Today, my husband and I came to eat dinner at 5:15. To start, we were greeted with scowls, not given menus, and sat at a dirty table for five minutes, until we finally got up and moved seats. We had been enjoying the local hot springs, and I don't think our leisure attire and wet hair were appealing to the well-aged "hostess." I use that word generously. She repeatedly looked me up and down. The staff was transitioning to dinner, which was fine. However, they clearly had no interest in helping us. We received menus after 10 minutes and were then ignored again. This is not the first time I've had bad service here, and I will never come back. I had a lousy experience about 7 weee ago and was trying to look beyond...We ended up having a lovely $300 dinner at the Calistoga Inn. The Interior of the Inn on the main floor is very clean and elegant with beautiful furnishings and art. The grounds are quiet and peaceful with nook and open areas for relaxing with a glass of champagne or cup of coffee. The Flower Barn must be seen. There was a wreath making class going and countless beautiful dried flowers hanging from the ceiling of every variety. There is a little store on the property with more dried flowers, olive oils, jams and balsamic vinegar from the valley. Soothing jazz music played in the various areas of the property. I can imagine what the propery must look like at night, or for a wedding or party. I am looking forward to returning!

Unfortunately, my entire entree (sole meunière with green beans and fondant potatoes) was uniformly bland...no trace of salt or seasoning whatsoever. The entire dish was blah. I can't remember the last time I complained about inadequate seasoning, but when it's nowhere to be found, it's hard to ignore. The beans were pretty much raw. I enjoy bright green beans served al dente beans, but raw? No. The fondant potatoes were anemic (zero golden color, zero confit). All three pieces seemed steamed, steamed unevenly, and served cold. One of the three fondants was very firm and barely cooked. I needed to cut it with a knife. The other two were fork tender but alas, cold and flavorless. Honestly, it was kinda weird that all three components of this dish were just so darned boring and lacking temperature. I had only started my meal when I told the server about my impression of the dish. He took my feedback cheerily and said he'd let the chef know for future reference, but no "How can we fix this?" It was a bummer. When eating a classically delicious dish feels like punishment, something's not right. On the bright side, the server had a very nice manner. The room was lovely and had good energy. The menu was priced lower than we expected. And the chilled english pea soup was absolutely delicious. So Valette is capable of getting some things right. I'm not sure whether to chalk it up to "off night" or poor quality control in the kitchen. I guess both, maybe.
