The food was great and the price is reasonable compared to San Jose or Bay Area's fine dining restaurants. The portion also were huge! We all let with take out boxes. We liked Cosmos Lounge enough that we came back for dinner two nights in a row, which on a road trip says a lot. Usually we're off chasing the next meal like culinary nomads. By this point in the trip, we were fully committed to our "tapas style everything" philosophy. Why order one entrée each when you can create a tiny feast and slowly steal bites off each other's plates with zero shame? Over the two evenings, we shared the Berry Burrata Salad, Beet & Spinach Salad, cauliflower, Seared Ahi Tuna, Dungeness crab cakes, Angel Hair Pasta with shrimp, and lava cake. The pasta was perfectly al dente, the kind of texture that makes Italians nod approvingly from a distance. The crab cakes were flavorful and satisfying, and the beet salad thankfully avoided the tragic fate of being "healthy but boring." The lava cake was gloriously decadent and absolutely understood its assignment. The ahi tuna was good, though I wished for a bit more flavor to stand up to the wasabi situation happening on the plate. The Berry Burrata Salad was the only dish that felt a little sleepy. The berries seemed more decorative than committed. In a region overflowing with gorgeous local strawberries, I wanted the salad to lean harder into its fruity potential. Cocktail-wise, the pomegranate margarita was refreshing, balanced, and dangerously easy to keep sipping. Service was a mixed bag between the two nights. The first evening, our server gave off strong "this table again?" energy, and we had to remind her about bread. Same place, different name. How badly I wanted to go to a nice dinner and enjoy myself...alas... Let's focus on the positives first. 1) Getting a table wasn't hard- and it seems for a Friday night there's no need for a reservation. That was my first indicator something was amiss. 2) you're sure to get your weeks worth of sodium in the first bite. 3) the flavor of the caprese was decent. Now let's look at reality. It's owned by the same person who owned the Baler. That place was awful. Overpriced, nasty food. This place appears to be the same exact place with a different name. My concern is that whoever sets the recipes has horrendous taste, and whoever cooks the food has no skill. So let's run through this journey... Cosmos, even for a Friday night, appears to not be able to garner enough business to warrant a reservation on a Friday night. So, by all means, set us right by the door! There's not much need to discuss ambiance, because it a just blah. Not sure what theme they're going for but "bar and grill" ain't it. Now, I deliberately waited to come here because some of the feedback I received on Cosmos was that I jumped the gun, they had just opened and the menu wasn't right. Well y'all had nearly a year for cosmos, so what's your excuse now?? Like many places we received complementary bread. They also chose to give us olive oil and balsamic vinegar to dip. No no! Don't even ask if we would like butter instead. That's not an option, but I do appreciate the bread... that was stale and seemed like it was from yesterday or before. Water with ice! Sure! And I'll complement that at least they were up on refilling often. So let's talk drinks. At the recommendation of the waitress, we ordered the cucumber martini and the berry mojito. Well folks, if you like the texture of drinking that goo that comes out of an aloe plant- that martini is yours! And if you enjoy and an incredibly bitter mojito with chunks of crap in it so thick you can neither drink through the provided straw or straight from the glass... well then you go for that mojito! A safer bet would be the water or just a fountain drink. Seeing some of the staff was the same from Baler, we didn't dare order a bottle of wine just watch them fumble with something as challenging as a cork... but I will say our waitress was friendly and speedy. Solid job out of her! No complaints there. Now let's talk food. My wife ordered the steak salad with the steak cooked rare... RARE! Not medium! Just to be sure, I asked the all knowing AI what a rare steak was. The result is having a seared exterior with a bright red interior, typically ranging between 130 and 140 degrees. Yeah, that wasn't it. And similar to its predecessor, no one likes steak with hard gristly fat that's impossible to chew!! This is the same issue I had with the Baler. Look, there seems to be a steak issue with this owner. I don't know where you source your steak from, or who does your trimming, but you're missing the mark! Also, $42+ for a steak is absurd! Find a different source, find someone who can actually trim the steaks right, then find someone who can actually cook them right!! Came here for lunch on Christmas eve with a friend that had been before and recommended it. Lots of options for brunch or lunch. Service was prompt and friendly. My friend had an omelette which looked fantastic and he was pleased with. I had the Cosmos burger as it sounded fantastic with caramelized onions, mushrooms, bacon, sharp cheese, lettuce, tomato, and avocado. Ordered it medium rare. Bit into it and it was well done and very dry as a result. Mentioned it to the server and she promptly took it back to the kitchen. My husband, son & I came here for my birthday dinner since we still haven't checked it out since it opened. We came at 5pm & we were the only ones at the restaurant - we ended up eating in the outdoor area since it was a nice day out. Our server came to greet us pretty quick & provided friendly service. I ordered the Frutti di Mare & my husband ordered the ribeye. My husband said his ribeye was a bit more cooked than he liked but he didn't want to send it back. My pasta was decent but there were some pieces that were a bit overcooked as well. Overall, I'd rate it a 3.5 but since we can't do 1/2 ratings, I bumped it up to a 4 for the service. We arrived in Hollister on Friday afternoon and decided we wanted to try Cosmos out, based on the reviews. (Thanks, all!) Cosmos Bar and Grill is an absolute gem! From start to finish, our dining experience was nothing short of exceptional. I started with the crab cakes, which were perfectly moist and bursting with flavor. The lemon aioli was the ideal complement, adding a bright and creamy touch to every bite. My husband had the Atlantic salmon, which was cooked to perfection--tender and flaky--served with rice pilaf and beautifully roasted vegetables. For my entrée, I ordered the evening special: a filet mignon stuffed with garlic and mushrooms. While I can't recall the exact ingredients of the sauce that was poured over the steak, I do know one thing--it was hands down the BEST sauce I've ever had with a steak! It elevated the dish to another level. The roasted potatoes and asparagus on the side were cooked just right, rounding out an incredible meal. And of course, we couldn't leave without dessert. The butter cake was unbelievably moist and packed with rich, buttery flavor, while the tiramisu was light, creamy, and absolutely delicious. I have been here on so many occasions and I love the food and the atmosphere here. I like to come during off peak times to sit on the patio with a good book and some tasty food. I'm never disappointed here because the service is amazing. My absolute favorite is the lamb. It is so tender and flavorful. My mom and I stopped in on a whim last night to get a freshly cooked meal and simply put-- we left happily full, pleasantly surprised and eager for more! The menu, while not vast-- offered some "classic" dinner items with a few unique twists and i'll be the first to say... the chefs did NOT disappoint. From portion sizes to flavor profiles, there just wasn't a single mark that this restaurant didn't hit. It literally checked all the proverbial boxes for me. We started off with the Dungeness Crab Cake appetizer-- a must if you are a fan of freshly prepared crab, gently kissed with a delectable lemon aioli and perfectly topped off with a roasted corn fruit salsa. These babies are LOADED with the freshest of ingredients and were surprisingly hefty for their size. Excellent for a pair to share. And while my mom elected to try the freshly grilled Atlantic salmon--delicately coated in a lemon beurre-blanc, sprinkled with sun dried tomatoes and excellently paired with both a fluffy rice pilaf and a delectable medley of crisp vegetables.... I embarked on a semi-traditional meal of chicken parmesan. Here's the kicker, though... there's no spaghetti or angel hair pasta paired with this massive hunk of freshly breaded chicken.... no, instead, you get a sizable serving of penne pasta in the most delicious pesto cream sauce i've ever tasted. I mean... the sauce... MADE this dish. The chicken was not dry, overcooked or drowning in tomato sauce, but rather perfectly blanketed and topped with onions and mozzarella to boot. We cleaned our plates so well that we regrettably were rendered too full to attack their dessert menu... but even still... from cheesecake and bread pudding to tiramisu and flourless chocolate cake... this place definitely has your sweet tooth covered should you be able to save up enough room for it! The service was excellent, as all wait staff were eager to help and checked-in regularly, complete with a smile. It truly made for a great experience. My only gripe for the evening is that the atmosphere was a bit on the loud side as there was a group of ladies on the other side of the restaurant whom didn't seem to be aware of how obnoxiously loud they were being... but even in spite of all the raucous, NOTHING could spoil the experience we had tonight. Been here before and had a great time, so I decided to come again, and bring different friends for an early dinner visit. We were so busy visiting i forgot to get pictures of our entrees. But, I ordered the chicken parmesean, it was delicious and a very large portion. Even had left overs to take home. My friend also had the same as me and liked it as well, and our other friend got the salmon with vegetables, which he said tasted good but was bummed it was a small portion. On to the desserts, although plated beautifully, two were very rich and one was very dense. We couldn't even finish any of them, even through sharing and letting each other taste. Anyway, the cocktails were good, and our server was very nice and attentive. She brought us our hamburgers. One with fries, the other with onion rings. The onion rings were overcooked. My hamburger had some raw onions added along with original cooked onions. I sent it back. We tried Cosmos last night and was pleasantly surprised by the decor, waitstaff, etc. it was really elevated and quite nice. We ordered the fried cauliflower, beet salad with chicken added, and the special which was braised short rib. Everything was delicious! Big portions, very colorful and pretty presentation. This building has had a really hard time getting a restaurant in it with any staying power. I've had some good meals in it, but within a few months it's once again being renovated for use by a different proprietor. In its current form it's now Cosmos Bar & Grill. It definitely leans heavier into the restaurant category than the bar category, and that's alright. We have enough bars in town, and not enough restaurants. I've eaten here several times now, and I have to say that the service is consistently good. I've yet to have an order come out wrong, and the staff is always attentive. A big one for me is how the server treats my son, and they're always very kind. I'm thankful for that. As far as the food, I have yet to order anything that I didn't thoroughly enjoy. Their chicken Parmesan is ENORMOUS. The chicken is very generous, and the penne pasta that comes with it is very good. They also have pesto pasta dish that's to die for. The crab cakes are excellent and don't skimp on the crab. So many places cheap out and use a lot of filler, but these ones have been solid every time. My wife is a big fan of their minestrone soup, though I don't care for that kind of soup myself. Service is relatively quick, even on Sunday afternoons when a lot of people are grabbing a meal after church. Their carry out is also good, though they're not on any of the delivery apps. One of my biggest pet peeves is when restaurants don't make it clear that asking for extra items (like sour cream) comes with an additional charge--you only find out when the check arrives. We tried the crab cake appetizer and the Cosmos burger. See the attached photos -the food looked gorgeous when it was served and everything tasted great! The crab cakes were full of crab, very fresh and had an awesome complimentary fruit salsa on top. We also shared the Cosmos burger (cooked medium) and it was perfect. I went the other day in the early afternoon with my boyfriend, and we waited quite sometime to put in our order. It wasnt extremely busy , there was about 6 tables with three servers. Our server seemed to not be into it. She took our order and im not sure if she forgot to put our order in but 30 minutes in and the table that got there before us barely got their food. Mind you our server never checked in on us or let us know that food would take a while. We decided to leave, we let a different server know we were no longer going to dine there.
