    Happy happy joy joy! One of my fav fast casual restaurants in Colorado was Costa Vida so when I was randomly in Apple Valley over the weekend I was ecstatic to find a Costa Vida! My fav is the small salad with sweet pork and the tomatillo sauce. It was as delicious as the last time I had Costa Vida which was 4+ years ago. Woo hoo! The associates were friendly and happy I found a more local option in Minnesota. Yay!

    Costa Vida makes their own tortillas, and they are the best. I also love the cilantro lime dressing. If you go on taco Tuesday, the tacos are $1.99. They have many options, great food, great staff, and great service.

    Visited on 11/11/22. I cannot say enough good things about costa vida. Who needs chipotle when you have this place with fresh flavors, top notch ingredients, and absolutely amazing chicken? I choose the regular sized salad because it is gigantic and then I can have leftovers. This also comes with a homemade tortilla underneath the salad so it's almost more like a burrito bowl. I pair this with all the fixings it comes with, black beans, and the tomatillo ranch dressing to add a splash of flavor. I most often get my order to go (they have a walk through option similar to a chipotle but they also have a drive thru at this location), and at home I add a bit of hot sauce on top to give it a kick. Service is always incredibly professional and I find myself recommending this place to anyone in the south metro area. Check it out, this place is a must visit.

    Goodbye Chipotle, I have found my new burrito love. After Baja Sol closed it's doors for good, I was considering where my next south of the border dive would be? Chipotle is too commercialized and blah for me. I needed something with a little bit more jazz. Well, Costa is that jazz. First off, they give you a nice big menu to choose from. There house special is Sweet Pork, which is very good. Think pulled pork with a sweet mango glaze. What I love the most at this place is that they will smother your burrito (melted cheese and sauce added on top) for no extra charge, it is expected that you do. They have three sauces to choose from as well as a mix of salsas. I love their Mango Salso, fruity, mild, fresh...YUM. Their portion sizes are huge and yet pleasantly priced. You basically could make two meals out of a burrito but most of the time I cannot stop my mouth from inhaling the food and so get one meal out of it. And one last thing, don't skip the tortilla. They are house made and freshly served and are delicious. You do have the choice of getting a burrito bowl, but the serving size is halved for the same price. If you want the most bang for your buck, get the burrito, smothered, and serviced with salsa and lettuce on the side. Delish.

    I ordered the Baja Bowl with chicken and all the condiments that didn't cost extra. First, everything you get here seems to cost extra. In fact, this is the first time I have been asked for a tip at a zero service fast food restaurant (I pay 20% +/- usually at sit down restaurants for service). Second, the food was...shall we say bland? Just bland all around. My kids didn't even eat their chicken quesadillas they were so bland. Anyway, this is exactly the kind of chain food that gives the suburbs a bad rap. If you only like to eat food that tastes good, go elsewhere.

    A welcome addition to the Cobblestone area, I've tried Costa Vida a couple of times since their grand opening this summer. Pros: Freshly cooked proteins, very generous portion sizes, friendly staff, well sourced natural ingredients, and a broad selection of salsas and dressings Cons: Not enough to distinguish itself from other TexMex fast casual offerings in the area. I've had both the burrito and salad (which comes with a tortilla unless you request sans); as well as chips and queso. The consistency of the queso is similar to Chipotle's but tastes better! If you are in the area, Costa Vida is definitely worth checking out. Also, I love that they have a drive through.

    I've been to Costa Vida a couple of times now. Both times I've ordered the Sweet Pork Enchiladas. Both times it was pretty tasty. Its braised in cola which I knew going in and it still caught me a little by surprise. There are a ton of other options you can go with when it comes to the meat choices. Besides that, you can choose tacos, burritos, quesadillas and so on and on with every permutation of sauces and sides imaginable. You can literally come here for a number of days in a row and not even make a real dent in the menu. Its a tad bit spendy for those that might compare it to a Chipotle, except Chipotle doesn't have near the variety that they have here and it is more spendy. I have a few options for Mexican in the area that are closer to home so I don't get here as often as I might otherwise. Give them a try if you happen to be in the area.

After 10 minutes no one had come to the table... 15 minutes... still no one. No water, drinks or their complimentary chips. They weren't overly busy, so this didn't make sense to us. At minute 20 I got up to talk to a manger. The waitress saw me go up to the front and tried to wave me down to say "I got you." I'm sorry but 20 minutes in a restaurant that isn't packed is ridiculous. At the very least she could have brought water and said she would be with us soon, but she never acknowledged we were there. I spoke with the manager and noted that it had been 20 minutes with no one coming to our table. I told him i understood she had other tables but that we just hadn't even been acknowledged. He said "she doesn't have that many tables! Let's go!" He took our order on the spot! He brought us complimentary guacamole and horchata with our chips! That was a very nice gesture! I assured him we weren't out for freebies, we just wanted to order our food. He was very friendly and definitely took care of us! Our food came out very quickly and we were checked on multiple times. He definitely turned what was a very negative experience around! The vibes here are really great! The patio was so nice! It was well maintained and clean! The food: I got the pulpo (octopus) tacos! They had a tropical and buttery flavor to them! I opted to take the picked onion off mine but I'm sure that's tasty as well! They have a great variety of choices on their menu. I went basic and ordered a chicken burrito - it's huge! You do have a variety of chicken to choose from. My Son ordered the Octopus and said it was really good and enjoyed the smoky flavor. It comes with green beans and they were good. Hubby ordered the flank steak, ordered it medium, it did come out medium rare, he didn't complain but he left a lot on the plate because of how rare it is. We usually speak up but he was full regardless. The service was great. The drinks were fun. I will definitely be back

I asked for more and was provided another half scoop on each meal. Ordered sour cream on the side because I wasn't sure I wanted it in my food. CHECK OUT TIME: Charged for double chicken. Charged for sour cream on the side instead of in the meal. Charged for extra cheese. The guy at the register was rude and would only remove the extra cheese charge and said next time it will be extra $$. Extra money for cheese??? My Burrito was literally nothing but chicken, rice, cheese, and salsa. Never 1 single time have I had to ask for extra cheese at other Pancheros. Never have I had this problem before at other Pancheros, or Chipotle, or Qdoba. I won't be back to Apple Valley Pancheros.
