Nice to see that Chuy's made it out of Texas! As a person who lived in Texas most of his life was surprised to find out that this place was up here in Colorado. I was happy to note that everything that could be found in the Dallas area chuys could still be found over here including their amazing chips and dip. Our waitress was nice and fast, and when one of our table mates let her know that he couldn't eat cheese she was quick to get him a new order of the same food item in less than 5 minutes. Oh Chuy's there are so many things that I love here! The atmosphere is really fun and unique. There is lots of seating in both booths and tables. We have been here a few times now. Every time we have the best service! So friendly and prompt. Sometimes I opt for the daily special, other times I get the chuychanga. It doesn't matter, it's all good. I like the boom boom sauce from the sauce list. Ask your server for their recommendations, sauces range from mild to spicy. If in doubt, ask for samples. Only 4 stars because I am not a huge fan of the free salsa (too chunky and not much flavor) and I think the portions are too large, just like the price. They should have a half option for half the price. I don't like wasting food or bringing home leftovers and I usually end up only being able to eat half my food! I also don't appreciate the extra dollar charge for the boom boom sauce. This is high priced "Mexican" food for sure. Their happy hour which runs 4-7 has good prices on margaritas and free queso! I used to eat at Chuy's in Austin so I thought I'd try it out. I was seated right away and greeted promptly by my server. The chips and salsa were really tasty--crisp, thin chips and fresh spicy salsa. The chicken tortilla soup is made to order, and it was delicious! Really good broth, generous chunks of chicken. I had the #1 combo and my husband had the burrito with hatch green chili. Huge portions, priced about the same as other Mexican restaurants but everything was really bland. The green chili while spicy had no flavor. The chicken flautas were just shredded chicken in a corn tortilla, no spices. The cheese enchiladas were cheesey but the con carne sauce had no pizzazz. I went in here with my kiddos and 2 other Austinites who have all relocated. Our waitress was amazing. I want to say her name was Erin, but I'm probably wrong. We go to this Chuy's restaurant about once a week. I am from Austin, the birthplace of Chuy's, and my family was so excited to have a Chuy's open up in Broomfield, CO. We were, however, unhappy to hear that corporate policy is to NOT add some standard food offerings until the restaurant has been open 1 full year, such as the fact that they do NOT have the chunky table sauce, the red salsa with the carrot chunks in it. That seems like a trivial and very, very popular food item to leave off your menu, folks. read more

The free chips and salsa are a great touch and the salsa is delicious/freshly made. I had the deluxe chicken enchiladas. It was pretty darn good, the sauce on top was phenomenal. Rice and beans were very good and made well. The service was fast and friendly. Our server was great, checked on us frequently, was very helpful and attentive. We have been going to Chuy's for more than 11 years across 3 states. I have to say this one in Westminister is the least consistent of all of them that we have been to. When bringing cooks from lower altitudes they need to be trained to high altitude cooking skills and times. The staff in Westminister is hit or miss also. I really like this place! Their whole menu is amazing. From their fresh salsa to the boom boom sauce to the delicious drinks meant to get you lit af! I highly recommend trying any of the dishes with the boom boom sauce - it is SO good. I'm literally obsessed with it. *update: I feel sad that our latest experiences has led me to change my review to 2 stars. I understand a lot of restaurants took a hit through Covid and have had to modify their menu. However, we feel Chuy's has not recovered from the fall and unfortunately is continuing to sink. The menu is still not a full menu (no signature items like the Elvis, chile rellenos, etc). The service used to be upbeat, inviting & super friendly. The last 3 times our waiters have been a combo of inattentive, short/curt, forgetful and gave an overall feeling that they just didn't want to be there. The last 2 visits I found a hair in my salad and on the last visit our waitress's nails were SO long, when she placed a bowl on the table, her nail dipped into the salsa. I no longer get a clean vibe, but it just feels dirty with proof on the silverware and tables. The hostess's seem to spend more time gossiping than acknowledging the patrons that walk in. This used to be our favorite place, but will not be returning any time soon. Bummer. :( read more

The only reason I'm giving 2 stars instead of 1 is cause the food was delicious! Our waiter was very friendly but we had pretty awful service. We ordered our drinks and they came fast. But then she took another 10 minutes to take our food order. We asked for more chips- 5 minutes went by before getting them- but she went around filling other peoples chips and just kept skipping our table. When she finally gave us more chips she said she would come bring us more water (all our water glasses were empty). That took another 5 minutes- again she went around filling the other tables water. Now it's been about 15-20 minutes since ordering food. 2 tables who sat after us got their food so we finally flagged down our waiter. She clearly forgot to put in our food order. Took another 5ish minutes to get the food. Again the food was delicious! However- there were 2 managers walking around- not 1 came over to check on us.. but again checked on other people. Howdy crew. We went in for lunch today - which just happens to be the second day for them to be open up here in CO. I'll start by hitting the important things. Meaning, their queso dip is the best we have ever had. My wife and I were more than excited when we found out they were opening up one down the street. We are at one in TX earlier in the year and liked it. The food is good, not fabulous, which is kind of a bummer. But, it's not as expensive as the places close by that have very bland or worse food. Their sauces are good and they have several to choose from. They aren't nearly as spicy as the menu leads you to think. Their 3 pepper rating is more like a pepper in my opinion. My real thing is the meats used just don't have as much flavor as I would like. Portions are pretty good, I would be stuffed if I ate everything that comes on the Elvis combo. Free chips n salsa. And the salsa is good. Chips are made fresh in front of you - should you want to stand and watch them through the glass. Go check it out, just go for lunch right now. The first time I ate at a Chuy's restaurant, it was with low expectations. After all, it is a chain so I was anticipating something similar to On The Border. Luckily, I was wrong! Now I will be honest and say that I have only ordered the same item each time I have gone but why tempt fate. I have always opted for the Steak Burrito. The Hatch green chili sauce is on the hot side. It is a pleasant surprise anytime a sauce labeled hot actually leans on that side of the spectrum. That being said, I knew it would be too hot for my wife so I steered her in a different direction. She had a combo plate on which everything was excellent. The quality of all the meats stood out. In regards to the Margaritas, they are also top notch. They aren't as pretty looking as at some of the other local places but they are by far the best tasting and pack a punch. I would recommend checking the wait times on the Yelp app and getting online there if needed. Our wait st 6:00 on Saturday night was about an hour. I definitely wish I would have known that before ordering. The drinks aren't as pricey as other restaurants but they are refreshing. There's patio seating which is nice. I shouldn't be, but I am a big fan! Typically I despise chains, go for local and authentic as possible. Chuy's is none of the above but I loved it! The place is clean, family friendly, and a good value for the food! I loved their chile queso, its a must order in my opinion. The other thing I was a fan of was the Chicka Chicka Boom Boom enchiladas. Tender and juicy white meat chicken rolled in fresh tortillas, topped with a white boom boom sauce. The sauce was the bomb! The other thing I loved was for kids, they give them a kids menu to color (typical) but also edible play dough! To top it all, their bathrooms are nice, clean, and they have a family bathroom, which my 2 year old hit up a couple of times as kids get messy! One last tip: try the crispy tacos. It is no frills: beef, beans, and cheese, but they were soooo good! My daughter got a kids meal of those but saw on the menu you can add one to your order, and you should! Not authentic at all, but it doesn't mean it doesn't taste good. Get over the fact it isn't real Mexican and you will love it! read more

This place is great! We walked in with a party of at least 30. The wait staff was EXCELLENT!!! They were on top of it! Our drinks were never empty, our chips baskets were always full, and our order was accurate! It took 3 of them to serve our large group and they were all very friendly! Our bills came out quickly and accurately, too! So wonderful! The hostesses, however, were NOT as friendly or as competent. Lots of eye rolling and and loud sighing. You'd think they were the busy waiters. We'll be back and hopefully by then their attitudes will have changed and their customer service skills improved. The food was great too! Upon walking in, it is definitely full of color and things to look at. We sat in the hub-cap room, and I was a little bummed that the music wasn't working in there, because it probably would have drowned out the family behind us with four little girls. Our server seemed a bit distracted and I couldnt tell how busy he was. I don't eat a lot of spicey food and our server made me feel like he thought I was a whimp for not being able to handle their salsa, which was really hot. He did bring out their creamy jalapeño sauce for our chips, which was amazing. The food came out amazingly quick, which surprised the waiter, so I don't think it's a normal thing. I was disappointed because I was supposed to get a choice in rice and he never asked me, so of course, I get the spicier option. The food was really good, but everything was spicey. We got push pops at the end to combat the spiciness, which the server thought was strange. He also brought out the wrong check and he wasn't very efficient. I liked that the silverware came in "sanitized" paper baggies, but the knife I got that had something stuck to it contradicted the whole "sanitized" thing. We will give this place some time to better themselves before we come back. Hopefully they will cool down the spice or have less spicy options and better their staff. read more

I've been to the original Chuy's in Austin, TX many times. They serve true Tex-Mex. The Chuy's in Westminster does NOT compare at all. The food is not the same (unless the Austin site changed their menu - of which Austinites would have been up in arms). This is not Tex Mex and was quite dull and lackluster on the taste buds. I'm from Texas and love Chuy's, but I was worried that the food and service wouldn't be the same as I remember. I had no reason to worry: I've been to this location 6 times, and each visit has been the same great experience. It is not too often that I feel compelled to give a review but this place is just that good. Where do I begin? I have driven past here countless times and had always assumed it was a standard "order at the counter" kind of a place, but it is in fact full service restaurant. Everyone we encountered was super friendly. The server was knowledgeable and even brought out a plate with all of their sauces for us to try (and yes there is a lot). You can customize anything on the menu with the sauce you like which is really nice. I tend to be sort of a chips and salsa snob, but they were DELICIOUS! Everything here is house made including the chips and tortillas. You get completely tortillas, which my husband was thrilled about. I got the chicka chicka boom boom enchilada and my husband got the wild burrito (one of the daily specials) and both were again delicious. The meals were a generous portion but too good to leave any behind. I hesitate to give a 5 star review but this place really deserves. Zero complaints here. So so so SO excited to have Chuy's open in Colorado! We were seated quickly, attending to quickly, our food came out quickly, and we enjoyed it quickly. I was amazed to look at my phone and see that they had us in and out in under 40 minutes! It took us almost an hour to get there! Our one complaint is that the chips had an insane amount of salt on them, so much so that they were inedible. We told our server and requested that some be made with no salt, but we never received them. If you bring in a framed picture of your dog, you get a free appetizer! We ordered the sampler, valued at almost $12. We can't wait for the Belmar location to open as it will be a shorter drive for us, but we will surely be back to this location in the mean time. read more

This restaurant calls itself a Tex-Mex Restaurant, but the flavor is more of the Mexican food that is served in New Mexico, which I never could get use too as its usually less sabroso or tasty as Mexican food served in Metro Denver is. I had the Chile Rellano-Enchillada Combo Plate with beans n rice, which was ok. I didn't like the Chile stem included, the beans didn't have that flavor that could be improved with using some cooking oil, but that me! The enchilada was good.
