Dining at Shin Sushi prompted a flashback for me of an experience many, many years ago while working in a restaurant kitchen when my manager let me know that she preferred that I prepared her meals because I made the food taste good. I mention this because, of my experience dining at Shin Sushi, Sushi Chef Shin really makes the sushi taste very good. I had the occasion to try a new Sushi spot outside of my normal circle and landed at Shin. It is not located in a spot that one would easily find as it is a bit off the beaten path. But, it had a very solid following and the recommendation from fellow Yelpers was all that I needed. My visit was shortly after 5:00, but while I was the first to arrive at the restaurant, there were reservation signs visible at most every table . . . a very good sign, no pun intended. I was seated at the Sushi Bar and was greeted by my server and the Sushi Chef (Shin himself) and was provided a refreshment of my choice. All of the staff were so friendly and accommodating which most find in Japanese restaurants. For this evening, I ordered a variety of Sushi to get a good sense of their preparation and fish quality. Folks, they hit the mark in all categories: taste; quality; portions and presentation. I ordered: Japanese Halibut, Scallops, Japanese Mackrell, Bluefin, and Seared Salmon with Ponzu. (Don't judge, it was way more than I normally order, but took one for the team). Every serving was prepared with tlc, with nice accents for added flavor and presentation. Moreover, the fish was fresh and served in very abundant portions. There was nothing sliced too thin. Everything was very good. Shin Sushi has amassed a very fine reputation for locals and non-locals (me) to earn it a very high rating. You should note that if Sushi is not your thing, you will have to find another Japanese restaurant as they only serve Sushi. But, if you have an appetite for Sushi and willing to take a jaunt to this area, do not overlook Shin Sushi. It is a great value for quality Sushi that is prepared by the master himself, Shin, and someone who appears to take pride in his craft and have his customers return time and time again. The sushi here is high quality with generously sized cuts of fish for their nigiri. They don't have a large variety of rolls, but that is not why I go here. The nigiri and sashimi are the stars of the show. The staff is very friendly and attentive. The place is small, but there is a charm to it. We go back regularly and love it. read more

Shin-san is worth checking out. If people born and raised in Tokyo consider his place worthy of coming to compared to others in the area, that means something. He usually has the same selection of fish from week to week, but it's tried and true and of great quality. Some highlights: -Maguro and Chu-toro (c'mon) -Pepper Tuna (heavy coating of black pepper, quick sear tataki over open fire, great onion-soy dressing) -Sashimi salad (lots of mixed sashimi, great onion-soy dressing) -Hamachi kama/collar (usually pretty large, go early, he sells out) -Handrolls (fat and stuffed with the good stuff) -Albacore (creamy) -Scallops (creamy) -any kind of mackerel (got that intense good-fishy taste) read more

Shin Sushi fits nicely within the definition of "hidden gem." It appears very unassuming and there is one chef, who has developed a loyal following. This means its the real thing - excellent food and excellent quality. The cucumber special roll is pretty much the best sushi roll you can find in South Orange County, if not all of Orange County. The roll is definitely not cheap, but it is the real thing, without any filler or cheap ingredients. It has cucumber for the roll, with tuna, salmon, crab, imitation crab, masago, and shiso leaf. We usually get it without the masago and shiso. There is also a special sauce that comes with it. But it really shines with ponzu. Unfortunately for my wallet, this roll has become a family favorite and we usually order four to five of these for one meal. The other rolls we've tried have been excellent as well. Inside, the restaurant is dimly lit and intimate - definitely not somewhere you would want to take children. They have a 10-seat sushi bar and about four or five other tables set for four. So not a place for large parties either. But they do have takeout, which is what we usually get and it is pretty good. Highly recommended. read more
