Rolled up on this popular joint as I was looking to fill my belly. First you need to understand, the portions here are large and exactly how like it. I order the daily special " Hectors Chilaquiles". They were delicious and probably the best chilaquiles I've ever had. The chips were large and crunchy even after being covered with green salsa. They were perfect for scooping up the cheesy refried beans and fried eggs. The potatoes are seasoned nicely as well. This is my new favorite at this place. Stopped by on our way to Monterey. We had breakfast and it didn't disappoint. Food was good.

My experience at Country Rose Cafe was a very mixed one. While the food was fine, there wasn't anything exciting or disappointing with the food, I was more bothered by all of the in-your-face local advertisements. The whole restaurant was screaming "billboard, give us money and we'll put your ad somewhere on the tables or menu." Hence, I took no photos of the menu. Plus the tables, the ads just bothered me and distracted my experience at Country Rose. The service I felt was a bit lacking and none attentive. Perhaps more just not knowing than not caring. Inside the restaurant was fine. Like a classic American diner in what seemed like a good spot in Hollister. If the ads were better placed or removed, my experience would have been better. It just screamed greed to me with all of the ad placements. read more

FOOD: Surprisingly, the food is where I noted a quality downshift, from a solid 4 to a weak 3. The bacon was rubbery & tasteless ( compared with the prior tasty, crisp thin strips). They get a gold star for using medium (rather than small) sized eggs. I guess my biggest disappointment were the hash browns, served up as a big lump of overcooked shredded potatoes (as opposed to previous LIGHT, TASTY, & FLUFFY crisp hash browns). read more

I love the portions at this restaurant as I had leftovers and left with a happy stomach. The menu is extensive so it was a bit overwhelming on what dish to choose which was not a bad problem to have! I had the corn beef hash and I recommend getting the garlic hash browns with it. We went on a Sunday afternoon which expected to be busy so we waited for about 20 mins. We were lucky enough to find parking right at front but expect to walk to find parking on very busy days. They have outdoor and indoor seating and it's a great brunch place for bigger groups as well. We sat near the kitchen which may not be the best place since I could see all the action in the back kitchen and people taking their quick breaks. This was my first time here. I asked how was their chorizo. The super friendly server told me it was really good. I asked if they made their own tortillas. Unfortunately, they do not. I got the chorizo scramble with her recommendations of garlic butter hash browns . The meal was delicious. My friend got bacon and eggs with biscuits and gravy. He ate everything! Used to love coming here to eat. Excellent food. 50/50 service. Been coming here for years with family and service it's usually polite and sweet or dry. As of recent my last 3 visits I've experienced the most unprofessional experience to pay. I understand my server is new so I gave her a pass but every time I go pay the cashier or random customer will cut in front of me. It was very rude impolite and unprofessional. This place is awesome! The food is so good and the waitress was a complete doll! We had two of the scrambles and chicken fried steak. Just a little update for you. The food quality is still great. The prices are getting a little out of hand. I would not be surprised if sales start to dwindle. There are other options for breakfast in Hollister and the surrounding area at lower price points. Fast service for a Sunday morning! Waited about 5 mins for a table. Got our drinks right away, followed by our waitress who took our order all within 10 mins. Ordered and our food was out pretty fast. Good service, the waitress was so nice and the food.... Really good (at least my plate). I ordered the potato pile. Full of flavor and a good portion. Asked for their homemade salsa on the side. My husband ordered the Cowboy scramble but his dish wasn't that great. Very bland. Best breakfast in California! This unassuming corner spot in Hollister draws me in anytime I'm in the area. You can tell it's a local favorite from the conversations - everyone seems to know each other. Sometimes there's a wait, but it's worth it. Walk around the neighborhood for a bit and enjoy the morning. Service is fast, efficient and hard working. And the food - literally every single item is the best example if it's kind. It blows my mind how everything tastes so fresh and perfectly prepared. And huge portions! I've never left unsatisfied. I wish I had this Country Rose Cafe in my town.
