Husband and I were in town for the week and decided we wanted some sushi and unfortunately for the Boone/ App State Folks there's not many sushi places to choose from up here. Found Cobo on Yelp and decided the pictures of the sushi looked decent. And honestly it's just that... mediocre sushi and tapas. I would call this more of an artisan sushi bar rather than authentic sushi. I guess you can say we've been spoiled with our sushi expectations as we live in the Iredell County area which is between Charlotte and Winston for authentic sushi. The service was super slow due to how busy they are and how small their sushi set up area is so I can't really blame them for being so packed and one of the only maybe three sushi joints in Boone. The server did make sure to keep our drinks filled and checked on us, however, he wasn't much help when it came to recommendations on the menu as he didn't seem to really eat sushi (do not hold that against him) He was honest when we asked him about the mackerel roll and said he's been told is super fishy which it is since it's pickled mackerel rather than fresh. The udon noodles were the furthest thing from being udon. Instead they were a flat stir fry rice noodles so that was really disappointing. The only thing that was really good was the Japan Poppers those I highly recommend trying if you like stuffed jalapeño poppers! I don't think we'd be back to Cobo simply due to the lack of authenticity and overpriced food and drinks. read more

We took a shot here with no reservations on. Saturday evening. I would generally recommend reservations here, but thankfully we were able to be seated straight away without so much as a wait! There is a beautiful bar area, and though we decided to sit at a high top adjacent to the bar, I'd choose to sit at the bar if possible next time to watch the bartender or the chefs. Our server was excellent. She struck the perfect balance between providing excellent attention without overwhelming us. She quickly took our drink orders, while we spent a bit more time looking over the menu. We got two cocktails to start along with the edamame. The blackberry mojito was good, but the Ichigo Fizz was exceptional! I'll defin try more of their sake cocktails next time! For dinner, we ordered three rolls to share. We enjoyed a mix of types of rolls, and while we each had our personal preferences, we found them all to be well prepared, with fresh ingredients and careful presentation. We were seated at the bar and waited upwards of 40 minutes for our food. When it finally came out, I have to say, possibly the worst "hibachi" I've ever had. I don't even think you can claim whatever they're serving as hibachi. The overall taste profile was sour, vegetables seemed like they were microwaved and dumped on top from a bag. Just awful. I absolutely love coming to Cobo anytime I'm in Boone. They have the BEST rendition of "bang bang shrimp" (Co-Bang Shrimp) in my opinion. The sauce isn't overpowering and the shrimp are always so crispy. I'm also a fan of the Japan poppers and their potstickers. They get very busy, I don't think I've ever just been able to walk in and be sat immediately unless I get lucky with an open bar seat. Let me start by saying, we have been eating at CoBo for years. The food is ALWAYS phenomenal. Best sushi hands down and love the vibe. Drinks are also top notch. No complaints there. Food is always five stars The reason for this review is service related. Over the last year or so, every time we visit (regardless which day of the week) it's an hour or more before we get our food. Appetizers are usually prompt, but the sushi is painfully slow to arrive. That in of itself is a problem, but since we like to order several rounds of different sushi, it makes for a VERY long dinner each time. (Which causes problems when other guests have reservations for the table we are sitting at 2 hours later) This was all brought to a head last night when during the VERY long food wait, our waitress Reagan visited the table a grand total of 2 times during the long wait. Waters weren't refilled until food arrived, drinks sat unattended etc. She was very pleasent and apologetic about the food wait, but we dang near had to get out of our seats to track her down for updates. Not sure if she just had too many tables to wait on or not. But this needs improvement. Cobo, the sushi chef staff needs a boost. It shouldn't take an hour to make 3 rolls and a small plate of sashimi. read more

We stumbled upon this trendy little sushi bar while in downtown leaving the local. Only had an app (salmon nigiri) and edamame, but we will definitely be back for a full meal!! The sushi was fresh and served promptly. We sat at the bar and had good service. I had a cosmo - wasn't the absolute best (a little weak, but not too sweet)! We got there early and had no trouble sitting down right away but came back the next night and it was an hour wait around 8pm. We will definitely return! However, it's important to look beyond that at times when you're looking for a good spot in a town, especially one where a large college dominates the employee pool. Surprised we were seated at a table within 5 minutes of walking in since it's usually pretty busy, especially at dinner time on a Saturday night. Edamame was yummy, sushi tasted delicious & service was incredible. However, the New Yorker is no longer a cut of filet, more like a sirloin and is cooked well done, which made it our least favorite. Also ordered the Appalachian and Burning Man, which were both delicious. Knocking my rating down to 3/5 because I got extremely sick after eating here, throwing up for hours and couldn't keep anything down at all for the rest of the night. read more

We also had the veg kali roll and the spicy red dragon (not veg). All delicious. we finished off the meal with a steak hibachi. The meat was tender and the rice is unbelievable. Alex provided seamless service. Ask for him if you want the best. Also worth mentioning that we did not have a reservation and the host staff were kind and accommodating. We waited about 30 minutes. Cobo caters to the App State students, predictably, but oldsters like us were accorded good service. Parking in the area can be a hassle, but overall we were pleased.
