Even the vegan commented that the cheddar and honey stuffed filo was incredible. When I first met Barry we asked about his accent - turns out he's from South Africa, in a region called Durban. That community is known for being very diverse in culture. He also spent time in California and, obviously, now lives in VT. As soon as he learned that my mother is Indian, but grew up in East Africa, and that both our families love a variety of foods the menu started planning itself. Bhajias, cheddar and honey stuffed filo, samosas, crab cakes, chicken satays - and that's just the appetizers! Each item was meaningful and mouth watering. Dinner was done buffet style. I was a bit concerned about the speed of this and how it would go over with guests (I think everyone loves being served). In the end, people could ask for extra of what they wanted, skip what they didn't, and some managed to get up for seconds. It worked perfectly. Dinner was a wine and herb mopped roast, peri peri style shrimp and scallop kebabs, salt potatoes (simple, but really well done), butternut polenta pie (vegan) and vermont mac and cheese (I regret not getting seconds on this - but as the groom I barely finished my plate) I'd go on about which items I like... but that would be a book - every thing was just perfect, fresh and really well done. The staff was also incredible. He hires a number of high school kids, and some alumni, for weddings. At first I was concerned, but then learned the local high school has a culinary program, so these kids aren't just trying to make a buck - this is what they want to do, and it really showed. Additionally, Barry wasn't exactly kicking back - it seemed like he was every where at once - prepping the buffet serving appetizers and some how I kept hearing his booming laugh as he interacted with guests who just had to stop him to tell him how great the thing they just ate was. The price was right in the middle of what I compared, but the quality, quantity and creativity of the menu put this as possibly the best wedding meal I've been to. (If I can say so myself). A few notes: Barry does not do bar service. If you need alcohol, you'll have to find another bar tender. I went with Phat Kats and was really happy. There was some question about how water would be served - but between Ohana, Barry and Phat Kats I didn't have to worry about it and it got done. He had asked for some of our favorite dishes and foods, and using just a few examples he was able to design a creative and diverse menu that had us practically licking the plates by the end. It was so wonderful to be able to relax with our families instead of having to stress about not only cooking a full meal for 8 people, but planning the menu itself. Both of our families being cheese lovers, he started us out with a beautiful, locally-sourced arrangement of cheeses complete with herbed butter and artisan bread and crackers, along with dozens of fresh oysters. Some of our favorite dishes consisted of the brown butter lobster buns with old bay aioli and lemon (Will also made a vegetarian version of this with cherry tomatoes for one of our family members); hanger steak with chimichurri, peppers, and onions; and a Parisienne gnocchi with freshly foraged mushrooms, baby kale, and dijon crème fraîche. Everything was perfectly cooked and each dish had such a unique flavor profile so that the entire meal truly felt like one exciting journey. We especially loved the carrot cake with cardamom cream cheese for dessert, which had us going back for third helpings. I cannot emphasize enough how wonderful of a time we all had, and we would just like to thank Will again for such a magical evening. He is not only incredibly professional and accommodating, but very easy going and a pleasure to be around for your special event.

I mean a real bbq truck / trailer serves chicken , pulled pork , burnt ends , ribs beef an pork , brisket and all the fixings ! With sauces to go with . Nope not these minimalists . Their meats are bland with hardly any smoke ring as you will see in their brisket nope nothing ! And their sauces suck and are only from high priced bullcrap privateers . They obviously did not do any homework before opening . Ive heard from a few wedding parties they catered and those parties were not happy at all and basically had the same critique as i do . We will never buy so called bbq from them ever again

    Still fabulous…read more They've evolved from being a completely home based operation to operating a food truck on weekends. This is the message from the business when I wrote to inquire (as of December 2024): "We are doing a food truck now in Waitsfield on Saturdays during the winter in the Waitsfield in the Chamber of Commerce parking lot. It is across from Valero gas station. We will be there from 12-5 on Saturday. We ask if someone is getting food for 12 or more people to please preorder, otherwise just stop in and we can serve you." Meats are awesomely tender and moist, perfectly imbued with smoke, seasoned with just the right amount of salt and paprika-forward spice. Lesser barbecue sometimes clonks you over the head with smoke, sugar, and seasonings. Dino Bones is so much more nuanced and refined. It does not rely on sweetness for its appeal. We recently tried a half pound of brisket and a half rack of ribs, each $15, with sauce on the side for a bit extra. There's a good reason the sauce is sold on the side: meat is so good you don't really need (or want) a sauce to obscure those great flavors. Ingredients are well sourced, locally sourced -- and you can taste the quality. Hope we can keep this place open!!
