I went with an order of the Braised Beef Debris Poboy and this is hands down not just the best Poboy I've ever had in my life, but the best beef or steak any sandwich I've ever had in my life! The braised beef was absolutely perfect and tender, amazingly so! I can get a bit picky about beef because I hate it when it's tough or gristly or has too much fatty parts that won't melt down, but I didn't have a problem with any of that. I'm no butcher, but seemed like they used a good part of the beef of what's already a fairly quality cow (Louisiana Wagyu Beef I recall reading) or maybe it was the whole braising process, but I wish I could have this for days!
