One Saturday, we went in after the game and were the only people there besides 4-5 people at the bar who the waitress was busy talking to. We had to go get her to come wait on us. My steak was ok, baked potato had been cooked at least 3-4 hours prior and was terrible. We again had to go up and ask for our check. My boyfriend went back again another night and asked if I wanted takeout. I said sure, gave them another chance. The steak was again, ok at best, Mac and cheese was slopped together and half in a cup half in my box and on my steak. They left out my mashed potatoes. We went back and got them, and it was literally an old baked potato chopped up and stirred in to some butter and sour cream. I would think if you left something out of someone's order you would go out of your way to make it good when they got it. Long story short, please do not waste your money here. read more

The Alfredo was tasteless. The precooked chicken Breast had a burnt taste from the grill. Ugh. The bartender taking the order was indifferent. The expediter or server or manager, not sure who he was but he was a nice guy, pleasant to speak to. Too bad most of this is going in the garbage. :( read more

Gibbys is not a hotel restaurant. They are a restaurant in a hotel. Tina was our server and she was fantastic. They made my wife's burger exactly as she wanted it. I had buffalo wings and Mac and cheese. The buffalo wings were good, not great. It could have been an off night. But the mac and cheese was off the hook. We also had a few drinks and tried the YeeHaw Kolsch beer. I would recommend both the beer, and the restaurant. * I thought I took a photo of the other side of the menu but ended up taking the photo of the same side. We had a drink at the bar. We go to enough Holiday Inns to know that the "vibe" can be weird. The bartender was very pleasant. The Sauvignon Blanc was bad, overpriced and served in an embarrassing glass. The Larceny Bourbon was good, the glass was nice as was the large ice cube. It appeared to be Karoke Night, which was fun for the participants. We didn't have any food. read more

Exceeded our expectations for a Holiday Inn on site restaurant! We had the Lemon Rainbow Trout entree, a couple different burgers, and a pepperoni pizza. The trout was very good. Cooked perfectly and tasted fresh! The burgers were also very good. The meat was cooked well, good quality ingredients on top, and the buns were especially tasty. The pepperoni pizza was average though. But hey overall we left happy and would certainly eat here again. read more

Our impromptu arrival at the Holliday Inn Express on I40 in north Knoxville was due to an impending thunder storm of Biblical proportions. I have never seen rain clouds that black before. Luckily this is the location of Gibby's. They were busy as several large groups planning on going elsewhere for the evening called an audible and wisely decided to stay in. No one appreciates sideways rain any more. The wait staff was hustling to keep up and did a very good job managing the crowd. This evening there was a lot of line dancing going on near the bar. Apparently they have a DJ spinning tunes and people dance to their hearts' content. My impression is many are locals who come here for fun. Needless to say there is a wide selection of wines, beers, and mixed drinks. We ordered two appetizers thinking they would be small. Nope. We chose the Roast Beef Trio and the Pulled Pork Nachos. Neither fits any common definition for the word small. The nacho dish was a large plate of in-house made tortillas; baked, not fried. They are covered with a generous amount of tender, smoked pork. The meat is enhanced by a sauce which incorporated baked beans, a great tasting queso, shredded lettuce, and diced tomatoes. The roast beef trio appetizer is more accurately three oversized sliders comprised of lots of thin sliced roast beef covered in Swiss cheese. Also included is a serving of au jus dipping sauce. Excellent. Whether just passing through or living in the vicinity, this little gem is worth a visit. read more

My husband and I came to Gibby's last night (3/11) around 7PM. Our server went above and beyond, I didn't catch her name, but she was older with beautiful hair too! We were staying at the Holiday Inn, because my husband just got out of the military and we are traveling to DE. I personally have lived in California my entire life, so the huge hospitality difference was awesome to see and makes you feel more happy in your atmosphere. We got pickle spears, amazing!! They come out HOT, so beware because a pickle can hold some heat but it didn't take away from how flavorful it was. They hand bread everything here and you can tell (in a positive way!). My husband got he Bourbon Burger and I ordered the Cowboy burger, oh my gosh! Both were said to be very yummy and it was true. I didn't try my husbands but he said it was so so good and savory! Mine was savory as well and the BBQ sauce they put in it is to die for (honestly if i were you i would ask for extra on the side because it's THAT good) The sweet potato and regular fries were hand cut and tasted amazing. I highly recommend this place and their waitress that night was SO nice and showed so much attentiveness and stayed alert even from across the room when we were shaking our ketchup bottle for the last bit and she immediately brought us a new one with no questions and just told us she saw us trying to get the rest of that ketchup out lol , shes an AMAZING waitress, please tell her! I came to this restaurant on February 28. I thought it would be a good place to come and eat. Well, I was wrong, what happens was, we waiting for like 30 minutes to get our order. Then after that, we waited for a hour for our food. This really makes me very angry. If they had a half star for this I would put it. Pros - Food is good... pizza's are good, grilled chicken is very tasty and the beer is cold. Cons- Dave the bartender is a joke. He can mix a drink and pour a beer I guess. The biggest issue I have is this a hotel bar ( doesn't open until 7pm, huh?) and closes when Dave says, no matter the number of guests. On this particular night I asked him when he was closing, it was 945, and he said 1030 at the latest. There were 30 + ppl in the bar drinking it up. We stopped at Gibby's Wednesday at 9 pm ET driving from Nashville to Kingsport, caught the #1 Tennessee versus Vanderbilt basketball game in overtime, and had a great meal. The service was impeccable, the crowd was lively, and there was Karaoke after the game. I had the berry salad (A+), grilled asparagus, roasted Brussels, and my husband had the vegetable wrap. It was great to be able to find a plant based meal in Knoxville at that hour of the evening. Kudos to Gibby's which is located inside Holiday Inn. We would stop here again just for the food. Drink are great and cheap! Food is Horrible. Fried green tomatoes terrible no seasoning. Tennessee burger was avg not so great! Potato bun so it's heavy eating the meet was quality and cooked perfect but limited BBQ sauce which sucker and little fried onions which is supposed to make the burgers. Don't come here for the food. I've been staying at the hotel for over a week. My job has paid for all my meals at Gibby's. I've eaten several of the entrees on the menu. And a couple of them more than once. The food and service I've had, was well above average. read more

We eat here at least once a month due to events that we run at Gibby's. The food has always been great and we've never had any issues with the service or the staff. We try to get different menu items each time we go and I've not had a bad meal yet. The restaurant is located inside the Holiday Inn at Cedar Bluff so you're not going to see it from the street, but I highly recommend stopping in for dinner one night! read more

My husband and I had a lovely dinner here tonight! My pizza was clearly homemade and delicious. His salmon was cooked just right and was accompanied by an amazing leek sauce with brussel sprouts. Jeanette and Leah were attentive and efficient with our order. Even with the music and dance floor in the restaurant, we had enough privacy to enjoy our meal and conversation. Overall not to bad, for a hotel based restaurant/bar. Had the California burger which was surprisingly really good. The burger comes with guacamole and borsin cheese, the burger was cooked perfectly and presented nicely. The French fries are a different story, basically cold greasy half cooked and no type seasoning at all. Overall speed of the kitchen was lacking, I watched a few people leave after waiting to long to receive their food, mine took quite a while but I was to hungry to leave. I ate a t the bar, next time I will sit at a table. Basically he to get bartender to stop flirting long enough to get my order in. If you are staying at this hotel and don't feel like going out this place is OK; however if you up to it I would recommend going out and finding something better. read more

Gibbys is a great place to meet up with Friends. Karoke on Wednesday night is so much fun with my friends. Plus a bottle wine is 1/2 off price. Love Thursday and Sunday night with DJ John Rutherford. Lots of East coast, West coast, Shag, and line dancing. The staff is great, great food and great atmosphere. Not your average bar. We all are one big family. read more
