Fast. Fresh. Healthy Options. I've been here nearly 10 times and its only been open a few months. What you will find here are friendly employees who are ready to build your custom bowl, ladle you up some pho or make you a banh mi. I've only ever had a bowl. I tried the rice, but find that the vermicelli is my favorite by far. I go with grilled chicken or tofu. So if you are craving a bowl for take-out or eat-in, you start with your base, pick a protein, add things on like a spring roll and then move down the assembly line (like how Chipotle does it) and add up to 5 toppings. I go for fried shallots, sliced fresh jalapeño, cilantro, pickled carrots and cucumber. Then typically select the cilantro vinaigrette. Personally, I think that could use ore vinegar. When I get take-out, I add rice wine vinegar to my bowl and then add the cilantro vinaigrette. They used to offer just one, large size for the bowl, but today I was offered a smaller one. I think the big bowl is 40 oz and the small, 32 oz. That was enough for me today. It was under 10.00 bucks. read more

To summarize, we loved the people and the atmosphere and left full of tasty Vietnamese food and happy! They just added automated ordering, which I normally don't care about either way but they've done it well. The owner immediately engaged us and explained the menu and process of ordering build-your-own rolls, bowls, or bánh mì. These sorts of menus lend themselves well to electronic ordering -- lots of options. The owner's Vietnamese , so having spent three months living in Vietnam, this encouraged us to try their more traditional noodle offerings. I had the bun bo Hue (beef noodle soup, in the style of the Hue region) with (free!) extra veggies and found it to be very authentic in flavor profile. In Vietnam, this will often have tendon, congealed blood, and other meats that may be off-putting to the American palate, so unsurprisingly they stuck to tasty beef cuts and some type of cured meat loaf slice. Very nice! Once I pumped it up with all the veggie add-ins, which you always do with Vn food, it was super tasty. I got it spicy, which was just some chili oil and not too strong. My husband had one of the beef pho options and really enjoyed it. He ate allll his free extra noodles. The broth was very delicate but right where you want it to be, and again once he customized it it was super tasty. Both dishes were a bit more muted than what you'd get in Vietnam so I'll give the food a 4/5... but keep in mind, we have a very high bar to meet, and will be returning to Cilantro for sure! The staff was nice, the atmosphere was casual and fun, they had jalapeños and legit chili sauce to really kick up your food, and with optional free extras they don't skimp on food. It's not dirt cheap like some Vietnamese food, but you're paying for the ambiance and location for sure. It's an understandable upcharge in my opinion. They had a lot of bowl options and a lot of customers were building their own bowls. I ordered the Pho Ga, which was a vegan broth soup with rice noodles and chicken. They brought mint leaves and sprouts and jalapeño slices and a lime slice - all as toppings for the soup. What I loved is that someone came by the table to see if I had enough noodles. Since I wasn't ordering a "build your own" dish I didn't need to wait in that line and was instead told to order at the register. They took out the seeds of the jalapeño so it wasn't as spicy as I would have liked. The wings looked a little dry and not saucy at first but when I bit into it, it was like a flavor bomb- so delicious and moist! My friend got the vermicelli bowl and we both agreed it was very dry and not like the other vermicelli dishes we've had before at other Vietnamese places. So if you do get it make sure you get a lot of extra sauce. I'll definitely come back to try the rolls and the regular pho! I have made two trips to Cilantro for lunch. The food has been very fresh and good. The space is clean and fine for a casual experience. Only one thing is somewhat odd - their use of scissors to cut the chicken. I use scissors in my kitchen all the time to cut meat however I would prefer they cut the chicken in the back rather than have the server on the line cut it.
