Well the beer was good. The service and chicken nachos could have been better. If you like your chicken nachos with the finely shredded/type chicken, this isn't the place. The chicken was unusually chunky. It was a miss. For 15 dollars you would expect a better tasting appetizer. We came in around 8:15 p.m. on a Sunday and there was no wait staff to greet us. Bartenders looked at us confusingly, and we sat ourselves at a table. Then a waiter came to greet us. He seemed hurried. Kitchen closes at 9 p.m. so I kind of get it, but I didn't feel very welcomed. To start we ordered the shishito peppers which came with ricotta cheese and bread crumbs...I've never had this type of pepper before..dish was very mild heat factor. I think the flavor needed to be amped up a tad, cant quite pin point what it needed but slightly lack luster. I liked the short rib melt that I ordered. It comes on sour dough bread which by far is one of my favs...although used a bit too much butter on the bread for toasting purposes. The fries that came with had the potential of being amazing but they, for whatever reason, were dry inside(?). I dont know what the cause was but it definitely took away from the fact that they were perfectly seasoned and fresh cut. Also the salmon chopped salad was ordered. I may have gotten that myself but it was not a day for me to be having a salad...but I was more than happy to try it! Every item in the salad is something I would be interested in...but something about it just didn't do it for me..the salmon was overdone and a tad too fishy. The salad dressing was too citrusy. Needless to say the dish just didn't pull together as I would have liked/hoped. Perhaps just an off night....The menu is interesting enough to me to bring me back for another try. This is not your father's Colter Bay! If you've been here back before Shatzle got his hands on the place and you walk in to Colter for the first time in a while (like me)....You're in for a surprise. The place is completely different from the former corner bar... With a ski lodge type atmosphere, every inch of the bar is well thought out. No detail was spared. The menu is big enough for anyone to find something to eat. Salads, sandwiches, burgers, etc....Even the pickiest of eaters could find something to dine on here. We had the fish and chips (bc it's Good Friday and Im a good Catholic boy) while my better half had the short rib sandwich (heathen!!!) Everything was good. I had no complaints about our meal. Flavorful, served hot, and the service was spot on. I am huge into craft beer, and well, where else would you find great beer selection than at a Shatzle establishment?! Came in with a fried to catch the Sabres game and a bite to eat. It was less crowded than I expected so that was nice. I loved how the decor still has that mountain feel after the namesake Colter Bay (village), Wyoming. They have a pretty decent beer and whiskey list and offer a wide range of Cocktails. I opted for a draft beer....they rotate so name isn't all that important. My friend got an order of wings that he rated a 6 or 7. He didn't give much of an explanation why, but likely just personal preference. I had the thier version of a Caprese salad. It was more of a deconstructed salad but very nicely done. I really liked the house made Buffalo mozzarella and the balsamic vinegarette! The service was great! I was unsure of what I wanted and the waitress stopped back a few times. I actually felt bad but she was super pleasant and laid back about it. She checked back often and we never have to look for her for anything. Best service I've received in a long time! Dear Colter Bay, When you package fish and chips it is not good practice to slop coleslaw in the bottom of the container and throw fries on top of the slaw. The garbage plate belongs in Rochester. The crowned gem of the order " fish fry", billed as fish and chips. This my friends is not fish and chips this is what some would say a soggy log of beer battered fish that resembled a water logged panty liner. The batter was wet and soggy my wife threw her fish straight into to garbage. Needless to say I followed suit. Being a former military medic I wanted to salvage some of the dying food that we order so I chose the "chips" to air fry these turned out ok after air frying them for 10 minutes. We ordered from SkipTheDishes so this means I didn't feel like cooking, so me air frying is really me fixing someone else problem. I am sorry but if you can't make the food and have it presentable when it arrives, then don't send it out the door. Anything fried needs to be ventilated so it doesn't sweat and end up look like it soaked and bloated like sat in a toilet bowl. This sucks I seen they had a scotch egg on there menu and I love scotch eggs. But this bridge is burn, burn, burned. I stopped in for lunch and ordered the chicken sandwich, which would have been great if it had been cooked all the way through. The outer edge was cooked fine but as I got toward the middle, the chicken was rubbery and hard to chew. I looked for the waitress, hoping she could get the kitchen to cook it a bit longer but she was nowhere in sight. It was well past the lunch rush and I was one of the only tables in the place. Yet the waitress did not come by my table once since bringing my food. So I just tried to eat around the undercooked part. Eventually I'd had enough and went to the bathroom to wash my hands. There was the waitress sitting at a table gazing at her phone. She didn't even notice me. In the bathroom, there were no more paper towels. When I got out I informed her that there were no more paper towels and that I was ready for my check. When she brought it, I told her about the undercooked chicken and how I would have been happy with a recooked one had she bothered to come check on me even once. She apologized and told me there was no charge and I left. I worked in a popular casual fine dining restaurant in Boston for 11 years and I would never just disappear on my only customer when it was so dead. Then to find out she was just sitting there on her phone was pretty annoying. SERVERS SHOULD NOT BE ALLOWED TO HAVE THEIR PHONES ON THEM WHILE THEY ARE WORKING. This place was awesome for lunch! I have heard they changed a lot and to be honest it was impressive. I sat at the bar and the bartender was very quick and helpful, I ordered a mule and a scotched egg that came with a side of maple bacon aoli. The scotched egg was crispy on the outside and the egg was cooked perfectly. The meat could have used a tad more seasoning but the bacon aoli really really shines and made the dish outstanding. I then got a short rib sandwich on sour dough, the bread was crisp and the meat fell apart as you took bites. Paired with the peppers, onions and pesto I was very pleased. I finished with another perfect mule to complete a great experience. I'm happy to say I would definitely go back to try out some more of the dishes and interesting cocktails they have to offer. read more

The new Colter Bay is a 3 1/2 with strong potential to be a 4+. First, the service was excellence. DJ was friendly and had great advice about the menu. He confirmed that the chef was from the old Blue Monk and that the fish-n-chips was from the classic menu (yeah!) (They were sold out, but we're looking forward to it next time.) The new remodel is very nice and the bar was warm and inviting, with people laughing and talking with friends and strangers alike. (The mammoth nachos also look delicious.) I told the server how much I miss the Blue Monk mussels and he indicated that the menu would be expanding at some point and that - while there are no guarantees - they have been getting a lot of requests for the mussels. The menu was more limited than I would have liked with a leaning towards heavier stuff. Their menu doesn't appear to be online yet, so I can't give you the exact names but I had a burger with carmalized onions and a horseradish aoli. I ordered it medium and it came out fully cooked (no pink); that said, it was so juicy that I didn't even care. The flavor was great but for me personally too strong by the time I hit the second half. This would be a great dish to split with someone! It came with fries, which were crisp and fresh. My husband had the short rib melt (on Texas toast). He said it was "very good" but that the fries were "excellent / the star." They had 40+ beers on tap with a wide array of options from around the world, which was a nice similarity to the old Blue Monk. Ultimately, we're looking forward to going back, getting our fish-n-chips and seeing what else is added to the menu over time. I have been here a few times for some late night drinks but this was my first time trying the food and boy was I impressed. They have a very interesting menu with a variety of apps, sandwiches, burgers and entrees. We ordered the pork nachos for a starter which were huge and delicious. We could not finish them all. For dinner I had the Bison meatloaf sandwich. It was great, it came with mashed potatoes, caramelized onions served open face on Texas Toast. I love Bison and is a good choice for those looking to stay lean. Service was great the whole night, the bartender Mike was very friendly and accommodating and offered some great suggestions on the very large selection of draft beers. I will be back for sure to try the Elk burger which sounded great and of course to get more familiar with the beer list. read more

Honestly not super impressed with this place. Come to think of it NOTHING really stood out at all. The nachos (starter) were not satisfying at all and the ribs I ate for dinner were weird. Also the coleslaw and fries were like anywhere else in the world. Although - the drinks were pretty strong which was a plus. The staff was pretty nice, when we walked in the hostess was sitting back reading a book which actually surprises me considering the vibe this place gives off. The place itself is actually pretty cool looking. It has Edison lights hanging down all around and a big bar. Definitely don't see a reason to ever go back to this place! Beware the perogis: the menu said the were Chrusciki's ....and I've had them at the Broadway Market. 4 for $10 is not normally bad. These were really small like the tiny tots Ru's makes and calls perogi. The fries were super salty. The sandwiches are really good tho. Stopped in for lunch with my two boys. First time in since it was remodeled. Have to say I was pretty impressed. The motif is similar with a lot of wood, almost cottage like. The old colter never really had much of an aesthetically cohesive identity but it was always a blast so nobody seemed to care. Colter 2.0 however has seemed to find itself a bit more. Interior is themed as a ski lodge with contempo finishes and will put you right in the mood for a nice beer...or 4. I have never eaten at the old colter but Colter 2.0 seems to really be kicking out some great dishes. It takes a lot for me to eat bologna because I don't really know what it's made from but none the less I do on occasion love me a fried bologna. Fancy fried bologna was on their specials menu so I figured I'll give this place a "baptism by fire", if they can make a fried bologna fancy enough to be a special, they gotta me doing something right. Unbelievable friendly and warm atmosphere. The staff was waiting to greet you and help you at every turn. Our waitress was lovely. Answered any question we had, kept our bottle of water full throughout our meal, upsold us on the shaved short rib for the Poutine and we were so glad she did. It made the dish! The bar itself is gorgeous. The rustic ski lodge theme tied everything together nicely, especially with a menu full of, what I like as, comfort food options. For example, mac n' cheese, meatloaf and pierogis. We ordered the Pepi's Run Poutine, add shaved short rib to start. With the exception of the gravy, the Poutine was fantastic! Fries were crispy, the meat was tender and the cheese curds melted. If I had to guess, the gravy came from a can. It was incredibly salty and thick. One of the girls at our table ordered their soup of the day which was a cauliflower chowder of sorts. Unfortunately, none of us liked it. It almost tasted as if the bottom of soup had burnt in the pot. We did not mention to the waitress that we did not care for it, just simply stated we were done. I am guessing by the cup being full she recognized we weren't fans and took it off our check. She truly was wonderfully attentive. For my entrée I chose the Elk Alley burger. It was cooked perfect to the temp I requested and was delicious! Let's be real, add a goat cheese croquette to anything and you have an automatic winner. Also ordered at the table, Fish n' Chips and the Corbet's Couloir (meatloaf open faced sandwich). The portion sizes for each of these entrees was enormous. Two people liked the fish, one did not. The batter was more of a tempura texture/flavor. It was very light which was what was loved about it. When it came to the meatloaf sandwich, everyone agreed that the gravy was overwhelmingly salty. Who doesn't like Texas Toast?! The mashed potatoes and the meatloaf itself were okay. Overall atmosphere and service were great. Food left us split, we may try other items in the future but we won't rush back in for the menu. I can see us frequenting the bar but going elsewhere for dinner. read more

The old Colter Bay was a Buffalo institution. I'm so thankful new ownership reinvented it and rescued it from obscurity. Although the new Colter Bay is nothing like the old, there are many welcome changes. The decor, layout and ambiance is great. Lots of open space to accommodate the hundreds of patrons that packed the bar on their second night. The bar extends almost the length of the room and the bartenders moved expertly amongst the guests. Despite the huge crowd, we never had to wait for a drink. And speaking of drinks, the tap selection is amazing. There are at least 6 ciders on tap, more than I've seen at any bar. I believe there are around 30 beers on tap - also impressive. I did not try food yet. This seemed impossible given the crowd. But I'm excited about this place and happy that Colter Bay lives on - even with all the changes. read more

Met a friend here on a Friday evening for a few drinks and was pleasantly surprised with the new age, younger crowd vibe I got walking in. It felt like a place you'd find in the back bay of Boston with a bunch of twenty something's drinking off the work week. Beer list was enormous and variable. Didn't get a chance to try true food but the smell of it filled the air and I wish I'd eaten. The bar staff was attentive and friendly and even offered a complimentary shot for my friend and I after finishing the first week of school as new teachers. They did a nice job with the renovation/revamp of the old place. It looks like they tore down a wall or two and it really helped to open up the place and give it an updated feel. There is now a great 1970's Aspen ski lodge atmosphere vibe going on in this place! The ski lift benches are a nice touch as is the moose on the wall. The menu is on the small side but features some "gamey" meat options to go along with the ski lodge vibe like; elk, bison, etc. If you're not a big meat eater there are limited sandwich/entree options for you. If you are a big drinker however rest assured there is a lengthy beer/hard cider menu. A nice addition to Buffalo restaurant scene. read more

Last Friday was the second time I had visited Colter Bay. Once before for a happy hour but this past time for a fundraising event they partnered with Buffalo Big Print on to support the local non-profit animal rescue, Diamonds in the Ruff. I was extremely impressed with Colter Bay throughout the night and will 100% be returning for dinner and drinks here in the future. I didn't personally order food but some items on their menu sounded delicious. This place overall has a causal yet still upscale feel to it. I did order a few mixed drinks that were all great. The owner came out and assisted with the setup of the fundraising event, you could tell he truly wanted to help and he was a animal lover. (there's pictures of dogs all over the walls). The cook came out in support of the event as well. They donated items to the rescue as well as donated plenty of food off of their appetizer menu over to the continuation of the event at Buffalo Big Print. They had a band later in the evening which was great!! Not too loud that you couldn't hear a conversation any longer but still very entertaining. I was always a fan of Colter Bay. It had a nice location, was always fun, and was age appropriate. When they closed for renovations, I wasn't sure what to expect. They BLEW me AWAY! The inside is like an old ski lodge, with awesome finishes and a very Colorado feel. They have a huge amount of beers on tap, and a very nice menu. The bar space is massive, and the rest of the place is open and very accessible. I've even enjoyed their patio in the summer months. We were there for Saturday brunch, which is harder to come by than you'd think. The food was prompt and delicious, and the bartender was friendly and efficient. I really like the new Colter Bay! I was heartbroken when it closed (primarily due to nostalgia, but also the location). I consider myself a fan of all of the Shatzel establishments and I love beer. Colter Bay is unique because it has a ski lodge vibe which will be interesting in the summer, but is perfect for right now. I have gone one three different occasions and have really enjoyed all of the menu items that I have tried. The pretzel appetizer with beer cheese and mustard is great, but that is a hard one to mess up. Their nachos are out of this world. Fresh fried tortilla chips under a blanket of melted cheese, jalapeños and pickled red onion! I also ordered the salmon salad; it was a very sane portion and I would order it again. While it will never be the divey & endearing bar it used to be, there are some really friendly bartenders and you might even run into some of your friends from the old Colter! read more

Warning: This is a very biased review and strictly about the bar/ atmosphere. I have not tried the food but hear good things about it. Also, I'd give it a 2.5 if I could. I had gone to and loved the old colter bay. I loved the uniqueness it possessed and its friendly atmosphere. So naturally, I was not thrilled when the establishment switched owners. Don't get me wrong, the new owners have done great things throughout buffalo and are well known for their bars/restaurants. However, many of their places are carbon copies of each other with a slightly different twist to set them apart. This place is no different. My low rating is not because of the customer service or the quality of food or drinks. Its because colter bay was a unique establishment, not like anything else in buffalo. Equipped with odd knick knacks on the wall, quality bar food, and great bartenders. Now its just another bar in buffalo. read more
