She gave my group a thorough explanation of all the specialty salts available, and explained the differences in cultivation & flavor profiles of fleur de sel, sel gris, flake, smoked, and shio salts just to name a few. I loved trying the chocolate salt! We also learned about all the different origins and makers of the chocolates available as well. Catherine was extremely knowledgeable and attentive to detail, she made the shopping experience feel fun and comfortable. We ended up purchasing the black truffle salt, sel gris, hana flake salt, the meadow's own backyard blackberry patch & strawberry dark chocolate bars, a few other dark chocolate bars, some of the delectable small individual chocolates at the counter - and we couldn't resist also buying the cutest tiny fairy star salt spoon, too. We recently purchased a smoker and were so excited to smoke some meat on the upcoming weekend. We decided on buying meat from a butcher to smoke. Looked up nearby places on the internet, and the only one open near us was Top Choice Meats. They received great reviews, so we decided to give them a shot. They're located in a strip mall with plenty of parking available. We were greeted as we walked in (always a good sign). The inside was very clean and organized. The young lady who helped us was super helpful and knowledgeable with all questions asked. We decided on a brisket, but the one in the case was around 8 lbs, which was way too big for just the two of us. She offered to cut it in half. Perfect! We got home, made a rub, and smoked it for about 4 hrs on 250°. Once the internal temperature reached 195°, we removed it to let it rest for about an hour. We sliced it and wow, oh wow, it was outstanding! The flavor of the meat was amazing. We were very happy with our first smoke. Since our first visit was great, we came back this weekend for steak and brats! We would definitely recommend this butcher. We look forward to trying more cuts of meat in the future.
