case here. Chewy salmon (had a chemical aftertaste). The poor yellowtail was butchered - looked like it was dragged behind a car for a few miles. The tempura tasted of old, reused oil. The edamame was so overcooked it draft have its signature green appearance. And the roll.... Tasteless and skimpy fish portions. As we walked away, so disappointed, we realized we've had better "emergency fix sushi" from Staters across the street. Seriously folks. Save yourself. Go somewhere else. read more

We went as a family tonight with recommendation from our friend. She didn't know that this is not a Japanese restaurant, but a Korean owned faux-Japanese restaurant. Tonkotsu ramen, which they charged $18 was a glorified instant ramen... no flavor in the egg, soup not good to drink. As a Japanese native, I would have been picky for anything Japanese - but I should have known when I tried to make a reservation speaking in Japanese, and they asked me to speak in English although she had a totally broken English accent, I should have bailed right then and there. Listen, I love their Authentic Korean dishes, Bibimbap, Korean BBQ, etc. But if Im wanting Japanese food, I want real Japanese food. I ordered a Bento box with BBQ Rib meat (pretty good) and tempura - small shrimp tempura, with veggies... all good except when I got to the Kabocha pumpkin. Totally undercooked, something that a true Japanese chef would not overlook. Other dishes were chicken breast bowl - chicken was totally dry and overcooked. Everything was overpriced at least by double, if not triple. So, why didn't i order any sushi? I only order true sushi - from chefs who have studied under authentic expertise sushi chef for decade or more, and i have studied to make such sushi, and were in the same classes with those who wanted to be in the sushi making business after a few weeks, not years. There is so much more than to cut and serve. The preparation before to diminish bacteria, to be able to be sushi/sashimi worthy - I need to know that the fish that they are cutting is not going to make us sick. I didn't have that confidence - sorry. They tried with the flashing lights - if you are gong to have string lights, keep it from flashing. It's so distracting if you are trying to make it with Japanese motif. Ambiance - extremely bright. It's fine for reading the menu, I suppose. It's just off a bit... I can't explain. There was no body else there besides us and staff. Prime dinner time should be hopping with people. Took too long to get refills of water - the staff ignored me for at least 20 or more minutes - when I began to shake the water cup with ice, they finally couldn't ignore us. Came here on a Friday night for date night. It was pretty busy so I'd recommend making reservations or coming around 5:30-6 pm to avoid a wait! The owner (Key I believe is his name) was so welcoming and friendly. All the staff were! I saw that they had regular customers because they spoke to everyone by first name and everyone ( and I mean everyone) in the restaurant seemed to be having a great time eating sushi. The sushi chefs were quick and they'd have a big smile as they hand you your rolls. The bento box is HUGE. We got the chicken and tempura one and two rolls and between me and my date, we could barely finish it all. The portions are generous and tbe edamame was cooked perfectly as well. They offered us a free dessert for our first time there and I forget what it was called. But we ordered a pistachio and custard gelato dessert and it was the perfect way to end the night We will be back! read more

Choya is consistently excellent. Our normal go-to items: - tempura vegetable. Lightly fried. Vegetables are still al dente after cooked. - gyoza / potstickers. Good flavor. This used to be our goto place and last year it went down a bit, service was declining and it was always empty. Last night we decided to give it a shot again and it seems as if it's back to how I remember it! We started off with some drinks and the avocado and asparagus appetizer. We came here and ordered the lunch special. The mixed tempura is extremely fried and inedible. The sushi also had a smell to it and was clearly not fresh. I don't understand the good reviews. There aren't many sushi restaurants in the Ladera ranch area so maybe it's due to a lack of options? We even noticed later that the waiter was sniffling and continually wiping his nose with his hand. We stopped by late Friday afternoon for a quick bite. The atmosphere was nice, and we enjoyed watching the chefs from the bar seat. We had the gyoza and three rolls. It's a bit expensive; we ended up paying $80 (a bottle of sparkling water is $8) plus tip. I think we saw the waitress only once, which is strange, but it was nice that--I assume the owner--came to us at the end and asked how everything was. Again, the food was good and nicely presented. Food: 3.5/5 - the Chirashi Bowl was good and fulfilling! I personally didn't like the pickled cucumber which had its own little rice wine taste to it. The salmon and tuna was super fresh and buttery! the other fish was good too but I've definitely had better Chirashi elsewhere for a little less. Customer service: 4.5/5 - super nice! The waitress who took our order was really nice. They are busy and did forget to grab our ordered beer and when she did realize it they were out of cold Sapporo. Choya is a pretty solid choice for Japanese food in south county. There's a good selection of well structured rolls, and their fish quality is good. They offer a great lunch special - $16 for soup, salad, and choice of 3 items (4 pieces per roll). The dinner rolls might seem a but pricy, but the portions are pretty big and good for sharing Some of my favs: Funky monkey - one of my favorite creations , they're perfect as appetizers to share. These jalapeño poppers are stuffed with spicy salmon and cream cheese, lightly battered and then deep fried. They are rich and delicious (not spicy at all). Crunchy hand roll with soy paper - these are pretty standard, and quite yummy with the soy paper, just don't let them sit too long or they get a bit soggy. Yellow tail - pretty good quality Seared salmon with yuzu paste - my favorite way to enjoy salmon. This isn't on the menu, but you can ask for it. The yuzu adds a nice, refreshing, citrus zing to the salmon, which goes well with the slight smokiness from the searing. Mother's roll - crab, avocado and spicy salmon. This is such a flavorful and rich roll. At $15, it's a bit in the pricy side, but it's a decent size, and big enough to share. read more
